Great idea. But, haven’t seen white balsamic vinegar. Any recommends about where to start looking brand-wise? I see a lot of fruit-mixed versions.
Aren’t some balsamic vinegars out there full of sugar?! In fact, a tablespoon worth of the majority of those balsamic commercial vinegars are sufficient to kick you out of keto!

I use red wine vinegar + MTC oil + pink Himalayan salt and it is the salad dressing ever.
I think you should do less silliness at the beginning and more time spent in the actual making of the recipe. Also, slow down the speed.

My recipe is very similar, but I cut the balsamic with apple cider vinegar and add stevia to offset it. I also shopped around for the least carby balsamic I could find, which is Mazzetti Balsamic Vinegar of Modena, that I think I got at Costco with 3g carbs per tablespoon. The Kirkland stuff there is something like 9g carbs per tablespoon, so it varies a lot. I went ahead and bought the gallon, because I want some time to find the next purchase before it runs out. Here’s my recipe:
9 fluid ounce Organic Extra Virgin Olive Oil
3 fluid ounce Balsamic Vinegar
2.50 fluid ounce Apple Cider Vinegar
1.50 tbsp(s) Organic Dijon Mustard
3 clove Garlic
1 tbsp(s) Redmond Real Salt
1 tbsp ground black pepper
16 Liquid Stevia drops
My macros for 16 servings come out to 155kcal, 16g fat, 3g total carbs (2g sugar, no fiber), 0g protein.
BTW, the incorporation of ACV is good for you and makes it tangy.
I made this and it was good but I found that it needed a little sweetness added to it to be perfect. I didn’t want to add sugar so I added a few dates and blended and it was awesome.

Too many carbs in balsamic….I mix a Wholly guacamole chunky avacado mini into a whole bag of salad and stir it in real well, it covers all of the salad and a little himalayan pink salt YUM
