Just found your video on making corn meal. Tried this in cornbread a few years ago and again more recently. Horrible results. THEN I found that it should be put through nixtamalization process, then dried and then ground into meal. Don’t try to nixtamalize your corn meal. It turns to crap. This come from info from commercial mills. I’m drying a kilo of nixtamalized corn now. Will follow with results.

The comments here make me frightened. People please do your own research of GMO foods and understand that they are not something to be afraid of. I would be willing to talk with anyone about this. There is no reason to fear GMO products. You eat thousands of them a year without even knowing it. Most fruits and vegetables you eat are perfectly safe and are genetically modified to have desirable characteristics such as sweetness and larger fruits. GMO IS NOT THE ENEMY.

Do a video on Cracked corn. Some people have said if cooked at 155-160 it releases the enzymes in the corn to produce the sugars needed in making shine. Their argument is that the ones disputing this are misleading their followers but dropping Tincture of Iodine one the mash instead of the strained wash, so I guess you can shut up these people by cooking cracked corn at 155-160 degrees Fahrenheit for about 1 hour and strain off all the remaining cracked corn solids and dropping Tincture of Iodine on the wash or whatever that’s called and proof them wrong.

These are not authentic corn tortillas. Authentic ones are just corn flour (Maseca), water, and salt. Nothing against corn meal, but they won’t taste the same.

Some of us can’t just run to Vallarta for a bag of maseca. I can’t even find corn meal where I live, or even pinto beans! Or lard for my flour tortillas so I make my own. I did find some popcorn kernels at the local outdoor market which I will blend down into cornmeal to try this recipe. We all know they won’t be the same as using maseca but sometimes you have to improvise when you live abroad. Thanks for the video!

I have some masa here, and I’m going to try to combine it with half APF and the baking powder… i don’t use oil but, sometimes, it helps to substitute bean cooking water… such as from Eden’s no salt added garbanzo beans. It gives a similar viscosity. Otherwise just use water. This is a dynamite idea. Thanks for posting.
So I’m new to all of this but have been doing my research. So my question it do u absolutely have to add something to convert the starch in your corn to fermentable sugar or can u just use table sugar and crack/flaked corn for your mash???

Great video will be giving this a test. Read through the comments and I feel your title is perfect corn meal is not the same as masa. I guess most people commenting are from the states because thats the only place people treat corn with lime if there are countries I’m oblivious I’m from South Africa where corn meal is a staple for many people but is mainly eaten in a porridge form(prepared with salt and water and boiled).
I just looked at the ingredients on a box of Kellogg’s Corn Flakes. One of the ingredients is barley malt extract. It doesn’t say how much is in it, but it does say it is 88% corn.
I have sent numerous emails to B&H to no avail. I guess email is out dated these days.

I love those things. I heat them up in a cast iron pan and put veggies in them and eat them like a taco. I like the oven idea for something a little different. Makes a nice dipping tool, and I won’t be stuck in front of a frying pan. Luv it. ☮️
Hi, I have tried to replicate what you’ve done here with a box of cornflakes, before I do a proper mash/brew. I brought water up to temp and added the cornflakes, and kept it to gelatinise for a period. checked for starch and its present I cooled it to 62C and added the amylase but nothing has happened, I have maintained the temp and added more amylase yet no conversion is taking place.
is there a guide on how much amylase to use? in the UK we only get 25g tubs of it. how long does the conversion take? a normal mash takes about an hour.

You may be right about some of the benefits of sprouted corn, but the options for non-GMO, organic varieties are out of reach economically for most. Its good information but not practical, especially if you have a family to feed. If you are worried about GMO, or non-organic varieties I suggest the following: 1) stop eating corn altogether, 2) find a local farmer that grows organic, non gmo corn or 3) learn to grow your own organic variety and sprout your own corn. Its easy to do just takes time. Anything worth while takes time, learn to do it your self.

You are suggesting people don’t get the majority of their calories from grains, which means the majority of their calories must come from meat. 25 years of science has shown us that those low carb, high meat diets cause heart disease and diabetes and increase all cause mortality. A high carb, low fat starch based plant diet is best. It’s the traditional human diet that brought humans from being tribes to being great civilizations.

VERY NEW to all of this so this might be a stupid question. Not counting for flavor but if the point is to turn “starch” into sugar could one just skip all the steps and start with “starch” i.e. corn starch or potato starch to make a “neutral” spirit or would you just start with a sweetener then add wanted flavors at the finish? like I said might be a stupid question. lol

I grew up eating both corn and flour tortillas. I make them homemade, but now because we don’t eat fat, “vegetable shortening” an ingredient in flour tortillas I have to figure out how to make them without. Plus I don’t want to use white flour anymore so there go that!
Great videos and I try to watch everything you put out. Now if corn meal is equal to corn flakes and the purpose is to convert the corn meal or flakes into starch could you just start with corn starch? Or does no one use plain corn starch because it has no flavor? I can get corn starch very cheap and corn flakes (of the same weight) are more expensive and I have to go to a major city (I live overseas) to buy corn meal. If corn starch works but no flavor, I will mix corn starch and corn flakes to keep my price down but if there is no flavor, I will just take the trip to the big city and stock up on slightly expensive corn meal. I don’t care what people are saying here but I tried your method and worked very well for me.
I used more , little wheat flour and little white flour for binding purpose. Wish I could show some pics.
Fried minced meat using the juices from meat itself adding some kidney beans, herbs and spices. Used finely diced onions, mexican chillies, coriander and lime juice for that tangy taste. Also used some romaine lettuce on tortilla for that crunch.
I kept fermenting oat meal for a few days and decided to do iodine test. I poured a little of that oat meal and turned purple/black then, after a few seconds, the color had changed to beige color. Does that mean the starch has been converted?

i use plastic milk cartons full of water freeze them and unless Im stupid and over fill them no chance of glass cracking when ice cold meets very hot liquid.

Corn Flakes havr added sugar in them about 8% i think. So the result will be higher per given weight for the Cornflakes due to the inclusion of sucrose.
Good stuff but you need to follow that through. brew them both up to a wash and then distil them and let us know which taste better. My money is on the stright Corn Meal.:)

Oh wow, this is a terrible recipe. You should try using maseca if you’re just going to do it that way; you don’t need any baking powder or any flour to make them.
Give the corn flakes some time in your smoker then mash them like you did….when you pot still them smokiness will carry over….:-)

Hi George, this question has nothing to do with beer making but, you mentioned that you purchased those pots at your local dollar store, well I I was wondering which company it was was it Dollar Tree, The Dollar Store or Family Dollar? Thanks so much, that was a great price for a 2 gallon pot. I guess you can tell that not only am I a wine, salami and cheese maker, I am also an avid chef too. LoL…..
ok odd ball question. now I’ve never run a thumper but on simple pot style still heating slowly and running slowly I can run quite a high percentage. now when and if I run a thumper with heat higher to push vapors through thumper how will I get an equivalent percentage? will if be higher or lower or same with a better purer taste and quality
