Canyon Bakehouse makes AMAZING bread. I could totally fake people out with it. I love Schar’s bead, too, but Canyon Bakehouse is phenomenal.
I went without all grains, corn and other gluten-mimickers for 3 years. Completely. Healed my body of all conditions, except for Hashimoto antibodies. I feel great. About 4 months ago, I added corn back in in the form of on the stove made organic popcorn with my beloved Kerry Gold butter. I still feel great. I also added in a “gluten-free” bagel once a week, as I felt the loss of bagels profoundly. Could it be that my body is so healed from all the abstinence that it no longer recognizes these proteins as gluten, or am I fooling myself and slowly chipping away at the intestinal barrier? I eat the popcorn about 4x a week, as a snack after fasting for the day.

Thank you for the info. Dr. Osborne, does mold in the rice cause inflammation in the kidney? Or does mold in the rice and other grains cause an autoimmune disease and damage the kidneys? Or is it the gluten itself that causes autoimmune disease that attack and damaged the kidneys?

I think corn is fine, once and while is small amounts, whole corn has vitamin’s and minerals, given it’s (organic). I like having organic blue corn chips, Garden of Eaten Red Hots, with some guacamole. And organic brown rice, in small amounts not everyday. I have no issues and have plenty of energy. I stay away from the popular brand gluten free, William Davis MD said they are just as bad in raising blood sugar. I eat close to keto, I allow a banana in my diet, whole Navel Oranges, apples. Corn is naturally gluten free.

I usually stick to Udi’s bread because I can easily find it in my local grocery store.
One way I keep my gluten free diet healthy is by baking my own desserts using grain free/low carb flours (almond, coconut, oat). I’ve even found recipes that only require bananas and peanut butter as the base ingredients (flourless).
If you have a Trader Joes near by, they sell brown rice pasta, almond flour, and coconut flour for much cheaper than most health food stores (pasta $2, almond $5, coconut $3).
How did I not know about Vitacost?! Thanks for telling me about it. I have been diagnosed with celiac disease since 2012 and it’s nice to see so many affordable gluten-free products. And as far as gluten free food recommendations Evol bowl are amazing! Not all of their products are gluten-free though so make sure you read them. I also really love Amy’s. My favorite one is the broccoli cheddar cheese rice pasta bake.

I was very ill a few years ago so the Dr. ran a blood test. Results were I am allergic to corn, strawberries, and peanuts. Now I’m Celiac so no wheat, no corn, and Dr. said no rice.

I’m so excited to get to hit a whole foods in the uk next month and I really do hope that they have a few of those snacks. Living in Germany being gluten and dairy free is a huge bummer as there’s really not a lot of choice at all. We do have schär as you pointed out they are a German company but they don’t sell the same stuff here. The loafs are tiny around 10 slices and the slices are about half as big as the one you showed so there’s no point in buying it as you will finish it in two meals max. Just thought I would let you know in case life takes you here at some point so you are prepared.
