Ingredients 1 cup spinach 1 cup quinoa, cooked 1/2 cup strawberries 1/4 cup blueberries 1/4 cup blackberries 1 ounce goat cheese 2 tablespoons walnuts 2 tablespoons balsamic vinegar.This Berry Quinoa Breakfast Bowl is a naturally vegan and gluten-free power bowl that has 17 grams of plant-based protein and all of the nutrients your body needs to.Add 1/2 cup quinoa to bowl, followed by 1/2 cup to 1 cup baby spinach, 1/4 cup ricotta, 4 tomato halves, and a spoonful of mushrooms. Drizzle with balsamic glaze.Whisk together the vinegar, oil and spices.
Add the vegetables and tempeh to a large mixing bowl, then pour dressing over top. Toss to combine. Transfer everything to the baking sheet and roast for 25 30 minutes until the vegetables are tender and the tempeh has started to brown.Pre-heat oven to 375 degrees F. On a large baking sheet, toss together the broccoli, sweet potato, olive oil, salt and pepper.
Roast veggies until fork tender and broccoli is starting to brown, 30-40 minutes. Assemble the bowls: heaping 1/2 cup quinoa, 1/4 of the veggie mixture and 1/3 cup chickpeas.Prepare the balsamic tofu. Meanwhile, bring quinoa, vegetable stock, and water to a boil in a 2 quart saucepan. Cover, lower the heat, and simmer until all the water has been absorbed, about 20 minutes.
Remove from heat and let rest 5-10 minutes.Fill a small pot of almond milk, cinnamon and vanilla, bring to a boil, reduce heat to a simmer, add quinoa, cover and cook on low until liquid evaporates, about 20 to 25 minutes. Fluff with a fork. Loaded Quinoa Breakfast Bowl After I was diagnosed with multiple sclerosis in 2001, I embarked on a journey to improve my diet and live a healthier lifestyle. I began developing recipes that were not only deliciously satisfying but also anti-inflammatory and highly.In a single serve bowl, stir together cooked quinoa, yogurt, and cardamom until smooth. Arrange toppings: walnuts, blackberries, strawberries, blueberries, and chia seeds on top of quinoa.
Bring 1 ½ cups of water and ¼ tsp salt to a boil. Add quinoa and return to a boil. Once water is boiling turn the heat down to a simmer. Simmer on low for 15 minutes.
Instructions Heat pot over medium heat and add 1 tablespoon olive oil, quinoa and half the minced garlic. Cook until quinoa is just lightly toasted, a couple minutes. Add broth or water, and salt, and bring to a boil and simmer, covered for 20 minutes or until cooked through.1 tsp balsamic vinegar; 1 tbsp fresh lime juice (or lemon might work!) Pinch of kosher salt ; 1/2 cup almonds, chopped Directions: 1. Cook quinoa according to package directions. 2. Meanwhile, chop the fruit and place in a large bowl.
3. Mix the dressing ingredients (maple syrup, balsamic, lime juice, salt) in a small jar and adjust to taste if.Place the baby spinach and mixed greens into a large salad bowl. Add the blackberries, strawberries, feta cheese, cooled quinoa, and toasted pecans to the top.
Season with sea salt and freshly cracked pepper then drizzle with the white balsamic basil vinaigrette, to taste. Toss to coat evenly.

I hate salads but wish i liked them:( I used to like them back when I had fish because the combo of bbq salmon or even those fake crab chunks tasted good but idk it’s hard for me as a vegan to hop on board the salad train as they’re usually just bland and gross all on their own…so far the best thing I’ve found is a creamy balsamic dressing to drizzle it in but i’m wondering what would be a good stand in for that baked salmon/crab that’s vegan and healthy…i really think i just suck at making salads though; lately im trying to eat healthier and my salads are basiclly just lettuce, sprouts, carrots, cucumbers, fruit (like orange apple or strawberry) and whatever dressing i have on hand…..

As always I love this meal prep series! I also like the idea of a meal prep class the muffins are yummy, I added fresh pear slices as one of my toppings. The balsamic quinoa bowl is delicious I substituted the tempeh for chopped up potatoes, (sweet potatoes would be good too)trying to stay away from soy. And who doesn’t love Dahl! The cauliflower rice was a nice change. Awesome recipes
Allyssa My muffins turned out great using the regular oats. Also, I loved the roasted vegie/tempeh and very much loved the red lentil dahl!!! Everything was yummy and having the step by step meal prep is saving me so much time but more importantly, when I’m hungry I don’t cheat because I have something healthy and easy to heat up!!! These look so good! I’ve been on a salad kick lately and discovered my deep passion for dijon mustard I hated mustard for the longest time, but apparently my taste buds finally came around to it! Weirdly I’m most drawn to the salad with beets, even though I don’t really like beets. Maybe it’s time to try them yet again?

I roasted the veggies and made the quinoa this morning before I went to the field to help my husband harvest. Ran home at supper and threw everything together and I loved loved it! The fresh lemon juice squeezed on my spinach and kale and roasted chickpeas sent this over the top. Thanks for sharing it Dani, I love all your recipes!

I love this idea. However, even though it may be vegan, the amount of oil and salt you use is not within my heart healthy diet. Also, most store bought hummus is salt laden too. I will experiment with other herbs and spices. Thank you!

Omggg finally someone who makes creative vegan salads <3 I love to start my day with green smoothie ( avocado, arugula, banana, orange, and unsweetened plant milkmy fav is oat or hemp) and salad with chickpeas, avocado, lime juice, coriander, tomatoes, peppers, red onion, and raw broccoli its really goooood!

On YouTube you promote a vegan lifestyle and share videos of your vegan dishes, recipes, inspirations, etc. Yet, on your Facebook page you promote animal based recipes, videos, etc. Are you vegan or not? And if you are vegan, why are you promoting animal cruelty on your Facebook page? Regardless if your viewers on Facebook are mainly omnivores, you’d think that a vegan would inspire others with vegan recipes. Social media is a powerful tool to spread healthy messages, inspirations yet you can’t seem to stay consistent with your platforms. Seems pretty contradicting…

I just watched one of your “what I eat in a day” video’s and you only had 7 dollars and some change to purchase food, if you need help, there are places to go to get free food and there’s help you can get through the Government. I’m not sure how old that video was, but I hope and pray your able to get more to eat now.
My favourite ones are whatever ones which have the lentils,chickpeas or quinoa in them.
Not every vegan is raw,for example, FullyrawKristina is a raw vegan & I’m not sure where she gets her protein from,Yovana Mendoza has went from being fully raw to becoming a vegan who eats the cooked vegan foods.
I haven’t been eating much salad coming out of winter into spring in Australia so yesterday & today I cooked up an easy vegan black bean recipe using nothing but canned black beans,onion,garlic, Vegetta vegetable stock,lemon juice,cumin powder,cayenne pepper & oregano.
The herbs,spices & lemon juice is what gives it its flavour & I had a bowl of it for lunch today & yesterday.
I saved half of what I made today & cooked some rice up for my evening meal,added the refrigerated black bean mix then reheated it in the microwave.
I’m going to have some of that for lunch tomorrow & with rice again,it tastes nice & goes further with rice,it’s all the flavouring that makes it taste nice so it nice that vegan food doesn’t have to be boring.

I’m still learning how to eat kale salad, the kind that you massage. so good. my kale are young, sweet, and tender, that doesn’t need to massage or wilt or yellow at all. fresh from the yard. Like I said, I’m learning how to eat kale, and your salad has a grain, so yummy, and filling.

I grew up on Mediterranean food. All salads….when I moved temporarily to the las vegas strip I would go to the all you can eat buffets. All these couples on vacay would eat junk with a salad on the side….the salad was iceberg with French or thousand island….i couldn’t even see the lettuce. I was like, no wonder so many people don’t like veggies!!!!

Please try to avoid using plastics, you could buy most of your veggies and even raw chickpea, in cloth bags, and just go on,,, as famous accounts on youtube, please do it first and learn and show it to others, it is really helpful and people will be affected…

I LOVE ARUGULA!!! My fav salad that I eat about four times a week and constantly have these ingredients to hand: arugula, cherry tomatoes, red (yellow or orange) bell pepper, and then I’ll sauté mushrooms and onions (in water), topped with pumpkin seeds, and lemon as my dressing and salt to enhance the flavors! I’ll add avocado if I have it. It’s soooo good:)

A meal prep class is what I’ve been looking for!! I’ve been trying to master it for a while and have been unsuccessful. The help that’s out there always seems to follow recipes based on meat. I would love to learn plant based meal prep and also learn how you can substitute things out. For example with this video could I use tofu instead of tempeh? Also, strategies for how to store food, maybe cooking food in advance. I also get sick of eating the same thing so how to cook multiple dishes that can be easily changed would be neat to learn. Also, how you decide what recipes to cook/the planning process. I’ll be happy to learn anything you have to share! Thanks!:)
Love your recipes and videos. I know everyone has their own definition of what eating clean means to them, but I suggest you consider adding ‘reduced waste, and specifically plastics’ to the list. This buddah bowl could be made with a lot less plastic. Bring your own bags to the grocery store. (And yeah, I get that Target is sponsoring you, and their food has all the extra plastic, but just something to think about.)

hey, are you sure about the ingredients for the flax egg? I just tried to make one for the first time and I felt like it wasn’t enough water. Then I did some research and found a resource saying it’s 1TS of flax and 3 TS of water, not the other way around. which is true?

Yum! These meal prep videos are awesome! I am thinking of rebranding my channel to by more of a healthy baking/cooking channel, like yours. I’ve had my baking/cake youtube channel for about 1 1/2 years now, but I’m thinking of making the switch to a healthier approach since that is how I live my life and cook for myself. I want to promote a good message od healthy eating. Thanks for all the inspiration! I love your videos!
mealprep class would be nice! like how to best store the foods, how long you can store certain foods in the fridge or freezer etc. or how to make good food combinations to get all the nutrients and proteins etc.?

I’m in Canada… no target:(. We use to have them, but they weren’t as good as the American side. But that bowl looks so good!!!!
