Ingredients 2 15-ounce cans tri-bean blend (kidney, pinto and black beans), rinsed and drained 2 8-ounce cans tomato sauce 1 tablespoon extra-virgin olive oil 1 small shallot, minced 1 teaspoon smoked paprika ½ teaspoon garlic powder 1 tablespoon raw, unpasteurized apple cider vinegar 1 tablespoon.Step 1 Heat bacon in a Dutch oven over medium heat. Cook 8 minutes.
Add onion, thyme, and garlic to pan.Stir very well to ensure that everything is well mixed and coated in the sauce. Set smoker to 250F using wood chips of choice (cherry, apple, hickory and maple all work excellent for these beans).
Place the cast iron skillet full of beans in the smoker and smoke for 2 1/2 hours. Serve. Pin.Combine sauce ingredients and add to the beans, cooking until warmed through.
Taste and adjust seasonings as needed. Transfer to a 9 x 13 inch casserole dish and add the precooked bacon strips to the top. Bake.Baked beans though are a summer staple. Making them from scratch is inexpensive and easy.
I fiddled around with a number of recipes and arrived at this one which is a mixture of them.1 117 oz can of baked beans (#10 can like you get at a warehouse club) drain about a third of the juice if you can (it’s hard as the sauce is thick just drain what you can) 30 ounces of black beans juice drained off 30 ounces of red kidney beans Spicy Chuck Wagon Beans. Baked beans don’t get any easier!

This was my first attempt to make homemade “bbq beans”. I make tons of other beans, red beans and rice, white bean stew, black bean chipotle soup, barranco beans. I was concerned with the amount of vinegar, but proceeded as directed..,now my husband and I are very in tune to liking the same types of flavors, he absolutely loved these beans, and I couldn’t force myself to eat more than two spoonfuls, this was after repeatedly trying to balance the acid out with salt, more sugar and fat during the cooking process, and since I normally stay away from sugar, I was still surprised by the overwhelmingly acidity. I really wanted to like these, but never the less my husband has a few batches in the freezer for when I don’t want to cook. I love what you’re doing in the presentation and all of the homemade fermented and canned gardened goods!
What else do put in your baked beans? Don’t give out family secrets now!

Hey Malcom…I just found your channel and website…Ordered some stuff of of there….I am going to do your beer can chicken with these beans….Since the chicken needs to be cooked at a higher temp, can I just throw the beans in there with the chicken and simply not cook them as long as if I were cooking at 250 degrees like you mentioned. How long would you say uncovered and then covered when I cook it with the chicken? Thanks and you rock!
I made this today and they came out amazing. I added some chopped bacon and some bacon slices.
I watched this recipe before I was to make BBQ for my employees. I have 10, very picky guys. Without going into all the details, this recipe was easy to follow and was exactly what he said they’d be….A HUGE HIT! Every single one of the guys ate them and said that they were amazing. I made 5 large cans of Bush’s Baked Beans and their was none left over. In fact, I was told when we do this again regardless of what I make, I’ve got to make the baked beans! yes, it is a great recipe, however most of the time I don’t have the time to use it I have no problem getting by with b&m canned beans, vastly superior to bush’s I really do like them with good quality skin on weiners they make great beenie weenie add some fried taters and warm buttered corn bread, biscuits or even refrigerated tubed dinner rolls and you have quite the tasty and economical meal another plus, kids love it
It is real easy to over smoke beans if you are going to use it for a drip pan with the beans for the full cook, I found out the hard way.:-) Good looking beans there Larry.

As a foreigner I have to ask: How do you eat these beans with white bread? Many recepies say these beans should be served with some white bread, but am I supposed to spread the beans on the bread or dip the bread somehow? How do you do it in Texas?
This is very similar to a recipe I do. No pulled pork involved, just a package of bacon chopped and put in pan first. Get it about half done where the bacon is soft, pour off the grease then add the bean mixture. The key to it is the time uncovered, otherwise it gets too smokey!
This recipe is the truth! Made these yesterday (added some bacon on the top when put on smoker) & paired them with his Texas pulled pork. Damn what a meal that made! Best bbq channel on YouTube!

Man I think you should try this recipe again but use your own white beans instead canned baked beans. I mean the recipe is the same, maybe sub in a few more tomatoes and another tablespoon of sugar but come on, those beans are gonna soak up those sugars/fats and flavour like nobody’s business… Christ I’m envious of American food sometimes.

I do mine similarly, but stir frequently or at least when the thick film starts on top. Then, don’t stir for the last hour. I still get the thick film or crust, but overall better flavor and uniform cooking.

If the beans weren’t potentially “gaseous” enough (even though i loveth them so), the red sweet peppers are like “digested propane” from my “business end”! Ha!☺
Should you share in my plight, add a quartered peeled carrot to the pot. The carrot won’t change the flavor of the beans, but it’ll certainly change your scent.

Great recipe my only advice would be to always have left over pork butt saved in your freezer to break out and add to your beans. That will really top off this recipe!

Just saying, but so far Barbecue Week has been 1/3 for actual barbecue. Baked Beans are damn good. Last time I had the real deal, in New England, I was floored by how good those beans were. I think in its simplest permutation, baked beans are water, beans, onion, salt pork (not bacon), and molasses, added to a earthenware pot and baked for a few hours. But I do declare, adding some other ingredients do make a big difference in the flavor department.

Great recipe I tried it and loved it. But I had to giggle when you said add a tablespoon and then dumped a half a cup of rub in the beans lol.
I made these but with diced onion peppers and a mix of ground pork and hamburger, used the The BBQ RUB. They are so delicious. Gotta put that BBQ RUB in there to get the full affect

Heybo, you forgot to mention when you know the beans are done. It’s what I call the “crust” on the top. Yours had that great dark crust, which is my cue to pull them from the que.

In Texas we cook up dried pintos till tender with lots of cumin, chili powder, garlic onion and jalapeños with some bacon. I have never had baked beans before can’t decide if I would like a bean with sweetness to it. They looked darn good though may have to give it a shot.

This looks really good!! The best recipe I have ever had that is not too sweet is in the “New Mcdougall” cookbook. It has molasses in it. Once you have made these you will never go back to canned beans they are insane!!

If you don’t own a “fat separator” (whatever device that is) just place your drippings in fridge for a while and the fat will migrate to the top & you can lift it out with a spoon.

Literally made this earlier with a few minor alterations. I was gonna add chorizo as I’m not vegan but thought give the standard recipe a try first.
All I can say is this is delicious even without the meat. An very affordable too in these current hard times.

Yeah I have 4 kids pregnant and a husband I am not gonna do all this for beans. I will just go to a bbq place to eat beans
Some questions from an inexperienced cook: a) why cooking the beans the first time for one hour, when they are going to undergo a new cooking for another three hours? b) Same as above for meat, although I understand that the way the recipe is made some fat is eliminated. Conversely, considering that the beans and the meat are cooked in advance, why cooking them for entire hours later? Wouldn’t the long cooking damage the perfume of the mustard, the tobasco, the peppers, the whisky, the cider? Instinctively, I wouldn’t not go for more than 30-40 minutes in the second round of cooking. Actually, I would add the whisky after 20 minutes or so, and then go on for another 20 minutes. Is there any specific reason for this very long procedure?
When you add the rub. Should it be whatever rub you are using on whatever meat/chicken you are preparing for that specific meal or doesn’t matter?

I made a batch of these beans yesterday and they turned out great! I tweaked the recipe just a bit, but not much. I used Moe Cason’s Pork Rub. His run has a bit too much black pepper in it, so I suggest something a little more mild. I didnt have much The BBQ Rub left otherwise I would have used it instead. Keep pumping out those videos!!!
Hi everyone! Thanks for watching, BUT please don’t keep reposting and propagating the myth about the dangers of using aluminum or that salt causes beans to harden.
For starters, aluminum does NOT cause Alzheimer’s disease. There is no proof of that anywhere and is an old myth dating back to the 1960’s that refuses to die in the 21st century. Please read this directly from the Alzheimer’s Association website http://m.alz.org/myths.asp or the official report from the Center for Disease Control website: https://www.atsdr.cdc.gov/phs/phs.asp?id=1076&tid=34.
Second, although bare aluminum is a reactive metal if not coated or allowed to build up its own protective oxide layer, the amount of it dissolving in a pan of food cooked at such a low temperature is so small that a single antacid tablet has hundreds of times more aluminum than would be leached cooking in an aluminium pan. It is safe for use in cooking. Again, I refer you to the official report from the Center for Disease Control website: https://www.atsdr.cdc.gov/phs/phs.asp?id=1076&tid=34. Quote from the CDC document, “Exposure to the levels…and the forms of aluminum that are present in dirt and aluminum pots and pans are not considered to be harmful….aluminum levels found in processed foods and foods cooked in aluminum pots are generally considered to be safe.”
As for salt causing beans to harden, this myth has been dispelled for many years already, so please quit repeating it. As you can plainly see in this video, the beans are completely softened after soaking and simmering them in salted water. I even squish one and eat it in the video. The true source of “bean hardening” are acids that hinder and slow down the cooking process. This is why I cook and soften the beans BEFORE adding them to the pan with the acidic ingredients (tomatoes mostly). If you just throw uncooked beans into the tomatoes, it will take many more hours (10+) to soften them in contrast to the one hour simmer in salted water. The proof is self evident in this video.Cooking beans in salted water is actually beneficial. Not only does it add flavor to the beans, it also helps them to retain their shape throughout the rest of the cooking process. As you can see at the end of my video, the beans are not mushy with stray skins floating about as would happen if I didn’t cook them in salted water beforehand.
I know many of you are trying to be helpful so thank you for that, but please please please do some research on these things before posting how wrong I am. Posting incorrect information misleads people and can make you look bad. Pulled pork,baked beans,potato salad and Cole slaw I’d say that’s about the best meal anyone could ask for.
I’ve made the same beans except I use 4 different beans (pinto, black, kidney and northern), I add one pound of bacon chopped up, 1/2 pound of Jimmy Dean sage sausage crumbled up and three cloves of garlic minced. It’s a meal in itself! So good!

The idea of beans causing flatulence is partly due to “suggestion” (or “confirmation bias”) and partly due to wrong habits. Regarding “suggestion”, this is an interesting study: https://nutritionj.biomedcentral.com/track/pdf/10.1186/1475-2891-10-128 The fact is, we always produce a certain amount of gas, and somehow if we do it after eating beans, we tend to notice it more. Besides, beans are somehow a “difficult” food to digest, and they should not be used as a “side dish”. If you only eat beans (such as the recipe shown in this video) and some raw vegetables and/or cooked vegetables, AND if you have an habit of eating beans (your body is “trained” to digest them) you are not going to suffer any adverse consequence, and you are not going to produce more gas than after an ordinary two-courses meal. Just remember beans have to be eaten “alone” (and with vegetables as side dish). Eat beans that way regularly and the problem will disappear. Personally I eat beans without bread and without any other food besides vegetables: when I eat beans, I eat beans, up to satiety. Never had any flatulence problem. Chew well (as one should always do). Accompany your food with wine (as one should always do!). Keep your intestine in good health (eat Sauerkrauts!)

Dude i loved your bill nye comment. It is so fucking accurate. I have yet to meet any individual that has obtained a stem degree, from a decent university, that believes bill nye is “scientist”. Although to be fair, i havent asked to many people on their take of him, however, in class, professors would constantly roast him. I got an ece degree from uiuc. I was looking up a few videos on scratch baked beans and one of them used ground sausage and most of them used Bush’s baked beans as a base so I stopped looking. Like wtf is wrong with people?
I am almost 30 and I remember watching Jamie when I was a teenager and he was probably in his early 20s. He used to live in an apartment with an interior spiral staircase and he was sliding down on it. He has always had this really good energy, I think he has inspired me love cooking.

Nothing beats homebade beans but when I must get them from a can I like Clark’s old fashionned with molasses. I found its the one that tastes closest to what my grandmother makes. The best is diping your toast in the bean sauce mmmm:)
I really enjoyed this episode. I have frozen pulled pork in the freezer, refrigerated drippings in a mason jar, home made tomato sauce… I even drink your brand of bourbon. I just don’t have any beans and it’s 5:15 am and the stores are closed.:( Thank you for the recipe.

No peppers for me please, bit where’s the bacon? My mom made hers with fresh beans, soaked overnight, added some brown sugar, ketchup, bacon and set a whole large onion in the center..cooked for hours..i miss her beans..nothing of hers I make tastes like hers tho so, I don’t try anymore..
If you would cut some thick sliced bacon into 1” pieces and lay on top in the beginning it will definitely take it up a notch!
I tried this and to me it has too much tomato flavor. I will try again but use half as much tomato paste. The whole thing just taste like sweet tomato soup. If I could cut the tomato taste down this would be great.

I am up in Canada, not familiar with that bean brand. Are they in tomato sauce? Maple syrup? Normally we buy beans in the can, you can just eat em cold. We eat them hot, but they are cooked right out of the can. Any info you can give me would be great! Any Canadians will know what I am talking about as well, Heinz beans. I made these tonight but with bacon because my pork butt want finished yet. They were a hit! Got so many compliments!
I stopped the video at 1:46, NEVER ADD SALT TO A COLD PAN WATER no matter what ingredients you already have in the pan, Salt will “Pit” your pan as you heat the water up, Only add salt to water that is warmed up or close to boiling for cooking purposes.

Beans had a strong vinegar flavor. Not sure if it was supposed to or not. The beans were good if you like vinegar which I am not the biggest fan of. Video instructions were great.
