OMG I laughed at your attempt to make a loaf pan!! I’m so glad you kept that in your video! Made my day! At first I was like “What?” your going to do what? How in the heck do you plan on ever getting the bread out of there?” LMAO Too funny! Also something I could see many people trying to do (maybe even myself included). That was great. But seriously that bread looked good to me.
Your bananas weren’t ripe enough (soft) the constancy of the mashed banana is the texture your bread will take also. U can always use the food processor to get them to a smooth state. Also next time if you add the protein you will need to add more liquid to account for the dry and/or maybe some shredded zucchini will be like a zucchini bread I will be making this to try looks good!!
Why would somebody use soy milk, and then butter which is made from cow milk? ( just wondering)
It was done!! Next time add a little bit of the oats flour to the pan after greased. Then, after baked take it out from the pan (before cut it) and after like 10-15 minutes involve it into cool paper and put it as the fridge for at least 3 hours. You will see the difference of the texture! It looks so yummy!! And healthy. Thank you for the video!

Made this after watching the video. Split the batch in half for my daughter who doesn’t love nuts, so half with nuts and half without. Anyway my girls are super picky but they loved it! In fact the whole family did! Making it again today.

If you choose to make this again try freezing the bananas for about 30mins to an hour before cooking. Freezing the bananas ripens them faster making them softer to mash and sweeter once they have thawed (without having to wait for them to naturally brown) my fiance makes these all the time for the holidays and had the same problem until he started freezing them first.
Yea..those bananas were huge plus the blueberries would add extra moisture. Also you should measure the oat flour not the rolled oats, filling the measuring cup and leveling off. Those little things makes a difference in texture.

If you cook the oatmeal,it’s going to loose all the nutrients you’re supposed to get from them. The better way is to merly heat some water and pour it onto them and then,add some frozen berries that you previously left to thaw

I really love this recipe, I’ve only used oat flour a few times before and it definitely comes out better than whole wheat flour.. You’ve gotten a lot of suggestions, but I think it’s worth pointing out that you might not have used enough oat flour. You might already know this, but when you substitute flour, it doesn’t always directly convert to the same amount as what the original recipe calls for. I read online that 1 1/2 oat flour can be subbed for 1 cup wheat flour. If you followed that conversion, you’d need 2 1/4 cup of oat flour for this recipe. If you are measuring the oats before you put them in the food processor, you’d need a little more since the measurement changes a bit once they are ground up. I’ve made the recipe two times, using 2 1/4 oat flour, comes out great-still a bit gooey since I am also using too large of bananas (but I think this would solve the issue!).

After watching your amazing videos I looked into getting a stand mixer and found that the Kenwood you use is the best. For my birthday my husband surprised me with a gift certificate to choose the mixer I wanted. I had enough birthday money to get the Kenwood Chef XL and absolutely love it. Thank you for answering question about your mixer. Well worth every penny and it’s getting alot of use. Can’t use the mixer on this recipe for fruit and nut bars but will make this for my grandson’s snack in his lunch. This is the kind of food kids should be eating and I love these too. Thank you.

I have baked these bars many times and they are great! I enjoy Brazil nuts and almonds and pecans or walnuts for the nuts but try other varieties, too, and feel they don’t need to be preroasted as they are baked 35 or 40 minutes. They are wholesome, delicious and not loaded with sugar! Thank you for sharing this and other good videos!

I’m very impressed at how fluffy and delicious these turned out. I was sceptical at first because all the pancake recipes with oat flour i made turned out flat and tasted like bananas. These, however, were the opposite and were very close to regular flour pancakes. Bravo!
