One of the things that make Butternut Squash so GREAT is the shelf life once you harvest them.
I picked 18 B.N. SQUASH from 1 plant Oct.2018 and I have 6 left in my pantry March 3,2019.
These will probably last 2-3 more months. Thats a pretty damn good shelf life for a vegetable.

Peelers — Y peelers or regular peelers — can be sharpened. Use a stone or ceramic sharpener. Run the peeler back and forth on the sharpener as though you were trying to peel it. Voila! A peeler that’s sharp as new!
I followed the recipe but the onion flavor was too strong to be able to drink it. I will try with half of onion next time, but I am bummed that I wasted time and food on this try.

I do the same thing; most often it gets turned into soup and with a strong blender, skin gets incorporated. This is 2019 now, and both winter and summer squash as well as corn soy apples celery are on the most sprayed list. Am I going OCD over this? Because it’s such a shame to avoid a brilliant low GI veg like this and a million ways to prepare it.

I just made this soup and it was delish! 5 stars. Some tips: add a tsp or 2 of apple cider vinegar first, then taste. Add more if needed but you really don’t need to.
Also, if you have a powerful blender like a Vitamix or Blendtec, you do not need to stieve the soup after blending it. It will be smooth and creamy…

Someone always told me if you’re making squash soup to also blend the skins of the butternut squash as they have a lot of nutrients. If they are roasted or boiled first you can’t taste them:)
I made this tonight and it was delicious. I didn’t have nutmeg, but added cinnamon instead. I didn’t need the butter and used 3 cups of broth. I think next time I’ll only use maybe 2.5 cups of broth since I like my soups thick. Thanks for the recipe.

I bake the butternut squash whole. It is much easier and safer to cut after it has baked. I will put the halves under the broiler for a few minutes to get the “roasted” goodness.

My family does something similar: sometimes with pie pumpkins instead of butternut squash, and instead of cayenne we use Cinnamon (we’re German, we put Cinnamon in everything, even pot roast…)
You can also try to replace butter with coconut milk. It also makes it creamy and a bit healthier

I did this recipe and instead of water I added coconut milk, and that with the advised maple syrup made the most tasty soup I have ever had! Amazing!
See the way I would’ve made it is with:
2 Shallots cut into chunks
3 Cloves of Garlic, sliced
1 Tablespoon of Fennel Seeds
2 Tablespoons of Ground Cinnamon
About 1 Tablespoon of Grated Ginger Root
Butternut Squash, the star player(you can roast it but it’s not necessary)
2 Cups Worth of Chopped Carrots
And 2 Stalks of Celery, Diced
I would add oil or butter(I use vegan butter cuz I’m vegan) to the pot, then add your Fennel Seeds, Chunked Shallots, Ground Cinnamon, and Grated Ginger to it and let the flavors meld a bit.
Then I’d add the carrots, celery, and Squash and cook the whole thing down for about 15-20 minutes, until everything got nice and tender.
Then I’d add about 4-5 cups of water and boil everything for 20-30 minutes, and turn the heat off.
Next I’d add it to a blender, and add more Cinnamon and Grated Ginger Root, and some Salt to taste, blend and enjoy. And if you want it really smooth you can add more water or stock/broth of your choice(however, you may need to add more spices because it’ll dilute the flavor). I love squash and only knew how to make it in the oven. I love to eat it while its still warm or add it to couscous salads. Really nice. I can’t wait to try the fritters and the hummus . Very entertaing too

Roasted squash hummus is one of my favourite recipes. It’s what made me really start to like hummus. Also, anyone who feels their cutting board isn’t stable enough can put a damp cloth under it. This helps a lot. TFS
In my opinion, the vinegar changed the taste too much. I was sooo excited as I was tasting along the way….then it was TOO earthy. So if anyone thinks that is something you won’t like, keep that in mind

I always leave the peel on the squash. The Vitamix can blend it out nice and smooth, and you get that extra fiber in there! I’ve never thought of roasting the onion, though. Yum!
This looks amazing, I love roasted squash and those flavours together With that type of kale you can just hold the stalk and use your other hand to pull off all the leaves in one go, like with fresh thyme or rosemary. Love you x

Can you use a food processor or does it have to be a blender?
The sage is a nice touch but I would cut it up in little slivers and add it to the squash batter and then cook or cook the sliced sage in butter first and then add it to the batter…this way, the fritters will have more of the sage flavor in them….you’re welcome.
I use a serrated/bread knife to slice the butternut. It grabs onto the skin much easier and does not slip. It is also not necessary to sharpen it as often as a normal knife. Thanks for wonderful videos!

Greetings from England. Another well-presented video with some great tips. I use butternut squash with red onions, red peppers (capsicums) garlic, chilli pepper and sweet potato roasted in the oven. I add the soft roasted vegetables to stock and blend them to make a soup with freshly ground cumin which gives a lovely earthy taste that goes so well with these vegetables. Sometimes I add chopped fresh coriander at the end for a touch of India. Butternut squash is healthy and delicious!
Made this, didn’t like the tangy flavour. Next time I’m going to skip the apple cider vinegar.

I just made it and it is tasty. It is sweeter then I prefer but it is delicious. I had to use my emerson blender because my blender from the 90s could not hold all of the ingredients. It worked beautifully.

Coming from Tasmania, Australia butternut pumpkin is just about all we eat. The larger ones have no flavour in comparison and are sometimes more expensive. I didn’t know there was so much mystery about how to cut them up?! Also you can eat the skin if you bake it or boil it, it goes soft and tastes good. You can puree it into a soup too and never know it’s there.
If you make your dressing in a jar, you can screw the lid back on and shake it like crazy! Helps emulsify the different liquids for a more homogenous vinnaigrette

I don’t find that coconut milk really has much flavor (unlike the water/oil/etc) so would another plant milk work as well? I look for lower fat as I have to avoid higher fat due to cholesterol issues

Last weekend I made a dish that called for roasted butternut quash as part of a holiday stuffing. I cut the butternut squash like you did, and then each side in half, and then each of those sides in half, and then into 1″ cubes. My wrists took a beating! I hate cutting gourds, it’s so difficult, and sometimes a little scary too using the knife blade. I was hoping for some tips to avoid the strain on the wrists that comes from having to cut through the squash over and over. That soup looks great, i will try with the extra squash left over!
My mum used to make us this great squash breakfast, although she used Sweet Mama squash from our garden. She’d cook the squash in a bit of water in a pot then thicken it with a bit of flour and a dash of sugar till it was very thick and smooth. Ladled it into a bowl and pour milk around the edges, and we’d eat it like oatmeal. It was fabulous, real peasant Italian food. I was called “zoof”.

Fun Fact: Use a ice cream scooper to scoop out the seeds and guts:) It works really well with pumpkins too! But I always use the ice cream scoop for all of my melons and squash:)

I did make the soup and it was delicious. The only thing I did differently was I use vegan butter, roasted my garlic and used my submersion blender. It was fantastic. Also I didn’t have ginger powder so I used a fresh piece of ginger.

great video Lisa. You could apply the same strategy to spaghetti squash also except you would use a fork for the halves and no cubes practically speaking. I also like garlic salt to season mine.
