This came out SO good!! I didnt have the sweet potatos and sage. I used the brown potato instead and it still came out so good. I could only image the taste of the dish with the ingredients you used! I’ve also NEVER used apples in a stove recipe and I am so amazed with how much flavor it soaked up and the texture was good too! My first bite was a good one and so was every bite after!! I made this last night. Haven’t had Brussel sprouts since I was a child & I didn’t like it then. I like it now. The dish is good, I wish I would have cooked more veggies though.

I’m totally on page with you about Brussels sprouts! A few.years ago I discovered that I only like them if they are roasted! I typically roast 1/4″ diced butternut squash, beets, Brussels sprouts, mushrooms, carrots and any other veggies I might have laying around. I toss it all in olive oil, season with salt, garlic powder, rosemary. Often times I’ll chop up bacon and sprinkle onto before roasting. In my world bacon makes many things taste better. This is a go to breakfast, I add the cooked veggies to a my bowl and top with a egg ( fried, soft boiled or poached) yep always a runny yolk for me! Yum

I’ve tried a similar recipe before but I could never get the eggs to cook properly. they were either overdone or the whites were still runny. Did you cover your hash with a lid to finish of the eggs? Yours looks so good I’ve got to have another try!!
Finally someone else who puts all the ingredients in a bowl and then puts the olive oil in, instead of drizzling/wasting the oil and spices by just throwing all on top. Besides, it coats the veggies more evenly. Something for work which can be eaten cold.
