VEGAN Gluten Free Rice Krispies EASTER Eggs

In this episode of Abbey’s Kitchen, Abbey is reflecting on your childhood Easter experiences since Easter is right around the corner. Abbey is really excited about Easter this year, partially because she will be giving birth that week! While you guys are watching this, Abbey may be in the hospital pushing her own little egg out. That might not be the best visual for you guys, but what is an awesome visual is chocolate. Today, Abbey is making some vegan, gluten free chocolate Easter eggs. They’re really colourful, super fun to put together with your kids, and these remind Abbey of her own childhood. Abbey hopes she’ll take after her mom and plan some epic egg hunts for her little ones one day..
So let’s do this!
To a sauce pan, add some almond butter, maple syrup and give it a good stir over medium heat until everything comes together..
To a bowl, combine some brown rice cereal, shredded coconut, ground flaxseed and the maple almond mixture. Give everything a nice stir until it all packs together and nicely combined. Then pack into egg like shapes and place onto a baking sheet lined with parchment paper. Set it aside and now time to make the chocolate..
Over a double boiler, melt some cocoa butter and some coconut oil. Give it a stir until it melts into a nice clear consistency. Pour that into a bigger bowl, add vanilla extract and lots of powdered sugar. Give it a good whisk until it all comes together. Then transfer it to a few different bowls and colour each of them differently using natural food colouring..
Now it’s time to decorate. Drop each of the Easter eggs into one of the bowls with the coloured white chocolate, making sure to coat it completely all the way around. Transfer to baking sheet with parchment paper. Next transfer any remaining white chocolate into a piping bag, and add all your favourite shapes and décor..
Finally, get out your favourite candies and decorate. Let your eggs cool in the refrigerator until set, before transferring them to a cute little Easter basket for serving. Enjoy..

cookie dough Easter eggs (vegan & gluten-free) Something Vegan

RECIPE.
1/2 cup organic brown sugar.
1/2 cup oil (canola, coconut, or other neutral oil).
1 tsp. vanilla extract.
3/4 cup rice flour (or 3/4 cup all-purpose flour if not gluten-free).
1/4 tsp. salt.
1/4 cup vegan chocolate chips.
2 Tbsp. sprinkles (plus a few more for decorating).
1 cup vegan chocolate chips.
To a bowl, add brown sugar, oil, and vanilla extract. Stir well. Add rice flour, and salt. Stir until dough forms. Add 1/4 cup vegan chocolate chips, and sprinkles. Stir in. Scoop Tablespoons of dough, shape into eggs, and place on a pan lined with parchment paper. Put in the freezer for about ten to fifteen minutes. Melt 1 cup of vegan chocolate chips (I did this in the microwave for thirty seconds at a time, stirring between each interval). Dip the frozen cookie dough eggs in the chocolate, turn to cover, and then place back on the pan. Sprinkle with a few more sprinkles before the chocolate sets completely. Makes one dozen..

What is interesting, I found your site just this morning and was browsing through all your videos, as I really love all your great instructional work and beautiful cakes. All the products looks so yummy that I had subscribed two videos ago and then found this great gluten free one. So many Baker’s don’t think about doing a gluten free recipe. God bless you!
