This is a good hearty beef soup I have not made this type of soup in a long time but I wanted more vegetables and so I added fresh tomatoes zucchini lots of fresh basil and fresh thyme. Did not have beef.There’s no need to spend all day at the stove with this vegetable beef soup recipe. Made with onions, ground beef, frozen vegetables and tomato sauce, it tastes just like a slow-cooked soup, but comes together in just 45 minutes.Step 1 In a large pot over medium heat, cook beef until brown; drain.
Step 2 In a large pot over medium heat, combine cooked beef, water, tomatoes, onion, potatoes.This vegetable beef soup is a great way to use up leftover pot roast or other cooked beef. Try it with celeriac (celery root) for a different flavor.This Vegetable Beef Soup is packed with protein from the beef.
If you want less meat, decrease it to one pound. Add an extra carrot and celery stalk for extra bulk. To make this into vegetable soup, leave out the beef.
Swap in vegetable broth, and skip the fish sauce. You may want to add diced tomatoes for a richer flavor.Step 1 Cook meat in hot oil over medium-high heat in a large Dutch oven 6 to 8 minutes or until browned. Step 2 Stir in frozen mixed vegetables, next 9 ingredients, and 1 1/2 qt. water, stirring to loosen particles from bottom of Dutch oven.
This is done to ensure that the beef will be tender enough to be served in the soup. Boil the beef until it feels just right. Afterward, separate the boiled beef from the vegetables first.
The second step is to sauté all the other ingredients, which includes tomatoes, onions, carrots, potatoes, and celery.In a large stock pot, brown the ground beef over medium heat. Drain any excess fat away.

Great video. It gave me a new idea: using 2 steps to do beef stew: step 1: 30′ to stew; step 2: 5′ to stew potatoes, carrots and onions. Great idea.
I am new to instant pot. I would appreciate receiving your instructions on how to stew beef tongue whose skin has already been peeled. I have an IP DUO Plus. I am not looking for an “ingredient” recipe (what to put in the stew.) I have doing beef tongue stew for years the old fashion way (non-pressure way.) I’m looking for suggestions on what function, how much time, etc. to select on my Instant Pot. Hope I made myself clear. Thanks.

Regional difference for sure.We start with cabbage, carrots, onions and tomatoes then add potatoes and whatever vegtable we have on hand. I freeze any leftover peas, corn, green beans and lima beans and add those. Then we add whatever beef we cooked or had leftover or simply a can of corned beef. Theres a long history of how our Applachian Mountain/coal field recipes came to be here in Southern West Virginia. Whatever is or is not in it, vegetable beef soup is very much a comfort food. And, we eat it with corn bread.
You said 1 tablespoon of vegetable oil, but the writing says 2 tablespoons.
I made this yesterday so yummy I only used 1 onion and a pack of lupton onion soup mix and I put a bit of Lowry’s season salt to the beef before browning

She sells this particular electric pressure cooker on Evine. It sells for $143 and comes in 10 colors. It is out of stock currently. I do not like adding pasta or rice to soup. If it does not all get eaten in a single sitting it absorbs the extra broth from the soup and turns to mush. I cook and store mine separately. When time to serve I add the pasta or rice to my bowl and ladle the hot soup over it. This way every bowl of soup tastes freshly made. I am surprised that you put precooked macaroni in the soup and cooked it another 10 minutes. I would have thought you would have added it uncooked as it only takes 10 minutes to cook anyway. I guess you must like it very soft. Your soup looks delicious. I make my vegetable beef soup after I make a pot roast. I use the leftover roast, vegetables and gravy in my soup then add everything else. I add all the vegetables that you do plus I like some diced cabbage in my soup. Yummy.
what about pepper or any other seasonings? sounds a little bland to me. looks good though.
My grandma didn’t use pasta, but mostly everything else. She made buttermilk oven bread in a cast iron to accompany it.

It makes my day when I see Paula Deen has uploaded a new video in her series Quarantine Cookin’. The soupl looks AMAZING as everything always does. I’m going to tweek my recipe after seeing this. We definitely have controversy over to add noodles or not add noodles. My son and I love the potatoes and noodles and my husbands sweet Mama didn’t add noodles and he just thinks that should settle that. I love seeing you Paula. Please, Please NEVER stop making videos. We love all that you share in the Granger household!!
The only canned vegetable I ever put In my vegetable soup is the tomatoes. I prefer frozen mixed veggies instead of fresh unless there is just too much in the garden.
Another thing. I change is vegetable broth and plant based beef like crumbles. Lots of Italian and some oregano. Garlic powder and of course about 3/4 cup onion.
Last but never least I use some house seasoning and a little seasoned salt.and some celery.
Also toast some hot dog buns with the inside up. A little butter and garlicky salt. I invented this recipe by myself.40 years ago.

I always think of soup as comfort food in the fall and winter. Momma used to put okra and macaroni in her soup as well as anything that was extra in the icebox. I love that big pot of yours momma had one just like it but I have no idea where it ever went. I love your videos they always make me feel like I’m there have even caught myself asking questions like I expected an answer lol. Tell the young man that sent you the card to keep cooking he’ll be glad he did.

Sounds very good. I make a beef barley soup in which I use beef shank. It comes with the bone in so I get the marrow and the bone. I brown the beef in the stockpot so you get the flavor from the browning and the fond on the bottom of the pot. Then I cube the meat very small. Then add tomato paste and brown that. Then I put the water in with the meat and bring to a simmer, cooking till the meat is tender. Season with salt and black pepper (for me I also add a bit of Crystal Louisiana hot sauce to taste ) Then add the barley, then bring to a boil, then add bay leaves and a tied up bunch of parsley and thyme sprigs, simmer after adding diced carrot and celery and mushrooms till veg is tender. Gawd, it’s GUUUUUUD!!!! Enjoy!!!

I did mostly the same except I use red wine and beef stock. Also a good shot of Worchester sauce. I put some flour, onion powder, garlic salt on the beef before Browning also I did use celery. And some garlic cloves. I’m just waiting on it to cook hope it turns out good

I made sure ribs pretty done b4 addn ingredients then take out tward the end, cut fat off.. but I left ribs in soup…

My Dad used beef short ribs for vegetable soup. He never used any pasta, but I make it somtimes with noodles. Short ribs give a wonderful flavor. Homemade, crusty bread, or bisquits or cornbread. Now I’m hungry. Be blessed. When it’s thick like that it’s stew, add more broth and it’s soup..veggie soup is so good about 3 days later! Lol! Just when it’s about gone.
Lord have mercy!!! My mouth was watering watching that pot of beef soup come together, but then you started describing how the elbow macaroni in it squished as you bit into it and I was done??!! Ha! Ha! Lol Girl??!! Now I want to go out and get me some beef ribs to make it!!! Lol. Right now!! Tonight!!! But you the grocery store shelves are empty by this time of the day during this crazy time. With this quarantine everyone has gone crazy???!! Lord have mercy?! The first time that I see those short ribs, after ALL THIS DRAMA, I ASSURE YOU I WILL BE MAKING THE BEST POT OF VEGETABLE BEEF SOUP TOO, Paula!!! Lol. Love you girl!!! Love her recipes this country girl can cook and I do agree with her I do take the time to make my beef stock which short ribs I know it’s a little more expensive so being on disability I save my money I don’t make you very often but I do like making it I just buy cheap big beef bones and then I will buy one pack of short ribs because it does make a difference I’ve never had stock so good anytime I make beef stew or I make beef vegetable soup or even if I’m making soup. Or anything with that and I shall even use my stock to cook my rice in and I can definitely tell a difference in the flavor and it even gets a little kind of jelly that’s really good beef stock but I do agree with her it does make a difference just want to say hello to everybody from Florida

I love my instant pot I cook with that more than anything I cook in my whole house best thing I ever bought love my pressure cooker and yes I have use the old ones but these new ones they’re really safe there’s no way that you can hurt yourself with it because it will not allow you to open it till that pressure is completely gone and I make all my stock in it,❤️

I’m so happy to hear you promote pressure cookers! I still use my stovetop cooker, although I also have electric. I’ve been a pressure cooker cook for 45 years, since my college days in Atlanta. Not only did my pressure cooker save time, it saved money, too.

The only canned ingredient I put in my Beef Vegetable soup is the tomatoes. Canned veggies have too much salt in them, I use frozen veggies except for potatoes, celery and onions. I definitely don’t put okra in it, too slimy for me!
I got rid of all the aluminum cookware in my house. I wont use aluminum foil either. Aluminum is soooo bad for you.

You are correct, the Maillard reaction is the process of browning meat to create a caramelization on meat called ‘fond’ (the word Fond as in fond memories of my childhood). Fond can add a tremendous amount of flavor to your meat dishes. I love to use my Power tools like a power pressure cooker—lol—and love dump and go recipes, but if you are trying to deliberately create fond to bump up the meat flavor in your stew or soup…just sauté the meat in the pot keeping a close eye on it as the difference between fond and char is about 90 seconds.

If you don’t have a pressure cooker but a slow cooker can you use that OR on top of the stove? If so slow cooker how long and top of stove how long would you cook?

I’m the same way about starting out to make a small pot but turns into a large amount. I only use crushed tomatoes because my husband hates chunky tomatoes in soup.

Great recipe & tips. Ya know what’s funny though.. I was just talking to a friend about in-laws. It’s funny how people quickly forget how their in-laws have treated them, & end up treating others the same way.

Let the people know, if they use can green beans,rinse them off real well, the stuff they can then in taste awful! It will make your soup better. The other veggies would be OK in thier juices., Drain if you want or just don’t. Put the green beans taste like phymaldrahide or something!

We thought this was delicious with tomato sauce. We added a little more spice after served it. A rustic bread loaf was topping on cake. This is a keeper. Vegetables not mushy either.
I use the whole greens in a can from walmart they are so good

I have had problems finding rice here in SW Va too. And, the name brand cream soups have gone up, up, up in price. I just added beef cubes to my grocery pickup order because you made me want veg soup.
Thx for sharing, so easy! I added celery and used fingerling potato (whole). When done, I let it “stew” on the slow cooker setting for an hour and it thickened perfectly.
