You don’t have to have celiac to have problems with grains. You can be non-celiac, but gluten intolerant, so consuming grains can cause a raft of problems, including bloating, diarrhea, headaches, fatigue, skin rashes, anxiety and even depression. I recommend reading the book Wheat Belly to learn more about this. Once I gave up wheat, my rash disappeared, my energy levels increased and the weight started dropping off effortlessly. These days, I mainly eat meat, fish and veg. No bread.

Make your own bread: Pour 3 cups of lukewarm water into a container. Add 1.5 tablespoons of yeast and a bit less than 1.5 tablespoons of salt (you can also add rosemary or other herbs here if you like). Mix it all up with around 6 cups of flour. Cover but don’t make it airtight for around 2 hours, then sprinkle the whole thing with flour and make loaves the size of grapefruit by taking each loaf and flipping the dough to the bottom of each loaf, forming a nice ball. Bake at 350 until brown.

Everything causes inflammation to a certain extent, except greens. But as omnivorous primates we need the calories from carbs and fruit, or meat if your not vegan. Try eating greens and nothing else and see how long it takes you to die. It won’tbe a pleasant experience.
In 30 years I have not eaten a single food, nor avoided a single food due to any studies or any research. I trusted my own body and I have done extremely well compared to all my peers health-wise and performance wise. Yes I respect the best studies (a very small portion of the total database of nonsense studies, especially about advanced nutrition), but there is absolutely no substitute for real experience.

Westerners are obese because of overconsumption of refined carbohydrates; and excessive added sugars. Obese persons didn’t get that way from overconsumption of red meat. It was the carbs. One size doesnt fit all.. see the problem with people is because we individually might have reactions to certain foods we then push this narrative that its bad for EVERYONE when none of us are genetically the same at all for some grains might not sit well with their digestive system due to genetics and for others such as myself their body loves grains.. Everyone is different. Test for yourself. Get a Glucose monitor. Eat a “healthy whole grain” then test your blood sugar. 1. Before you eat and 1-2 hours after you eat a “healthy whole grain”. If you spike…then you know. If you don’t spike then it might be ok for you. I did the test and my blood sugar goes way, way up after eating something that is “supposed’ to be healthy. To me ( I can only speak for myself) Healthy is: a food that is nutrient dense and does NOT cause my blood sugar to spike. My goal is level blood sugar numbers…that is what keeps me feeling good and healthy.

I have gluten sensitivity. I removed all gluten and bloating in the end of pretty much every day stopped. Also I’m completely free from light astma I occasionally used to have. And I have tried gluten products again every now and then but the bloating a couple of hours later always happens. But 1 slice of bread occasionally doesn’t seem to have much effect. However, 1 slice of bread every day does start to give effects after a week.
I tested this a lot.
I used to eat 6 slices of whole grain bread a day. But it’s just not agreeing with me anymore. And maybe it never did, I had astma in my teens. It got less after that but remembering those days, I also ate less bread. In my teens I easilly ate 10 slices of whole grain bread per day.

I thought I had gluten sensitivity for about a year ago. I was convinced; I had eczema-like rashes on several parts of my body and my bowel movements were terrible. So I went on a gluten-free diet for 3 months and nothing changed. Frustrated, I added back in gluten and my symptoms didn’t get any worse. Then it dawned on me after reading up on casein allergies (main protein found in dairy): I couldn’t tolerate casein. Long story short, I gave up dairy and in two weeks my symptoms subsided and got better and better. My rashes are gone and my bathroom time is a lot more serene. I hope I can help someone out there because I was miserable for a lot of years.

I really liked the professionalism of the production of the video series, and I am very grateful for the information in this format, but the Dr. Gregor head popup is really a distraction. I liked the audio emphasis he’s used in the past, but the video effect is jarring, distracting and only takes away from the message rather than adding to it. So the massive amounts of legumes, sweet potatoes, bananas, nuts and seeds (including quinoa and chia) are doing nothing for my gut health? That’s really disheartening. I don’t eat much rice and when I do I try to stick with bismati because of its lower arsenic content. I love brown rice but it’s just loaded with arsenic and my “gut” (heh) tells me that might not be the best plan. Suggestions?
If i eat grains i get flare ups of Psoriasis, if i stick to fruits and veggies it clears up. Some peoples gut lining cannot handle grains.
Why would we not think that eating a variety of whole grains and whole, plant foods is good for our entire bodies, gut flora included? The data is a nice reinforcement, but do we really need all this to tell us common sense based dietary info. It only makes sense that isolated fiber doesn’t help the gut flora, there’s no easy ways out. We have to eat well for sustained period and if so we can reap short and long-term the benefits. Most of us won’t even be able to appreciate the bounty until we get old and we look around to all the sick people our age and go how many friends and family members have died prematurely. Dr. Greger I have been eating a whole food plant based diet for the past 6 months. I hardly ever eat any processed foods and if I do it will be very rare, for example I will have a vegan pizza from the takeaway (pizza dough, tomato sauce and veggies on top… no cheese of course) and this happens maybe once a month AT THE MOST. I never eat refined sugars. I eat a spoon of flax seed every day. I take a vitamin B12 supplement every other day. I eat blueberries every day on my morning porridge (I think Americans say oatmeal) made with water. I try and eat broccoli every day. My diet is so healthy, I cook everything I can from scratch using fresh ingredients. I exercise at least 4 or 5 times a week… when I say exercise I mean I will run for 30 minutes straight and lift weights in the gym, not just a gentle walk or anything like that. But I have a problem… I have severe bloating that is persistant and I am unsure what triggers it. I have been to the doctors, they just brush it off and say it is IBS, but before I switched to a plant based diet I never suffered with any digestion issues. The cramps I am having are sometimes so painful I can’t walk. My period has stopped and I don’t know what to do. I never want to go back to eating meat, eggs or dairy because since reading your book and watching your videos I am aware of the health implications of doing so and of course I am against the animal cruelty that produces these products. But I just wish there was some explanation as to why my body has reacted in this way. I have not exercised for the past couple of days because the bloating is so bad… I literally look pregnant my belly expands so much! I hardly ate yesterday (I had a small bowl of oatmeal for breakfast around 6am with banana, blueberries, ground flax seed and cinnamon, then i had a small bowl of butternut squash soup at about 6pm… thats all I had) and I woke up this morning with a massive bloated belly. I am wondering what might be causing it, and are there any cases you know of where peoples bodies have reacted in a similar way? I would have thought after 6 months that my body would have adjusted by now.:(

Sounds good…but what about the flour? I think the idea is to stay away from regular flour, and finding whole grain flour is impossible unless you live in a large city that sell those kinds of products. When I was in college in NYC, there used to be kiosks for every foreign group of people and the foods they ate in the country they came from. It was great. But now I live in the country, and the pickings are mighty slim! There used to be farms here…but nobody farms anymore, thanks to Monsanto!

I now do GREAT eating organic whole grain foods. Interestingly, I used to get severely bloated with oatmeal, but I think gut flora was reset when I ate a lot of raw fruits and vegetables, especially salads and bananas. Now oatmeal doesn’t bother me any more. Coincidence?

Grains have terrible Omega 6 to Omega 3 ratio. I try to avoid all grains as much as possible. If I eat grains, I do eat rice or wild rice, and once in a Blue Moon, when I crave sandwich I eat gluten free (I am still waiting to take the test).
High grain diet cause thyroid, cholestrol, joints, increase insulin or sugar. Eat low carb with good protein, tons of veggies and small fruit and zero sugar. Weight melt off, pains are gone, no bloating, no tiredness, no day time sleeping, sharp focus mind.

When it comes to bread, I’m still confused as to whether whole grain flour is as good as whole grains? I am able to get flour-less from Trader Joe’s and I’m thinking that’s the best way to go.

If we follow every diet we eliminate all foods except possibly a few vegetables, a very few in fact. I know some folks are grain sensitive and I’ve cut many grains to reduce glycemic index and gluten. Super food? Kept me sick for 15 years with Chronic Fatigue Syndrome. I finally figured out it was the grains. Went from nearly bedridden to completely healthy with high energy, once I cut wheat, and then all grains. Last year I had a single bowl of oatmeal, and it put me bed for 3 days with extreme fatigue and body aches. I dont have celiac. Have been tested, even genetic tests. I dont have IBS or any kind of digestion issue. The “healthy whole grain” myth needs to die. The latest research trends are showing that excessive grain based food consumption is at the core of the american health epidemic. Cholesterol also has never been proven to cause heart disease. 5 decades of research has failed to prove this terrible hypothesis. Whole grains are NOT heart healthy, if anything, the strongly correlate to heart disease. This modern/recent 42 EU country study shows exactly which foods correlate to heart disease the most. ANSWER: cereals/grains!

To briefly say it. grains do cause inflammation. Because there are a lot of anti nutrients in grains; not just gluten, others are lectin, gladian,… And whole grain have more of the anti-nutrients along with more nutrients also.
The problem is that people have different levels of sensitivity to grains. And the sensitivity tends to increase with time. So if you conduct an experiment with people who are in perfect health and weight, you will definitely not detect a problem; but that doesn’t means the problem is not building up.
On the other hand, if you conduct the experiment with people who have some kind of fragile health; they will show signs of inflammation.
Yes whole grains do cause inflammation with time when eaten on a regular basis.

In the study cited, was the consumption of whole grain compared with diets that were completely grain free?? Because if not, chances are you’re comparing two types of diet where one is higher in whole grain and the other higher in REFINED GRAIN, which is meaningless when attempting to establish the effect of all grain versus none.

“Quaker Oats can now say that it’s good for heart health.” Of course then, can…but they do not advertise that those studies use the slow cooking variety in about a 7/8 cup serving that has not been drenched in sugar-which many of the off the shelf versions have. Not all oats are created equal! DO NOT believe the heart-healthy symbol on all oatmeal products, as it is a marketing tool to make the American Heart Association money, rather than to help consumer health. WHY? Just check all the sugary kids’ cereals that have the symbol.
There is much more research pointing to the positive benefits of groats and steel cut oats than the other processed forms-especially when considering that most of the quick-cooking varieties have heaps of sugar added to them. If interested in the heart-healthy benefits, go for oatmeal that takes 15+ minutes to cook..no matter what the label says. I am so confused now. When I stopped eating gluten products my inflammation marker went from 1250 to 53. I don’t have Celiac and was tested negative for gluten allergies and sensitivities. I have however, ulcerative colitis. Can someone help please?

Eziekiel Bread is sprouted grains. Eat lots of that along with 2 bowls of oatmeal evert day, with berries, amla, pumpkin spices, cardamom,black pepper, almonds, peppermint leaves, kidney beans, ground flaxseed, sometimes ground sunflower seeds, purple sweet potato, and carob powder. Pack as much nutrition in 1 bowl. No wheat belly, no weight gain, blood work gets better and better each time I go to Dr’s. Every 6 months. I avoid unsprouted grains like the plague that they are, and live quite healthfully on a plant based diet with plenty of cultured dairy from relaxed cows that aren’t injected with crack.
Beyond people with celiac disease, there are a lot of people with “gut issues”. Many of them will feel better and do better avoiding some grains. It is an individual thing. This is why there are all those diets and variants telling people to avoid grains-because the person who started it felt better if they avoided grains. In my case I’m fine with oatmeal and white rice (well except for the arsenic), but not brown rice.
There are no benefits to whole grains. Cut out grains and sugar and you will lose weight guaranteed. Whenever I see that MyPlate garbage, which is bought and paid for by the wheat and corn (HSFC) growers, I want to scream. Head of USDA is the former governor of Iowa. Enough said.

I believe environment also plays an effect. If your parents are eating unhealthy, you are at risk for doing the same.
It is only the large intestine that inflames, preventing efficient absorbing of nutrients. So many people are bloated, and wonder why. Than, gluten was the new ennemy, and was taken out of everyone’s diet for no reason. It is the grains. You need to eat more to absorb less, and there goes the snowball.

Dr why do grains make me feel ravenous. If I want to lose weight and decrease my appetite all I need to do is delete grain. If I eat even brown rice in the morning it will make me ravenous all day and I will overeat.

Trying to decide what is the best type of carbohydrates to eat can be confusing. Are you better off eating vegetables or grains? The general consensus is both vegetables and whole grains are healthy but if your goal is to lose some weight, I would choose vegetables.
I agree 100% with this doctor. I buy only organic grains and make my own breads with whole wheat grains that I grind myself. My large family stopped getting seasonal allergy reactions and we’re healthier since I started doing it 25 years ago. I am allergic to gluten including the skin reaction, not formally diagnosed. If someone told me I had to eat gluten for a month before they could test me I would say NO! and punch them in the face! I am also not stupid enough to try reintroducing gluten to my diet every year. Every time I tried to eat oats, rice and beans in my life, my intestines got inflamed, felt like crap and i got fat. Whenever i eat animal products i loose my inflammatory symptoms, i get energy and get ripped. Everyone is different. And I would rather be vegan because I don’t even like meat and love grains but they don’t love me.
What about Amylopectin A in wheat and its effect on blood sugar, lectins, phytic acid and mycotoxins? It could be wise to get resistant starches from other sources. Or maybe after healing the gut, occasional grain consumption for diversity won’t be as damaging.

When I eat a loaf of bread ( believe me I’ve done it) I get the most incredible pain and my stomach will stretch out twice its size making it difficult to breath for 2 to 4 hours. When I have a 2 cup bowl of gluten free pasta….the same thing happens. I don’t buy the gluten free stuff I just can’t see the difference.
Grains are only bad if you have digestive problem’s or sick with disease like IBD, Colitis, or Crohn’s. During a flare they may cause delayed repair and relapse but meat, dairy and eggs are much worse.

Type 1 is caused by environmental factors (stress, smoking, whatnot) and gene expression. A study in India proved plant based whole food diets along with stress managment (meditation and breathing exercises A.K.A. oxygen therapy) to down regulate 452 “bad” genes and up regulate 48 “good” genes in over 50 cancer patiets with no radiation, surgery, or chemo. Not all of the bad genes were cancer related, but rather diabetes type 1 and other diseases. My sister beat stage 4 liver cancer with a change in diet (not even vegan, but whole foods, but I still reccomend avoiding animal products for heart health and preventing t2d), oxygen therapy, and meditation/prayer. Modern grains are just processed junk only recently introduced within the industrial era (the grains eaten prior to that point were VASTLY different) and are all GMO, pesticide ridden, gluten loaded, junk food.
The opposite of what Gregor is saying is actual true, if you remove grains from your diet than it becomes as effective as taking a drug. The problem is that grains are extremely addictive (thanks to their opioid like addictive compounds) hence why almost everyone (even those with lot’s of diseases) eat whole grains/wheat bread on a daily basis yet still remain sick.

My wife is gluten sensitive; does not have celiac disease. Through experiments ( on ourselves ), we found a wheat that is from ancient wheat, prior to massive hybridization / genetic modification: Einkorn wheat flour. She can tolerate it. There are ancient wheat grains being grown now as well. This may help some viewers.

Actually no not even close. the undigested proteins in the wheat get into your intestines. they are undigested and harm your villi. Enough of this happening will lead to you having no villi and no way to absorb nutrients which will quickyl devolve into a diseased state since you can’t get nutrients. You do NOT need a hearth: all you need is a regular oven. Preparation of nutritious food is a fairly simple matter, and thinking you “need” complicated equipment (such as a hearth) only postpones-or worse, *prevents*-taking steps to carry out that preparation.

I bought some lentils to make soup and put them in a bowl to soak overnight. The bags of dried lentils were fairly small, so I thought I’d need two for my crock pot. I forgot about them in the bowl, for about four days. When I remembered, I thought “I’ll bet they’re spoiled”. They hadn’t. They had increased in size 5 fold and were sprouting. So I ate them raw! Sprouting grains or lentils or beans make great anti-oxidants! Buy raw grains and let them soak…forget about them for a few days.

It’s just not easy to find whole grain breads in supermarkets. I paid $4 for a loaf of 12 grain bread that looked nutritious….until I read the ingredients. Yes, there are whole grains in it…you can see them, but otherwise it’s just the same fake wheat bread with all the chemicals. I need a hearth so I can make my own!

Moderation in all things, I have a wheat allergy if I eat too much bread, my body is my barometer of the physical. However, in Europe we have fought against American GMO for decades. The body was meant to process food, not eat processed food, and I like to make my own bread sometimes,, at least then I know what is in it. RICE IS VERY DIGESTIBLE, especially for children and when people get older. I make no-yeast bread, it’s the yeast that is often the real issue.

Healthy? Bullshit. Whole grains are slightly less horrible than processed white flour. But they will horrendously raise your blood sugar; and why would anyone want to do that? The glycemic index is higher than a candy bar. I’d ditch them altogether. Get your fiber from vegetables. Eat whole grains only if you want to be obese; diabetic and get tooth decay.

Almost a year ago, I switched to a naturopathic doctor, who had me take a very thorough blood test. The results came back that I have a gluten & fructose intolerance. So, since then, I’ve avoided gluten & most fruits; which may sound nuts since I’m a vegan, I do take a Vitamin B, B12 & D supplement.
But I feel so much better now. I no longer have acid reflux, or GI discomforts, I’ve lost weight easily, my cholesterol has dropped by 80 points and counting, and my blood pressure has dropped too. Over the course of the year, I have eaten a bagel once, and another time a plum, from a tree growing in my yard, both times I had a terrible GI reaction. My doctor said it was OK to try these things from time to time, as a reminder of why, I’m avoiding gluten & fructose. This may not be for everyone, but it certainly has worked wonders for me.
Modern wheat is toxic. Try cutting wheat out of your diet if you have IBS or IBD, and you will know if you are one of the Many that are affected by it.

There has to be a huge difference between intact whole grains like brown rice, quinoa, etc., and whole wheat rolls. Why wouldn’t he remark on that?

I am in so much pain when I eat even a small amount if gluten I’m not sure anyone could convince me to eat 4-5 slices of bread a day. That may be a huge hurdle in getting real numbers on who really has celiac. Being on a gluten free diet kind of stinks and most would probably have to be experiencing quite a bit of discomfort and be pretty convinced it’s gluten to go gluten free. I hate being gluten free but the pain drives me to avoid it. When I think I can get away with eating gluten I am very harshly reminded by my body. Wish it wasn’t so, I love wheat and think whole wheat is healthy! Everyone who can eat it, enjoy every bite for me!

Have you ever looked at the Gluten Casein free diet links with autism? It is an interesting subject, especially as it seems to affect the developing brain far more than an adult.
For thousands of years wheat was grown for quality you had to grow your own and if you are going to do all that work you might as well “save the best for last”. That phrase basically means hold the best grains for the end and instead of eating them plant them!! So the best of the crop was always planted out. The best tasting got grown out. This also covers productivity as well. If something tasted great, but there wasn’t anything to save because of low production those traits did not get passed on. Now wheat and any other food crop grown commercially is selected based totally on profit. If something is extremely productive it does not matter if it tastes good, or if it even causes an allergic reaction. It is grown without anyone having a choice in the matter. Genetics is extremely complex and in the course of selecting for wheats that are harder to remove from the stalks this increases productivity other more desirable wheat traits we as consumers benefit from are lost. Another trait selected for in commercial wheat production is very very hard grain so that it will not become damaged by machine harvesting. Another trait is lower fats as this is what will cause the wheat to spoil eventually and is also the reason the germ is removed from the wheat. Selecting for germ that is easily removed is another layer of genetic loss. Wheats used to be selected for high germ and oils because both of these lead to fantastic flavor and nutrition. Oh and the wheat needs to be very very short. The shorter the stalks the less fertilizing is needed to get the wheat crop. And then those short stalks have to be good to go through the machines.. another layer of selection. All this amounts to a genetic loss in flavor, quality, and a lot of unknowns like food allergies and nutrition loss.
The same is true for commercial varieties of corn. Corn fed cattle suffer from untold diseases that the industry isn’t exactly required to admit to and a lot of these health issues in both dairy and meat cattle can be traced directly to the corn.
It all goes back to that old saying “You are what you eat”

Hey, my dad has bad cholesterol and is eating medicin for this. He has had a stroke and he loves meat, dairy and eggs. He is willing to make som changes but i have to show him som good facts that really shows that his cholesterol will be lowes and he can be off his medicins (after taking blood tests that shows the progress) if he changes his diet and he will not get any heart attacks and (more) strokes. He is also eating medicin because of his bad metabolism. Can you please link me some sites that states this fact that says what he should do. Can he stop with egg and stop eating read med (maximum once a week/month) or tips like this. I’m a vegan and i would love him to be that to. But I have to start som where with him, he is soon of gluten i think ;). Thank you in advance!:)
I am unmistakably sensitive to hybridized, modern wheat, which has been manipulated for higher crop yield and is produced with a considerably higher gluten content than heirloom or ancient wheat like spelt or einkorn and overly processed. If I eat modern wheat, I am itchy within about 20 minutes and covered in eczema within 24 hours. If I use a whole grain, heirloom flour, or if I buy a bread made with these ancient grains, I have no issue with moderate, reasonable consumption (say, a sandwich once or twice per week).

I just assume I’m sensitive to gluten lol. I should actually test it one day. If I do, I think I’ll go all in and eat seitan which is basically pure wheat gluten 😉
Why eat pasta and bread when you can eat quinoa and cooked amaranth seeds? Richer in protein and overall a better option.

I had acne and it didnt got better with going vegan. For 3 weeks i stoped eating gluten and? Now my acne is gone. Gluten is naturel acid to protect the plant, food with gluten dont want to be eaten.
Another interesting video:) I occasionally eat gluten containing foods. I don’t have any problem with it. Gluten free diets are sometimes a disguise for low carb diets, and this is a dangerous way to go. There are plenty of whole plant foods one can eat to stay gluten free if desired, such as fruits, starchy veggies, rice, quinoa, lentils, beans, corn, nuts and seeds.
I ate whole grain bread my whole life, until my early 40’s when I was bloating in the end of every day. I tested not eating different foods to see what was causing it. Turned out to be gluten.
I can’t tell if this always was a problem but since gluten can cause a leaky gut and occasional light astma completely disapeared as well since I quit gluten, I think it’s always been a problem.
So much for grains being healthy because I always thought they were. After more research I’m convinced that even without gluten sensitivity it is wise not to eat too much of it.

I took out gluten (and grains) from my diet over 2 years ago. After 6 months, I was off all my bipolar medication. After 1 year, my hypothyroid and fibromyalgia corrected itself. Reintroduction of gluten/wheat put me in the ER, so I think I’ll just stay gluten free. It’s much nicer than the $600 a month in medication + unwanted side effects that make me semi-disabled. My gut flora is perfectly fine, but then again I avoid processed gluten free foods for the most part and stick with whole, plant-based foods.
“Reintroduce gluten back into the diet every year”? That is the most stupid comment I have heard. There is nothing healthy about gluten it destroys the lining of your gut. Better read up on what Dr. Mercola says about it!
