Garbage I wouldn’t feed to my animals! 1) tapioca is VERY toxic, it is cassava 2) rice flour is at the top of the glycemic index list 3) wheat is the best food for humans if you get what the ancient farmers used to grow, ancient, non irradiated, bleach-free, tall wheat with no glyphosate…. that flour is released slowly in the blood stream and provides energy for the whole day…… gluten intolerance is the biggest lie…… I have yet to find one that reacts to real wheat!…. I feel sorry for people that chooses to eat garbage out of ignorance and hurts their health because of it!…. just remember, real food provides no money for pharma, doctors, food industry. I had forgotten why I ordered Sweet rice flour until I just reviewed this video. I also found in Walmart Hispanic section, a ric e flour called Tres Estrella in a 1 lb box @ $1.12. Haven’t tried it yet, however, at the price, it’s a bargain.
ugh that tapioca I can’t handle that texture. It’s nothing like regular flour. it makes things so gummy and yuck. I am trying so hard to find someone that has found the closest thing to actual texture of flour

I made this mix last weekend. It was a kind of daunting task to start out with, due to the quantitie of flours involved. For starters, I did not have a bowl big enough to accommodate 96 oz of anything. I had to sanitize a mop bucket, then dump all the ingredients in. Then came the mixing. Next came the mixing. There was no whisk in my arsenal that could handle the job. I had to plunge my arm, nearly up to the elbow, into the bucket and make my hand into a giant whisk. I did this for around 10 minutes. BTW, make sure you have something large enough to store this stuff in first…I had to cling-film the bucket and secure it with industrial rubber bands.
DO NOT LET MY DESCRIPTION PUT YOU OFF, THOUGH. The bread I made out of this stuff was wonderful! It was very nearly like eating a slice of wheat bread again. Way better than any store-bought brand. (Yah, I’m talkin’ to you Udi.) No gluten-free bread will ever replace wheat bread, but for God’s sake I could bend one of these slices without it crumbling into bits on the counter. And it didn’t taste like cardboard. Hallelujah!
I only wish someone had warned me of the realities of the basic volumes of this mix before I started. And crunching the numbers wouldn’t have helped unless you can eye-ball your standard mixing bowl and say, “Yep, that bowl will fit [blank] ounces.” Sadly, it turns out that I could not. Now I have a mop bucket and a flour bucket. shrugs

Could you please post the ratio of Xanthan gum and Tapiaco starch to flour required to acheive soft risen bread. I am diabetic and cant have rice flour as rice is high GI so I will need to substitute for low GI grains.
Way too much rice flour for me. Needs some corn flour in that mix. Then it has a much better taste.

Hi I have been searching for a good mixture of an All purpose G/F Flour mix, however once again every single one I come across uses Tapioca Flour or like here Sweet Rice flour which I cannot get either of these, and also because of where I live I cannot get it sent via Amazon as we have restrictions on Food items coming in by the post from Amazon, so these are the flours I do have and so I was wondering if anyone out there can help me with maybe rather than failing miserably and having to throw away flour once mixed that I may get someone here to help me with a yes or no for mixing certain flours.I have Sorghum Flour and Millet flour, White Rice Flour, I have ( homemade Garbanzo Flour or Chickpea Flour/Almond Flour and Coconut Flour) I have Cornstarch I also have Xanthan Gum. Hi; I’m a big baker. I just recently found out a year ago, after years of suffering, that I am severely gluten intolerant. It’s progressed so bad that now I can’t even touch flour or even bread. I’ve been trying to find a great flour mixture that will be perfect for baking, and won’t change the way my most popular recipes are made to much. I’m pretty sure anything is going to make them taste a little different. But what I was wondering was if there was a way to break this down to use one time before making a large mixture, and how closely it gets to the same texture and taste of foods with normal all purpose flour? With a lot of gluten free flours I find that it taste grainy and once cooked and eaten, I feel like it dissolves and leaves a grainy texture still. Does this work ok for cakes? Trying to come up with some old fashioned cakes that are gluten free.

Hi I have a good suggestion for getting stickiness… just add the hot water to the flour and kneed it…or use 2tbl sp of jowar flour and mix with water and heat it with continuous stirring so that it get like partridge and add it to flour and add some normal water to make it dough… it’s really good without addition of any other ingredients to it… it’s our staple food too..

pretty close to the mix Jeanne Savage uses in her cookbooks, only she goes by cups not bagsfull.
Be aware that some xantangum can be made from wheat so dubblecheck or safer exchange for guar. Also if diabetic check tapioka ( and cassava) as for some they might be trouble depending on amount.

What if I don’t want to use tapioca or corn or any starch? Can I use egg whites for binding? Dr William Davis of wheat belly recommends to avoid tapioca, corn starch and rice flour completely as they are worst for human body as wheat itself.

Xanthan gum has many side effects. Its recommended if you don’t have allergic to this.
I think corn starch is usually refined from GMO corn. I would substitute perhaps tapioca flour.
Just curious if I’ve missed anything…You’ll have added 1 cup sorghum, 1 cup amaranth, 3/4 cup cornstarch, yet you say “we have used 3 3/4 cup”…what have I missed??? Very keen to try this blend, but cant unless you clarify what I have missed, if anything.
You can also Use flax or chia egg as a substitute for the “binding” effect of Gluten..

I normally used self rising flour for all my recipes. When switching to GF, and using your recipe for the GF flour mixture… would I have to use baking powder and salt like I would if I used all purpose?

Auntie is awesome! Great video. Just an FYI: Xanthan gum does NOT expire. I have had the same bag stored in a bottle for over 5 years and it is just like new ( never put utensils in it, just pour out what I need). And yes, you do NOT need very much at all. I think her ratio is perfect for the amount of flour.

I used your flour mix to make a pizza crust. I’m vegan and I omit oil. I used 2.5 cups of flour, 1/2 cup of gluten free gluten (bought on amazon), 1 packet of yeast in 1 cup warm water, 1 T raw sugar, 1 t salt. The crust turned out perfect and soft. Thanks for the flour recipe!

Hi again Ladies, I forgot to say I have Millet, although I have heard maybe this is not one of the best to have/use even when going Gluten Free, but I was hoping that a mixture of both would help, I have been advised to not eat any Nightshade also for my health so basically it rules out Potato as this is a “Nightshade”.
I am wondering maybe if a little bit mixed into the flours would not harm, also what about the Xanthan Gum, would you still add that to the Chapatti mix, so Sorghum Millet and (Xanthan Gum) I appreciate it is all trial and error but I cannot afford to have lots of errors, as I am still off work (16 months) but since going G/F and taking Organic Turmeric along with Collagen, and Glucosamine/Chondroitin/Msm and 5000 mgs of Vit C I have improved in only 11 weeks I am a new (not quite) woman.
I am desperate to get back to cooking and baking and curry I can eat for breakfast, lunch and dinner, who said you have to have bread or cereal for breakfast, so I am going against all so called traditional (western culture of breads and cereals for breakfast).

Hi Ladies, I have since the 1st of December had to for health reasons go gluten free, but I am struggling to come across Amaranth flour, I have Sorghum flour I also have Almond flour (home-made) I have Coconut Flour (home-made) also I have Garbanzo flour (home-made) please is there anyway of you knowing which of these flours I can mix to make my basic gluten flour mix, I also have white rice flour so am wondering if this will be ok to use instead of the Amaranth flour, also I do not have Potato Starch this I have not found here but I do have Xantham Gum and Corn Starch. I am interested as I adore cooking and baking and Indian food is one of my favorite as I adore all the flavors and spices, which are healthy especially the Curcuma or Turmeric and Ginger etc.Thank you very much.

thank God for you. when my 17 year old daughter found out she had a gluten intolerance i was devistated. bread and baked goods are my life my first science experiment was about yeast and bread . i have lived with the idea that gladiator s ate gluten to be big strong and healthy and have made sure i ate this way too. dont get me wrong i understand this is not for every one but its worked for me im 36 and im still the same waight i was when i was 16 115lb. but for my daughter i would love to make her breads still and pies and pastry its sad to watch her turn from my kitchen im not used to that at all my kids are always under my wings will im cooking. so thank you from the bottom of my heart for doing the work on finding the perfect flour.
Thank God for sending two most wonderful people to help us Coeliac patients from having the worst nightmares at times with trying so hard to make bread pizzas cakes and bagels.
