I heard someone say somewhere that people in L.A. are so scared of gluten that you can rob a bank with a bagel.
For people who suffer from ‘wheat intolerance’ (and perhaps IBS), I suggest reading and learning about FODMAP and low fodmap diet.
It gives excellent guidelines for reducing gut symptoms. Mainly avoiding dairy, wheat, onions and garlic, along with lentils and some fruits and veggies.

I don’t deny there is people with actual diseases that prevents them from consuming gluten…but the way all that people reject it when they don’t even suffer the symptoms just makes it look like they are the kind of people that also believe in flat earth, reject vaccines and wear tinfoil hats.
I have gluten/dairy intolerance (NOT allergy) and going Gluten Free has been life-changing. But always found it hard to maintain the diet because you’d have to remember the long list of harmful ingredients (and all their synonyms) and try to spot them on food labels. I developed an app with a friend to help me do that, it’s called Peel. It detects and analyses ingredients off of food labels in real-time and tells you if it’s SAFE or to be AVOIDED. And it’s not another barcode scanner than ends up telling “product data unavailable”. It scans ingredients so it literally works on any product.

It’s also a modern desease because of the “nocebo” effect and the huge alarm made by the food industry. In the past, no one had these problems. It was good enough having some bread to eat!
This nocebo effect is only seen in US and other 1st world countries (where supposedly education system is “better”)

Hey Ted-Ed you gotta make a video for what is good and bad about gluten for our body so all of these guys may shut up.
I literally eat anything that is in a standard super market and restaurant. However, I don’t dismiss this whole Gluten trend as just another hipster thing. I may turn wheat intolerant in the future and as age pass, you start to avoid food that you used to eat because makes you feel whole day bloated and uncomfortable. In my case, it happened with pasta and I don’t longer like it as when young.
Even if it may not be real that they are intolerant to gluten, I think that the current excess of grains derivates in everything may lead to some sort of oversaturation and therefore intolerance in our body, like when you turn diabetic. Imagine your body processing it 365 days, 3 meals a day. I don’t think the body is designed for that, just take a look at everything is added as ingredient. Even the cows are fed with grains when they should be eating grass.
Besides, is not like I lose something. I don’t see or taste the difference between gluten free bread and normal bread. But it mean a whole world for people that actually need these things. If the issue is the price, then I just stick to my regular with gluten bread that I can still eat until I can’t.

Can anyone tell me any thoughts on why gluten gives me heart arrhythmias? My gut is perfect eating gluten but my heart can’t handle it. I tested negative for celiac but positive for gluten sensitivity. Even the cardiologists are stumped as to why gluten makes my heart freak out. I welcome any thoughts! Thanks! 😉

There are also people who can’t eat Fermentable Oligosaccharides, Disaccharides, Monosaccharides, and Polyols. Which include things like gluten, lactose, fructose, etc. This ted talk is opinionated which it shouldn’t be, it’s also judgmental.

There is the big point and the original one that nobody mentions that gluten is not bad for you, because factories who are producing it are peeling the peel from the wheat, and they are spraying over 14 types of chemicals on it, and then they bleach the flour: which that all is cancerous and it makes you intolerant specially when ur immune system is weak. So the whole point is: u dont need gluten free products, u just need organic (not peeled) wheat that u would blend it at home and make it yourself as flour or try to buy whole wheat flour. The same thing goes to white rice.

I have the same issue with the cheeses. This is also a common diet limitation for singers/vocalists as it creates a mucus buildup in the sinuses and thought that covers the vocal cords.

“Nocebo” never heard that word before but I like it. Its appropiate for my lactose insecurities. I trust anything diary except milk, that thing scares me. I can eat items containing milk but when its full on milk either whole to 1% its like a coin flip for an instant loose bowel. So I tend to avoid drinking milk but I think its all been from just a single bad experience with milk.

Gluten has a very inflammatory affect on the body. It is not good for us. Am very surprised you didn’t mention Hashimitos. If you are diagnosed with the auto immune disease called Chronic Lymphatic Thyroiditis or Hashimitos, you have to be 100 percent gluten free! This video was juvenile and info incomplete. I’ve been having lots of symptoms that might be related to this, but not completely. I went to about a hundred doctors and had lots of tests done but nobody can help me. I’m hoping someone on here might feel the same way because right now I feel like I am the only person on earth with these symptoms.
I get EXTREMELY bloated after literally everything I eat. Like painful bloating and it’s like someone’s sitting on my chest and I can’t breathe and get a painful hiccups. I did notice that some foods definitely make it a lot worse, like too much sugar, coffee, lactose, too many carbs in general and gluten. I realised that very light foods with less calories and very small portions of food throughout the day make it better. I cannot drink fizzy drinks or alcohol it’s the absolute worst. I tried cutting out so many things but it’s like EVERYTHING causes me to feel like this, even after drinking too much water (like one glass) at once. I’ve got constant constipation and nothing helps. Sometimes I get diarrhea, especially after eating junk food for a few days.
The doctors just don’t take me seriously and it’s driving me crazy. I tell them about the bloating and every single time they wanna test for acid reflux even though I tell them how many times I had that tested and it’s not it. I am also pretty sure that I’ve got issues with my thyroid. It was tested a few times but they weren’t sure? Last time they tested they actually gave me pills for hypothyroidism (lowest dose). I became extremely depressed during that month, and basically all of my symptoms got way worse, so I stopped taking them. I am also depressed and have been for a long time but I don’t take medication. I’ve also got low iron and Vitamin D levels.
The only doctor that took me seriously so far was when I went to the hospital after having real difficulties breathing and also experiencing hot flashed and anxiety. That doctor at the hospital actually listened to me and even asked me how I feel. He was very empathetic and he told me that the most probable cause for all of this is my psyche and that I would need CBT and antidepressants. I’ve got another appointment with my GP next week about my blood and stool test results, I am very curious to see if they actually found something this time. What do you think? Do you also think that all of these weird symptoms might be psychosomatic? Or is there actually a way they all could be connected and the cause is an underlying illness?

I once went to get some bread flour to make some garlic bread. It was labelled as high-protein flour, while the packets of cake flour right near it were labelled as low-gluten flour. It fascinates me thinking how people actually fall for it.

I’ve been ‘glutten’ free (not really because I didn’t know it was in sausage and a lot of other things) for 3 months. I’ve had acne for about 5 years. It started just when I was an adolescent. Anyway point is, my skin has improved in such a significant way, i’m even amazed. Its super super smooth. I still have acne of my face but it’s insane how the rest of my body feels. I had constipation issues for 5 years, now I’m mostly fine. This is just because of a drastic decrease in my wheat intake.

One of the best talks on celiac disease she could be a stand-up comedian. I am a 55 yo caucasian male on week 2 of the worst skin rash ever face, chest, neck and scalp. It looks exactly like DH. I was diagnosed with IBS 10 years ago and had prostatits around the same time. Depression, bleeding gums, hemmorhoids, diarhhea, constant bloating and severe abdominal pain as well as tingling in my hands when bike riding. Went to GI docs, was in a clinical IBS trial, went to dermatologists and no mention of gluten/celiac disease. Misdiagnosed all around.
They spray wheat with glyphosate (Roundup). Look it up. Snopes says it’s not common but who believes that.

This is such a great video. I had a blood test too late so it came back negative for coeliac, but I’d be really surprised if I don’t have it. I’ve had awful nerve pain and a host of other horrid symptoms which have improved since giving up gluten. Currently on the AIP diet as I feel like I’m allergic to everything since giving up gluten a couple of months ago I can only manage chicken and a few veggies with little or no reaction. I’ve an appointment with a neurologist in a week or two hopefully they’ll be more understanding than my GP!
My mother has celiac disease and so do I all the problems I have but the strangest for me is ataxia which when I sneeze I get electric shocked in the brain, very strange and first time it happened I stood there for minute totally confused..

I have celiac disease and DH (dermatitis herpetiformis)…it’s awful. I am in my 60’s…and I often wonder what would happen if I ever had to go to a care home or hospital…the dieticians wouldn’t know what to prepare for my meals. Not many people are familiar with this disease!

What do you do if your child is a picky eater? And what about Lactaid? My daughter already is lactose intolerant to an extent. She does dot tolerate milk well at all. But it’s hard to keep Lactaid around with her being the only one who drinks it. If she has cereal and we don’t have Lactaid, she doesn’t drink the milk. But I may switch to Lactaid myself. I don’t drink milk, but do on rare occasion like a bowl of cereal.

Intermittent fasting cleared my allergies and sinuses. I had been taking antihistamines for decades and now practicing intermittent fasting, I don’t need the meds anymore. Especially when I increased my fasting period from 16 hours to 20 hours of fasting per day. I had really bad hay fever.
I have DH. I avoid grains and cross reactors like dairy. I am still so itchy with lesions that won’t go away. Any ideas. I also avoid processed foods..sauces…etc.

My family and I are very careful about what we eat, I have a gluten intolerance, and I knew what gluten was before I had it. I don’t understand how people can be so uneducated on their own health! It’s pretty crazy how even nurses don’t know what you have half the time. When I started to realize I was getting acne, (for 2 years, and my skin was never clear.) my skin was dull in the face, I have extreme anxiety, and was always tired, couldn’t focus, and had brain fog.. I started to realize I probably had a gluten intolerance. My mom and sister have it too, so it was likely I would too. My mom is also 50% Irish and 80% of Irish people cannot eat gluten. So I am now starting to go gluten free!
I read that all grains have gluten to diffent extents. Also, there are many types of gluten. A person can be sensitive to some gluten types and not others.
I used to get sick once a year and then I started keto and have been getting sick regularly ever since. Now I wonder if this is the reason.

I had a histamine rash. Big red blotches itchy and hot. I thought they were bug bites at first. Not sure what put me over the edge could have been some tuna a friend gave me from a fishing trip. I learned meat unrefrigerated for too long means bacteria and more histamines.
I changed my probiotic formula and drink Nettle tea daily. So far so good.
FYI they do sell a histamine enzyme online.
Excellent talk, fellow sufferer I have 85% if not more of what you mentioned but tested negative here in the UK, sure they don’t do all the testing you do in the US it costs the NHS too much. I’m sure I have celiacs and have been on a gf diet for many years despite the test but I am only now realising gluten is in so many things, the substitute products are awful for us also, recently saw a talk which stated all grains were bad for us even rice, corn and oats I think it was called ‘No Grain No Pain’. Today I plan on starting a Real Gluten Free diet. I was also on a low fat diet due to weight gain but not helping, so I shall take the leap and use some butter and olive oil. I was also appreciative of all the other illnesses you mentioned as my father died extremely young 27 of a brain haemorrhage which could possibly have been linked to this. So thanks for all the information.
I got pushed into a surgery I didn’t need and never should have had. By a bunch of shitty doctors. Who said all my health issues would dissolve once I had my thyroid removed. Well, it just created a ton of new health issues. And one Dr actually was going through the results from my gastro and said I had some sort of disease. I didn’t catch what he said. He refused to tell me anything other than it was a food allergy and he didn’t agree with the test results, just be glad you don’t have it, it requires a crazy diet. A year or so later, I ask his replacement what it was, cuz I feel awful all the time, and she says, it has to be gluten. So now I’m trying to learn what has and doesn’t have gluten. And it’s been difficult. And I also run across something about medication induced lupus and decided to stop taking my PPI, to see if my lupus is caused by the meds. I’m finding more information online than I am from Drs. By the time I see the specialist for my lupus, I will have been waiting for a year and a half. Thanks to the worst state based insurance in the country (IMO). Which is California btw. Have seriously thought about moving back to Arkansas so I can see a good Dr and all the specialist I need. Arkansas Medicaid is far superior to California’s MediCal.

I have had dermatitis herpetiformis since I was about 12 years old and was so happy to hear your talk. I was diagnosed by an old retired dermatologist in a little town that I was vacationing in 1982. He just said, “I know what you have” and prescribed sulphapyridine. When I got the prescription renewed by my family doctor, he told me that I should be on a gluten-free diet. I was able to stop taking the drugs and managed relatively well. The best “cure” for my skin was being pregnant and I when I was expecting my daughter, I could eat lasagna and french bread and still have wonderful skin. Post delivery, I had a sandwich in the hospital and broke out like crazy (the hormone thing). After I had my son in 1995, I didn’t have any skin reaction and believed that my DM was cured. Fast forward to 2005. I became extremely anemic but it took another 2 years before we connected the dots and realize that it was celiac disease. I went on a gluten-free diet again, and strangely now, if I had any exposure to gluten, my DH flared up. I had to start taking Dapsone and if I miss a couple of days, my skin starts to erupt even though I eat gluten-free. I love your description of what having it is like. Two years ago, I ran out of my medication while traveling and it was so painful that I couldn’t sleep and I just want to sit in a bathtub of cold water to stop the burning.

She mentioned Oats, but they are gluten free if they are not contaminated when processed. You can always get steel cut oats which has less processing than rolled oats or quick oats.
GMO’S are killing all of us……chem trails they are spraying over our heads like they spray for mosquitos….under the auspices of global warming. Hay great video I’ve been gluten free now for 6 years and my body and brain is no longer on fire, I don’t think I would be here today if I hadn’t given up the grains and dairy I was that ill. But I’m still suffering with depression and can become angry to easily. I am about to change the meat I eat to grass fed and go organic out of desperation and I hadn’t thought about products i.e. deodorant, shaving foam, after shave etc. I will ask the pharmacist, any more ideas could really help, Ps can anyone explain why I know oats have no gluten especially certified oats and I don’t get a gluten reaction, but I get like a massive well feels like a massive blood sugar crash? any ideas would be gratefully received thanks

profd65, their is another protein bond called goliadan that is found in rice, oats, grains etc, not just in breads and pastas, so if you payed attention and actually cared enough to click on this video in the first place you would realize that she actually mentions gluten and goliadan in this video and how they are both harmful to us. Also in the beginning she mentions how gluten free is a good way to start (which it is) but she also says it shouldn’t stop their and she is right. i have been gluten free for 4 months and gluten and grain free for one month and i can tell you that i lost 27 pounds (doing the same work-out routine I’ve been doing for 4 years i only mention this because i was working out so much and my stomach was not going away because of the shit i was eating) my belly is completely flat, i sleep better, i eat better, my face is more slender I’m no longer anxiety ridden. The harsh reality of it is, none of it is good for us but we have to care to change it, food corperations and america will not.

Try red light therapy and near-infrared therapy. Look for 630 nm and 850 nm. (something close to that) It helps everything that is wrong with me. I was born without any frontal lobe sinuses. I went to an allergist for 6 1/2 years and she told me not to come back, said I was too complicated. Google red light and near-infrared therapy and try it. Not expensive if you buy the led bulb. Purchase on eBay or Amazon. Hope this helps. It is a real life-changer for me!

See I had an acute sinus infection before I started keto because I was eating processed sugars and probably too much of it mixed with dairy, like ice cream! As soon as I started on keto and stopped having sugary foods and as much dairy as I was prior, my pain completely went away!

I know this is an older vid, but thanks for the info. Was struggling with why I was having constant puffy eyes and dark circles since going keto. Quit the dairy and doing soooo much better, but still have some issues. I’ll look at histamine in foods now.
I did not experience allergies previous to the last year. My sister did but not me. I’ve been having allergic reactions off and on for the last year. I started serious keto at the end of October. For the past two months I’ve been having severe allergies where I have hives on my neck and my eyes and my face. It’s been really bad so bad that I have taken myself into see the doctor which I never do. I was put on prednisone which helped. It’s a tapered prescription where you take four pills for three days then three pills for three days then two pills for three days and one pill for three days. When I got down to two pills the symptoms started coming back again. It was getting bad and it was almost Christmas and I didn’t want to go through Christmas dealing with the problem so I’m on prednisone again and tapering off. I’m on two pills a day. I have been trying to figure out what’s causing it. I started apple cider vinegar at least 1 tablespoon per day and then increased it to 2 to 4 tablespoons per day. Trying to figure out if that may been my tipping point. Long comment I know but I’m glad to hear your information and I will continue to investigate.

Yes, it was all worth it. I cannot thank you enough. As you started to describe yourself, I said “That’s me!” I immediately did as you suggested and can’t believe the difference. I still think I am allergic to diary (casiene (sp?)) as I had cut it out but was still having problems with peanuts, chocolate and orange juice. BTW, I imagined that same “bucket” analogy a few months back, I just didn’t realize the histamine connection with food.
I’ve always had the worst seasonal allergies. Like I’ve never seen anyone with worse symptoms going back to my childhood ever, period, full stop and I’m mid 40s. Explosive allergies. Sometimes hundreds of sneezes a day. Missing multiple days of work. Golf was straight misery. Picture golfing for 5 hours while sneezing every 15 seconds, no lie, at the worst. Clockwork sinus infection first week of June after mn may pollen starts up, every.single.year. Killed my June’s and its the best weather month in mn. Tried shots for years. Drugs, washes, even little internal nose fillers! Deviated septum surgery helped breathing but didn’t help the allergies. Always knew something was triggering it but couldn’t figure it out. Last year I finally hit life changing jackpot, friggen food histamine. Once I heard the histamine food connection theory and tried it, and got my life back, the veil lifted on all my worst episodes. Eating endless cheese, sausage, tomatoes, avocados, sardines, smoked fish, and more cheese was causing it, imagine that. By this date every year, I have a budding infection. Was out yesterday in the sun and wind all day and would normally be a sniffling human disaster by now and I have almost nothing. Not nothing but maybe 5% of previous years symptoms. Life changing is not an over statement. Anyone with seasonal allergies owes it to themselves to explore the histamine connection.

Matt, just for grins… here’s what. Try this breathing 2x a day: breathe in 4 secs from your nose. Hold 7 seconds. Breathe out through your mouth 8 seconds. Repeat 3x for a total of 4 rotations. Repeat another time a day. Add on as you see fit. I wrecked my lungs with smoking for years and have had constant sinus problems. This does help. See what ya think. Love your vids. Ok I avoided for a long time answering those who claim gluten is bad for you, but that’s it ❌ if a gluten free diet can cause somehow of a slight improvement is some diseases like autism (research concludes that results are insignificant)and immune linked disorders that absolutely doesn’t mean that if you did a gluten free diet then your memory, gut and overall health will improve. This was eye opening, since I have sinus pressure and pain most all year, especially when we have drastic changes in humidity. But I also have the seasonal allergies big time. I have known that dairy causes mucus build up for a long time, but don’t have a dairy allergy. What DID surprise me was the sauerkraut, as this is really good for you.

Bromelain significantly helps me when I have allergies in he spring and fall, or if I get a cold. I’m definitely going to see if I reduce high histamine foods now as well.

I noticed something from my pre-keto life compared to now. I was never a big beer fan but I would enjoy a craft beer every once in a while. One evening, a friend said, did you realize that beer gives you a stuffy nose? I would start getting stuffy with 20 minutes of drinking a beer. When I started Keto, I realized that it wasn’t just beer. All wheat based products cause congestion for me. I still have seasonal allergies but my perpetual stuffy nose that has been with me since childhood is finally gone since I removed wheat based foods from my diet. If I splurge, beer still makes me stuff but other products (like a roll, for example) doesn’t.
I’ve had ongoing issues with stuffy nose my whole life. More likely to happen when lying down while in bed so affects my sleep a lot. Don’t think it’s a histamine thing but will try benadryl before bed to see if it helps. If it does, yikes, might have to cut out peanut butter.
I have dealt with night time congestion for years and indigestion. Started keto in July and all that went away! With the holidays here I have relaxed somethings I wasn’t consuming and low and behold all my symptoms returned… go figure!

High Histamines and Inflammation run hand in hand.Used to go on prednisone every fall/spring just to breath. My rheumatologist/allergist doctor took me off ALL milk products. It worked. Asthma and allergy symptoms way better. I still use whipping cream in small amounts. And I eat some cheeses but not every day.(1-2 times a week and not consecutive days) I feel so much better. I still suffer from seasonal allergies but not as severe as it used to be.

I have chronic histamine intolerance (urticaria) for 8 years and can’t function without meds. Doing Keto is a struggle, low histamine foods are high in carbs (rice, potatoes), low carb food is high in histamines ( cheese, fish, meat, nuts, etc.).
I recommend fasting for a couple days every month to “empty the bucket”

I’m having a histamine-intolerance/-allergie for years now and all I can say is, that everything you said in this video is totally right, but (if you have a histamine-intolerance or you are just really sensitive when it comes to histamines) you have to pay attention to a little more. There are also several vegetables and fruits that has a high level of histamines like tomatos, avocados, strawberries, eggplant, banana, watermelon, spinach, beans, and so on. Also wheat flour, pork and shrimps does have a high histamine level.
I was on keto for about 3/4 of a year with my histamine-intolerance and it was just really hard for me and didn’t worked out in the end because personally I just don’t had enough variation in my diet. But it is definitely possible.:)

My dad has celiac disease and let me tell you, food hygiene wise, it prepared us well to dealing with the corona virus! (No taking foods from other plate, no double dipping into sauces, no taking fresh food with a utensil that was in your mouth/on your plate, ect).
Next time I get those seasonal allergies I’ll immediately stop notice and stop the histamine intake. I suspect that they are high at the time this happens because it’s quite random the last few years when I have allergies.

I’m glad I don’t have that intolerance. I can eat tons of cheese, salami, sardines, etc with no issues.
I have a deviated septum, but it doesn’t really affect me much. Every once in a while I get a thing where it doesn’t feel like I am getting enough air, but it’s pretty minor compared to what I’ve heard others say. Not going to do the surgery unless it gets way worse.
Aged foods = molds. So that make so much sense. So string cheese should be ok. Peanuts can be moldy too. Leftovers should be eaten within three days so that makes sense too.
I was exactly the same way: terrible seasonal allergies where I could only mouth breath for about 4 months. Started an elimination diet and immediately cleared up. Added dairy and it immediately came back. Eliminating dairy also dropped my BP about 10 points and cleared up some joint pain. I can tolerate small amounts here and there, but mainly stay away from it.

This makes so much sense. Since starting keto a few a months ago, I thought I had seasonal allergies and was taking benadryl nightly. I was eating a fair amount of cheese, cured meats and a glass of red wine a night. Going to cut back on these, and see if I can get off the benadryl train. Thanks guys!
I need to investigate this further now. Because man…I have a stuffed nose all the time. I haven’t tried the netty pot but I have used Saline nasal spray and vicks nasal stuff. Doc wanted me to get that operation but my friend got it and well his nose is still stuffed…now its just more room in there to stuff. I think I might investigate this more and modify my keto diet to work with a low histamine intake and see what happens.

I’m on day one of no dairy. I’ve had constant sinus problem for the past 3 years. I’m utterly miserable. Not getting much sleep and depressed because of it. Been trying to guess what’s causing this. Tried everything. Yesterday my inflamed sinuses eased off a bit and I decided to have a sweet bun. Immediately after I had a sneezing fit and was back to square one. So today no milk, bread or cakes. Hi, I totally relate to your journey. I am allergic to wheat, corn, dairy, soy & nuts (because of the mold on nuts.) A year and half ago I read the book Grain Brain and then Brain Maker by Dr. David Permutter. It really helped. I now eat no grains, but I do eat butter in the dairy category. I also don’t eat any dried beans or any kind of legume. These books are based on science and make so much sense. I challenge you to read them. I actually had the sinus surgery several years ago, and it did help. But I was still almost always congested. I accidentally got a little bit of dairy in some mashed potatoes last week, and so now I’m suffering a little with congestion. I have found that if I use a combination of essential oils, it can be really helpful for my sinus problems. I use in equal parts: lemon, eucalyptus and peppermint essential oils. These will clear out my sinuses in just a few minutes. I have also heard that tea tree oil and oregano oil are very good for sinus infections. Some put the drops in tea to take them. Young Living & Doterra are both brands that can be taken internally.

I went grain free and dairy free….due to sensitivities. I’ve suffered from sinus problems an headaches for years, and now have gut problems. The change in diet seemed to work. As a treat…tried some cheese, and within 20-30 minutes….my sinus was inflamed. Tried it again a week later…..same thing. I don’t seem to have a problem with butter or cream (18-35%) in my coffee…..as it is primarily fat.

My sinuses were so inflamed for two months at the same time and I also had tightness in chest as well. It was Sulfites for me. Large amounts in wine and packaged peanuts.
