I do freeze extra bananas, but I never cared for banana bread until I had to make it one time with perfectly ripe bananas. It isn’t as dark but I don’t care for an overripe banana flavor. Your recipe sounds delicious!
I add a cup of chopped cherrys, cup chopped apples to my wet ingredients and I added vanilla pudding to my dry ingredients. My friends Said it was so good.
I do that with my bananas too! Although I peel them first, slice them, then freeze them single layer so that I can use them if we make a smoothie or something.

Might try with coconut flour as the 2nd flour & almond flour as the other. Maybe half the amount of coconut as coconut flour absorbs so much liquid & add 2 more eggs. When I’m feeling better of course. Lol
