I’m so happy to find your channel. I was vegan for some time over a year ago. I felt worlds better (I suffer from multiple illnesses). Recently, I knew I had to go back to that because my health has declined considerably. I have however been introduced and given information on a gluten free diet and am so confused now as there is quite a few differences. Some things I can now eat, while others are totally off limits. I’m sure I’ll adjust. I didn’t think I could go vegan either, but following online recipes and adding to my spice stockpile made it easy and fun. I just know I have to do something now for my health.
It would be nice to have a bread recipe along with the base flour ingreds.:-) Any real bread recipes on the site you have to subscribe to at a high cost for a magazine. Bummer.

Soya is a bean and is ground to produce a flour. It would not be in any of these other flours or starches. I am Soya sensitive and just stay away from all Soya products including Tofu. The only silly question is the one not asked. 😉
I hate when they don’t give you a complete recipe (it makes me not want to buy their book or magazine); it looks to me like they added about 1 TBL. of gum.

i discovered something amazing, i tried pure gluten foods like some vegan meats, and felt really good, then when eating wheat flour, i have searing joint pain, it may actually be wheat to blame rather than gluten, but going raw vegan has done absolute wonders and you really dont miss eating 3 cooked meals a day.

I can’t tolerate wheat, gluten, dairy & tomato, so, when making free-from lasagne, I get creative. Radish, red pepper & a wedge of watermelon just blitz together & once it’s cooking with the mince you wouldn’t know it wasn’t tinned chopped tomatoes! Coconut milk is great for the sauce (g-free flour, dairy-free margarine-stuff & coconut milk) If I don’t have any g-free lasagne sheets, I’ll use slices of butternut squash & sliced (uncooked) sweet potato… Mmmmm….. Freezes well too!
One of my fondest memories was making my aunt( she has celiac) a noodle free lasagna made with thin sliced zucchini. It was a hit.
Just had to go off gluten due to severe rashes and hyper pigmentation all over my body….can’t believe I hv become intolerant to a food I hv eaten alll my life. Substitutes are ok but nothing can replace the joy of wheat….

I’m gluten intolerant & I didn’t care for your missed the mark on a lot of ways to cook or bake gluten free…& then gluten contained food was mentioned & it wasn’t pleasant to see it in the video MsMojo. It reminds me of what I’m missing out on & struggling with daily not eating gluten. I feel more discouraged watching it.

I AM A GLUTEN FREE GUT! For breakfast I will have a Cinnamon Apple Rice Cake with Almond Butter or any other spread you like (fig spread) is yummy too. And also green tea with spearmint and a couple of figs. LunchI take the store brought bread and fry it on the stove in your (own) pan don’t share your pan! In the pan put olive oil, smige of garlic salt and basil (either fresh or dried) and i put stuff on like guacamole spread,tuna,pizza style,eggs ETC. Its endless. With a fruit bowl, fresh pea snaps.
For dinner I make a meatloaf, use your own crackers or bread for the solitude for the mixture, tossed salad, and Rice with vegetables, toast or fry your bread againit will either give you a roll for meatloaf or with garlic salt,it will give you a garlic bread with you meal. And buy a gluten-free cake mix or brownies for DESSERT!!!
I make up my rice for the week, I boil it in either chicken or vegetable broth ( which you can make yourself) I also put in carrots, onions, celery when boiling the rice. other options are beans, black, butter, broccoli, cauliflower, snow peas and ETC. I always have Green tea, and then you have your sweets to
eat! WHENEVER. Also fir the in between meals, have Crackers, pepperoni, cheese or a fruit snake make with Almond Milk. Make your own snack mix, with rice chex, raisins, nuts, m&m’s, and ETC. There is ENDLESS OPTIONS! I have Celic for 15 Years. It’s all about sitting down THINKTHINK about what you can use, to change the recipe. It’s easy! Go on line, read the books and again think of things YOU like that will change it to Gluten Free. I hope this helps someone, it used to drive me CRAZY TOO.

My go to Gluten Free meal is stir fry with white rice. I make them homemade or if I don’t have the time or the money I usually buy the frozen veggies (which are GF) and mix whatever I have. Since I am also allergic to red meat, I have to find other options to add so I usually do veggie stir fry or a chicken stir fry. However, I am still having a tough time making a homemade gluten free lasagna. But Stir Fry is my go to GF meal.

Is it 0.75 to 1% of weight of all ingredients (as it says on the package), or “*dry* ingredients (as in this video)? Weight of dry ingredients makes more sense to me..?

My GF starter according to your instructions turned out very well, except one mistake I did; I thought you said once you mix the two ingredients, you leave it on the counter for 7 days, so I didn’t feed it for 7 days, and of course, my hungry starer stayed flat for 7 days lol;) I thought I’d have to trow it out but after I started feeding it, now it has doubled in 3 days!
Now I’m ready to bake. For baking, can I use my Xtrema ceramic pot, instead of a duch oven? My ceramic pot is very heavy, has its lid, but almost twice bigger than your duch ovens. Would the bread lose its shape if the pot is big?

There are so many brands of ice cream that carry gluten free varieties without even trying. Literally went to get ice cream at the store LAST NIGHT, and was overwhelmed with my options! Talenti has like a BUNCH of flavors, both ice cream and sorbet, that label themselves as gluten free on any flavors that are (which are almost ALL of them, unless they contain like a ‘crunch’ aspect to them, which is usually an indicator to a celiac that we can’t eat it anyway) really fucking good! tried almond butter and honey last night, labelled completely gf and was a happy clam!

When you transfer the bread to the baking stone, do you dump the bread from the casserole pan right onto the counter? or do you try to lift it out and place it on the stone? Do you leave the parchment paper on the bottom when you do the stone part?

I know this is an obvious question, but let’s say you always wanted to make two loaves at a time. Basically then you would keep a triple batch so that there is always a cup of starter to start with….that’s a confusing question sorry, but hopefully you get what I mean! Thx

Good morning! I baked my first sorghum sourdough bread last night. Cut into it today and the taste and texture is great! However, my loaf didn’t turn out as large as yours. I followed your directions but it didn’t rise as much as yours. I rose mine for 7 hrs. Should I have left it longer. Also, the crust is extremely hard maybe I should cut back on the baking time? And, finally, does this bread dry out like the other gluten free breads that use more starches?
