In general, eating corn should not pose a problem for those on a gluten-free diet, but there are several caveats. First, it’s important to know how your corn was prepared. If you buy fresh corn on the cob and prepare it at home in your gluten-free kitchen, you won’t have.
Multiple studies have shown that traditional gluten free diets fail to heal patients even after many years on the diet. Corn is used in the production of sweeteners, shampoos, soaps, plastics, fuels, etc. The potential for cross contamination is dangerously high.
The real question here is – Is corn safe on a gluten-free diet yes or no? Studies are showing contradicting answers, and it is confusing. However, we also know that some of the prolamins which are a group of plant storage proteins in Maize (corn) contain the amino acids zeins that look similar to the wheat gliadin, which will activate immune response by binding to the HLA-DQ2 and DQ8.Corn has not been studied in the extensive way that wheat has in relation to celiac disease, but for 40+ years patients and their physicians have seemed to agree that corn is OK. The sequences in the corn zein (prolamin) fraction are suspicious, but they do differ in an apparently crucial way from the protein sequences of the wheat gliadin (prolamin) fraction.
Yes, corn in its natural form is gluten-free. However, be on the lookout for gluten in corn that comes in a sauce or with any other ingredients, as they could contain the protein. Regardless of the type of corn you purchase, always double check the ingredients label to make sure the product is truly gluten-free.

Just diagnosed with celiac disease this past summer, and I’ve definitely felt a difference cutting out gluten, what I hadn’t cut out was corn!! And it makes perfect sense now because I’ve still been having my typical celiac “gluten” reaction when I know I haven’t eaten any gluten. Thank you for sharing your knowledge!

I think it’s just yellow corn. I am off wheat, and can identify when I feel the cross-reactive symptoms with yellow corn, but it does not happen with white corn. I don’t know about blue corn.
This was very interesting and informative. Both my daughter and myself suffer from dermatitis herpetiformis and my mother is a full blown celiac. We have turned to various corn based products as substitute for gluten based products however this makes me consider re-evaluating. Thank you for the information.

Hello Dr. I have a question. I have had a long term C diff infection that lasted almost 17 months & I Have finally gotten rid of for over a year now. I have developed so many different symptoms however & I believe they are linked to wheat or all grains in general. I had taken a ASCA test & my IGG was fine but my IGA was 36 (range being 5-20). I stopped eating carbs for a month & did the test again and it was 16. I’v had symptoms of HORRID neck pain and migrains Do u believe this is from gluten?

Hello I know you are looking for Dr. Clarks insight but I thought I would chime in a possibility. Maybe you are allergic to a certain type of grain? I know most are made of wheat. But there are a few that are not. Or maybe you can handle small amounts of gluten. Maybe the chicken breading only has a very small amount of gluten. While bread (depending on what flour) might have a significantly larger amount that make symptoms more noticeable/painful.
I would like to find out how much of the “gluten” problems are actually related to GMO contamination.

I am not ‘sensitive’ to anything but corn if I eat it plain. I have celiacs. I have noticed that if I eat JUST corn, my stomach hurts. But if I eat it with safe foods, my body recognises it as a normal food. After I got diagnosed, I went raw vegan for a week and am a vegan full time. That has helped me a lot!!

Dear Dr Peterson, for me it is clear that zenin, the prolamine found in corn, makes me react even worse than gliadin. So please be clear, your comment about corn is not clear. You did not say that corn is ok and neither the oposite

yes, i have noticed im very sensitive to rice, my skin changes, even my complexion changes after consuming rice, i also over perspire, my eyes go slightly red and they water quite a bit, my tongue changes its colour, can these be signs of rice intolerance?

would it be a good idea to elimanate all grains for a period of time, lets start with a baseline of 30 days, then introduce corn or rice depending one ones preference as first preferred grain, then introduce other, then lastly introduce oats

Hopefully after 3 yrs of doing my best to completely avoid gluten, by gut is mostly healed. Now if my chronic fatigue would decrease & my ability to focus increase, I’d feel like a different person.
Hi Dr. Peterson, i’m into bodybuilding and am not gluten intolerant but trying to avoid it. I want to make sure my digestive system is operating at optimum level and maximizing nutrient absorption. What is you opinion of the breading in breaded meats? Should i avoid those meats? Also, should i avoid white rice?
i found that all of the “safe” grains caused problems for my son ( crohns ) He improved dramatically after removing all grains from his diet.

my IgGs were the lowest for corn from all the grains tested. for gluten and rye, wheat… they were super high.

My mom and sister, me and my 1 1/2 year old son have celiac and we had no idea about the corn it explains alot!! so glad I found this. Also, two months ago my sister was told she is “intolerance with dairy” my son gets horrible rashes with cows milk, we switched to goats milk. very interesting video.

The worst thing in the world about celiac is when you are poor and cant even afford a regular doctor. And my food bill is outrageous as I have found that I do feel a little better eating non GMO though…just still have fibromyalgia symptoms.

people have problems with certain foods,milk, gluten, corn is because this stuff is not supposed to be eaten!
It could be from Gluten, but the ASCA indicates antibodies against Saccaromyces Cerevisia -yeast (nutritional, baker’s,brewer’s). THAT sensitivity, or the generaly increased immune activation can easily lead to pain all over the body including migraines.
A week is WAY too short for that process to be telling, in my experience. Secondly, that process, while very useful, is not completely reliable since you are basing your conclusions on obvious changes. Many people have “silent” celiac disease, or “silent” autoimmunity-meaning the reactions ARE happening, just not in a way that can be appreciated symptomatically.
Millet is not a gluten containing grain, although for some it’s cross-reactive. See how you do with it and if it’s a problem, likely best to avoid it until your gut is completely healed.

Excellent video and information. I was diagnosed with celiac and lymphocytic colitis 4 months ago and immediately went on gluten-free diet and dairy free. I started to add dairy back in the past two weeks, with bad results. I also notice that when I east the gluten free prepared foods I get abdominal pain and heartburn. I am taking entocort to get the colitis into remission (hopefully), but prior to that would not have lived with the flare-up of the colitis. It took until I was 58 to get to the bottom of my issues. Listen to Dr. Clark-I think he is right on with the cross re-activity.
Okay this is what happens when I eat carbs I get sleepy I get a headache my speech is slurred my mood is elevated and fog in eyes. And I get tired. Went to the hospital er. The doc said I was testing good all except my vitamin d. My hands and body tingle. Peanut butter and chocolate also make me sleepy and put me in the same state of mind but I don’t know what’s going on anybody got any ideas?
Yes! I have Celiac disease and DH (Dermatitis Herpetiformis). I had to STOP the corn products. I remember eating “Gluten Free” corn tacos…felt like I was poisoned. Was sick for months. So, I have learned, that even if the packaging says “Gluten Free”…read your ingredients!
Dear Dr Peterson, after years of suffering from supposedly gluten, reading, thinking and experiencing various food, I finally understood that gluten allergy is a HUGE comedy, a smoke curtain that hide the real problem and I can prove it. Now I eat wheat bread with 0 reaction. But it’s an organic wheat I buy from France, while eating something that just touched regular bread will almost kill me. So the real problem is just glyphosate found in roundup, the weed killer that is spread generously on wheat field mainly, also on corn and almost on every field before sowing.
To, so called, gluten sensitive people, the good news is that we are not sick; our body just reacting to a poison; which is a luck, and on top of it, we must thank life for giving us allergic type of reaction, which is an alert saying stop, be careful. People who do not receive these alerts will end up with one of more of the serious panoply of health issues like alzheimer, kidney failure, and so on (1).
The bad news, but very, very, very bad news is that, while avoiding gluten was hardly complicated, avoiding glyphosate is a lot worst, not far from impossible. On top of spreading glyphosate on almost every field, the industry is now using corn “gluten” (zenin) mostly already contaminated with glyphosate, as weed killer and as fertilizer even under fruit trees (2). The fruits are getting bigger and more beautiful because plants like nitrogen and corn zenin produces a lot. But the fruits also get contaminated with the glyphosate carried by the fertilizer. I know it because of my high sensitiveness that gives me reactions. Even organic food are not always glyphosate free. I try to buy food coming from countries that banned glyphosate, but it’s not easy. For example in Canada, only Turbana plantains does not make me react and all bananas even those organic give me reaction. When I travel in countries where it still exist peasant farming, I bring back a whole bunch of bananas and other fruits.
Soon or later I will have to grow my own food or move away. This new use of corn gluten is gaining grounds all over the world. This Horse of Troyes has poisoned fruits and vegetables even in Asian countries, areas that usually are very traditional in agriculture. For example, I used to buy fruit coming from Vietnam, but from 2016, they started to be contaminated, even exotic fruits like longane or dragon fruit.
So Dr Peterson, I don’t know if you can share these informations in the medical community, but if so, please do it, if only for the children’s sake; among others, those who gonna fail in life because of neurological disorders like autism, ADHD and so on. Please, please, please… Thank you.
By the way the argument used by the pro-glypho people (3) saying that there is no study linking celiac desease to GMOs or glyphosate, is just BS, a sophism. There is no need to make months or years-studies to demonstrate that link. The testimony of people having reactions after eating food contaminated with glyphosate should be enough. Those reactions are almost immediate; it’s not like checking if they gonna develop cancer after years.

A Raw vegan diet can be very helpful, partially because it alkalizes the body. And many people with gluten sensitivity and/or autoimmunity could use some alkalizing. That said, some persons are so sick that they really do need a significant amount of protein that can be challenging to achieve using a raw vegan diet.

i live in houston. I was diagnosed allergic to Wheat and Gluten in 2001, since then have been avoiding all things which have gluten sometimes i ingest gluten accidentally. I woke up on 15th july 2014 with the following symptoms.
Symptoms bloating of stomach, belching, wasting of muscles, twitching in muscles, shallow sleep, poor motions, confusion in mind and speech, mind not as razor sharp, limp hair, feeling weak, indecisive.
I am usually very sharp and able to do many things at the same time, a successful engineer and business man

Not sure I follow you… The antibody against TPO can definitely cross react with cells in the cerebellum, astrocytes to be specific. So, the TPO Ab attaches to the cerebellum cell, and the T cells then find the tagged cell and attempt to destroy it. I don’t believe TPO antibodies bind/cross-react with gluten in that way. However, Hashimoto’s and gluten sensitivity do share the same genotype HLA DQ 2 and 8.

IM tired of feeling sick all the time no matter what I eat. Im pissed off. When I have corn tortillas with tomatoes I feel like hell. So far I can only eat turkey with some leafy greens without feeling sick. And Water. Seriously NOTHING ELSE so far. Hi I would appreciate some much needed help. I believe I have Candida Overgrowth, every time I eat fruit skin rashes flare up over my groin and they are ridiculously itchy! I am a healed celiac based on repeated intestinal biopsies and antibodies testing. I do consume corn and rice. Only wheat, barley and rye triggers a celiac response (in some rare cases oats). Some people do have food intolerances (e.g. corn) but they do not cause intestinal damage as found with celiac disease.
Please take advice about celiac disease from Celiac Disease Support organizations and Gastroenterologists who specialize in celiac disease and not from a nutritionist who is trying to sell you products. If you suspect celiac disease, ask your doctor for celiac testing. Do not give up gluten from wheat, barley or rye until testing is complete or you will be in diagnostic limboland.
Hello, I would like to know the things I can eat relatively safely. I would like to follow a vegan diet but with all of these restrictions it seems almost impossible to eat anything. Rice? Potatoes?
@SOUTHPAW731 Celiac disease is a genetic disorder, not an allergy, and an autoimmune disease.
HFCS has a load of its own problems regardless to whether it is reactive or not. avoid all corn products and by-products. it is toxic.
thank you so much for this series of videos. I discovered I was gluten intolerant during pregnancy after years battling unexplained infertility and autoimmune issues. My doctors still have a problem believing me, but as soon as I stopped eating gluten foods my thyroid problem vanished. I feel amazing and my pregnancy is progressing very well. The problem is all products except for very raw, basic ones contain gluten in a form or another. It drives me crazy and I ended up eating only at home which takes huge amount of time and preparation. Besides traces of gluten and other nasties are in everything, from water to vegetable and fruit. People have not evolved to eat cereals, but it’s cheap, so we are forced to ingest this toxin by the food industry. Absolutely horrible.

having Hashimotos, my TPO-AB can attack gluten (as you and many others f.e. Datis Kharrazian said). but do they also get attached to corn?

I went gluten free last year after years of being Ill, joint paint, etc. and then mid year discovered that Corn was also making me sick. Feeling amazing since eliminating gluten, corn, potatoes, milk, and yeast from my diet. Please keep this videos coming. Very informative.
