Cooking Can Enhance Nutrient Value. It has been said eating raw vegetables provides the best nutrients. While this may be the case for most veggies, cooking actually increases nutrient value in some vegetables. There appears to be positive and negative feedback.
Cooking may enhance the nutrient value of some veggies allowing for better absorption of nutrients and antioxidants. Regardless of whether you eat them raw or cooked. The health benefits of eating a wide variety of vegetables are shown to significantly improve your health.
Cook vegetables in smaller amounts of water to reduce the loss of vitamin C and B vitamins. Try to eat any cooked vegetables within a day or two, as their vitamin C.More specifically, the review indicates that an onion’s pungency increases during chopping (hence onion-induced tears), steaming is the best way to maintain nutritional quality (including TAC, carotenoids, glucosinolates and more), cooking and baking onions improves their flavonols content, soaking and cooking veggies helps remove anti-nutrients such as tannins and acid phytic, boiling helps.Dry cooking methods such as grilling, roasting and stir-frying also retain a greater amount of nutrients than boiling. If you prefer to boil your vegetables, save the nutrient-rich cooking water to.

The total nutritional value lost depends on the type.Although practically every veggie has nutritional benefits, the above crops are true powerhouses.

I need your help! I’m planning to do only another 3-4 videos in the Myth Bust Monday series this season. My goal with Season 1 of MBM was to cover most of the main NUTRITION/HEALTH ideas/myths. In Season 2, I will focus almost entirely on TRAINING related myths, which I’m really excited about. Anyway, given that I only have 3-4 topics left, what would you like to see? If you drink the water that is used to boil the vegetables? or is it the boiling process itself that destroys nutrients, steaming has high temps also.

I always cook broccoli. This is one of the few vegetables I can not eat raw.
Thx for the information. I have heard that sprinkling mustard seed on cooked broccoli adds back an enzyme that is lost when cooking and I think that is an anti-cancer enzyme or something.

Hey Jeff, thanks so much for sharing all your knowledge with us. I’m curious on periodization of workouts for naturals. For examples x weeks of 8-10 reps (for size), y weeks of 12-20 reps (for recovery and stamina ) and z weeks of 2-4 reps (for strength). Is there any need to do this? If yes, which order and what are the things to think about?

For Asian who live in Asia, we eat cooked vegetables like everyday. Raw salad vegetables very alien in our diet. It takes courage and full determination to really enjoy eating raw salad.

Jeff I just would like to let you know that your videos are really cool and actually supported by science. Not to mention that the edits are fire as well.
In the studies that show boiling is the worst method, did they assay the water for the nutrients in question? It makes sense that vitamin C would be boiled out of the vegetables but remain in the water. Vitamin C is a very hardy molecule and if it’s not thermally degraded by the other methods boiling shouldn’t, especially steaming vs. boiling. In a streamer they’re essentially the same temperature, but the extra energy in the steam would also degrade some of the organics. I say that because I don’t think temperature is the parameter to draw a conclusion from, but dilution is. My takeaway is to go ahead and boil if you making a soup or stew and capture the nutrients in the broth.
With boiling at high temperatures and large amounts of water is the loss of nutrients due to them diffusing into water or the temperatures changing the molecules and denaturing it?

the longer you cook tomatoes, the more nutrition you get. Tomato paste is one of the healthiest foods for you.
Garlic is interesting, it requires 10 minutes in the air to oxidize before heating, or it has almost no nutrition.
There is alot of information being touched on concerning foods that affect the goiter when eaten raw what’s your take on this Dr Berg.

What about the fat soluble vitamins( beta-carotene and K)? These molecules require fat to transport them through the gut. Hasnt it been shown in studies that cooking vegetables in fats/oils aids in the absorption of these? Therefore sautéing or baking vegetables on a low heat for a short time with added fats would be the best

Any chance you can do a video on multivitamins? I can’t seem to get good information on them. The scientific literature makes them look terrible, but then I see evidence based guys telling people to take them. Can’t tell if they are worth it or not.

Honestly, I prefer raw to being cooked. I love the texture and flavor of raw veggies. Radishes, snow peas, zucchini, cauliflower, broccoli… I just love it raw.

It always depends on the food and cooking method! I do personally prefer most of my foods—exceptions are greens and fruits—cooked though!
I am a critique of most experts, youtubers and people in general, as I feel they hold-back info (sometimes ulterior motives, and most times just not being confident in sharing their knowledge). Dr. Berg is a rare gem. I love the fact, that you produce material that is VERY CONCISE to the point, DETAILS that are good to know, step-wise information that even a busy CEO would appreciate. Thanks very much for creating this wealth of information. You are a gem. I do hope, you can produce a video on those people who have DIFFICULTY IN EATING most “FERMENTED” FOODS including Vinegar, Pickled items, etc. We get sore throat, very pale skin as if almost dying. I have only heard (so dont know how reliable it is) that this histamine intolerance, but not sure. It would be very enlightening if you are able to talk on this subject.

You left off the most important part. Much of the nutrients are inside the cellulose wall, which humans can’t digest raw. Not sure how you miss that! Vegans are always pointing to muscular cows, but we don’t have their digestive systems.

I was eating cooked Spinach every day. I was scared of oxalates and kidney stones so I am trying to spread it out. Any thoughts on Oxalates?
I always stir fry my string beans and broccoli on high in a little kerry gold butter or manzola oil to the point it gets slightly burnt on one side I add a little salt and red pepper flakes for spice. I love eating all my veggies this way.
I juice raw veggies with celery (salts that kill microbes). Otherwise I cook the hell out of them, because I got some major health problems from raw veggies. Lesson learned.

Doesn’t make any difference if the veggies are cooked or raw. Both are bad for you. I eat only cooked beef and raw beef. Same for eggs, both cooked and raw. Raw animal products are best. Meat heals.
Don’t overthink it. Steam em all.
Nix the boiling and if absolutely necessary, nuke em in the microwave. But teamsteam all the way.

Comparing 1 cup of cooked spinach to 1 cup of raw spinach is not a good comparison for nutrient differences between cooked and raw. A better comparison would be the nutrients in one cup of raw eaten raw and then one cup of raw spinach eaten cooked. There’s a lot more in a cup of cooked spinach than there is in a cup of raw spinach

…an oz per day of dark chocolate is acceptable. I melt it or ghee, or use ghee to dip veggies. I only do 2 minutes heat on broc, cauli, Brussel sprouts,and purple cabbage. Radishes, carrots, spinach, kale I eat raw. Only do few slices of yellow squash and sweet potato.

a lot of inaccuracies in this one. no plants should ever be eaten raw unless its a fruit. damage from anti nutrients is higher from uncooked plants. spinach is one of the worst things to eat raw it’s so full of oxalates if you eat over a pound it could kill you. the calcium in spinach is not bioavailable to humans, it binds with oxalates creating indigestible crystals which damage the human body. calcium it not needed from any source other than what’s available in meats or fat. there is absolutely no advantage to eating any plants at all. there are many disadvantages to eating plants and they far outweigh the little pleasure they give. if your starving eat them, it’s a slower rout to death. i recommend you peel the skins off and remove all seeds these contain the highest levels of anti nutrients. for pleasure eat at your own risk. fruit is the only thing i would recommend for pleasure and only a few times a week in very moderate doses.

I eat everything raw, even potatoes. Sometimes even put raw meat and rice in a mixer and drink it.

I started reading the labels for Kim chi, so far from 3 different brands they added sugar.

Finally someone that makes so raw is sometimes worse because our body doesn’t have the digestif capability to absorb all the nutrition and needs time to adapt, while cooking is still good because it minimalise stress on the stomach. I don’t know why but all your video always seem to make sense, you rarely give out sceptical information which is what we need. There is still some missing pieces to be honest like some vegetable is proven to be able to release more antioxidants or nutrition when cooked, but I don’t blame you, the research done on this topic seems poorly done or rushed.

I don’t literally like vegetables, I’m a picky eater, but I’m eager to eat for my diet. As an Asian it’s not going easy to eat raw veggies when you buy it in public Mart (street market) I buy there because of cheap price. And you can’t sure the cleanest of that vegetables, so you have to wash and cook them properly.

I think the issue with boiling is that some of the nutrients leach out into the water, but if you then consume the water (ie you’re making a soup or stew) you’re still getting them.

Others say: The plants has developed their enzymes because it benefits THE PLANT! For example many plant-enzymes serve to protect the plant against fungus etc.
I don’t digest veggies well at all but find that raw veggies “tears my insides up” so I eat well-steamed veggies in very small amounts to tolerate them. Might eventually give up on veggies and go fruit and meat or just meat.

Quick question, Jeff. I know diet has a huge factor on body fat. My diet is pretty good and I work out pretty consistently but I have lower back fat and other wise I’m pretty ripped, i do quite abit of cardio and weight training but I don’t usually do squats. Would doing squats help eliminate lower back fat. Thanks

I’m sorry but cooking with a microwave is not a healthy option. I would avoid that option as much as possible. The US military tried microwaving food for their soldiers as a quick and easy meal ready to go, however the soldiers showed signs of sickness soon after. That’s why they use MREs now. If you microwave water and then give that water to a plant and continue to do so that plant will be dead after 7 days.

It’s worth pointing out that some veggies NEED to be cooked, specifically those high in oxalates or solanine.
You didn’t go into the question of which vegetables should be cooked and which can be eaten raw. Broccoli should be steamed for 2-4 minutes and then not eaten for 5 minutes. This allows for an important enzyme to be produced which is key to the anti-cancer property of the broccoli. If you don’t cook, or overcook, you won’t get the beneficial effect. The same might be true of cabbage too, since it’s in the same family.
Also, steaming will reduce the oxylate content of some vegetables like spinach. If you have kidney stones or are prone to getting them, this is important. I think that it’s good to boil carrots, even for a long time, because it breaks down the cell walls and releases the beta carotene and other carotenoids.
Vegetables, like green leafy vegetables should be steamed as little as possible to prevent loss of vitamins.
The best is a combination of both.
Cooked veggies are easier to consume in large amounts.

I grew up eating cooked and always see people eat, prepare raw salad and I just don’t trust it. And I just don’t like how vegetables taste when raw. I hate salad and I don’t like the salad culture. Everyone eats salad bowls. Every new restaurant is a salad or bowl oriented place. Why not more exotic restaurants? Sit down restaurants Cooked food. Italian. Chinese. Korean. French even.
I eat all kinds of vegetables cooked. Steamed brocolli, cauliflower, as well as cabbage, spinach, carrots, Brussels sprouts, sprouts, eggplant, onions. Mushrooms.
Chinese style corn, bamboo shoots. Mustard greens.

oh whew! I am doing something right! I spiralize one zucchini a day for spagetti with cream sauce and have a heaping spoonful of sourkraut just before bed….it keeps me digestively happy!

Because broccoli has Sulfur, as does coliflower, and spinach, i bet those other ones cause you the same pain. You should look into the gas chromatography that was don’t for symptomerty. Also why would you want plant enzymes, you don’t eating certain raw vegetables will leave you enzyme deficient, as heavy metals require more enzymes to break down, while when you heat say broccoli, cauliflower, of spinach, they now become much easier to digest, and less of a tax on your limited daily enzyme count, which leaves you a surplus, which is what you need, as if you are enzyme deficient you are open to disease and cancer tumors etc, as those heavy metals do not get broken down. All based in science. Enzymes are the key most people do not understand.
good thing that before starting my diet i used to eat salads regularly as i like them very much but now no bread and no feta cheese:(. i tried raw brocoly for the first time today and it fills my stomach and stops hunger even more than carots 😉 so the benefits of raw brocoly is 1. it is cheap (in Greece at least) 2. it is convenient 3. it stops hunger 4. it is healthier than boiled brocolly 😉

Eat some raw but cook most…that way you are getting the minerals as the fibres are already broken down. Plus you can consume more cooked veg per meal than raw. Many other reasons too…like cooked is yang…
I have been to China several times, Bejing, Wohan, Shanghi, Gwanzau, everyone cooks all vegetables,
including lettuce. Nothing is eaten raw. Think of Hot Pot.
I was never a good cook, never liked cooking. Always worked long hours and played a lot of sports. Ate a lot of sugar and carbs whatever I wanted I was super active I could eat what I wanted and not get fat. I got sick, starting pooing blood, got diagnosed with Crohns and rheumatoid arthritis, psoriasis. Doctors never once told me diet could be a factor, they even said it didnt matter.
Took me a long time to work out my diet could heal me and reduce symptoms over time. For a long time I lived off rice and potatoes and eggs they seemed good on my gut. Now I’ve cut out the carbs and every second morning I make a big pan of food. Garlic, onion, peppers, cabbage, cauliflower, broccoli, beef from the farm I live on, coconut milk and bone broth, tumeric, cumin, cayenne pepper, mixed herbs. I lightly cook the veges they are still crunchy.
It’s delicious and basically all I eat along with my kale and banana smoothie and hard boiled eggs. I feel so much better, it’s been 2 months.
