VEGAN FALAFEL RECIPE (falafel balls & burgers) + TZATZIKI & TAHINI DRESSING | EASY & OIL FREE

Ingredients 2 medium sweet potatoes 1.5 teaspoons ground cumin 1 teaspoon ground coriander 1 teaspoon za’atar 1/4 cup chopped fresh parsley or cilantro 2 tablespoons fresh lemon juice (from half a lemon) 1 cup chickpea flour 1/4 teaspoon salt 2 tablespoons canola oil, for pan-frying 1 cup plain.Next, add chickpeas, Za’atar spice, parsley leaves, salt, and lemon juice. Process to a coarse sandy mixture.
Add the mashed potato and mix well. Apply some oil on your palms and make small balls of the falafel mixture. Flatten the balls slightly and coat with sesame seeds.Saute for about five minutes then add the oregano, turmeric, pepper, za’atar and heat for one minute. Remove from the hob.
5. Add the chickpeas, mashed sweet potato and everything in the frying pan to a food processor, along with the parsley, salt, lemon juice, gram flour and baking soda.Preheat oven to 350° and line baking sheet with parchment paper. Place all of the ingredients into a food processor, and pulse until the ingredients are combined. Be careful not to over blend or puree. The ingredients should hold together, but maintain their texture.

Roast the sweet potatoes at 180C for approximately 40 minutes until soft. Cool in their skin, then peel. 2. Crispy Baked Falafel with a creamy, herby avocado sauce and za’atar roasted vegetables, sun-dried tomatoes and warm naan. This dish has got all the elements and textures to create a wonderfully YUM and healthy meal; Crispy falafel, creamy avocado sauce, carby naan, sweet sun dried tomatoes and a healthy dose of spiced root vegetables.
Preheat the oven to 450 degrees F. Place the sweet potatoes on a rimmed baking sheet and bake until very soft, 50-60 minutes. For the Tzatziki Sauce: In a medium mixing bowl, measure the yogurt, cucumber, lemon zest, dill, garlic and salt.Bake for 10 minutes on one side. Flip the balls over and bake another 10 minutes.
When time is up, let the balls sit for 5 minutes to cool before serving them. Serve in pita bread, on corn tortillas (pictured), or wrap in lettuce leaves, with a tahini-garlic sauce on the side.Heat oven to 200C/180C fan/gas 6. Microwave sweet potato whole for 8-10 mins until tender.
Leave to cool a little, then peel. Put the potato, cumin, garlic, ground and fresh.To Make the Falafel: Preheat your oven to 350°F and line a baking sheet with parchment paper. In your food processor, place the sweet potato chunks and process until broken down.

Thank you! Another fantastic video. I’m obsessed with the Levantine Cuisines. I eat so much Za’atar, Sumac & Pomegranate Molasses. I sprinkle over everything, from my salads, in dressings, over hummus or moutabel, over my falafel(with red onion, tomato, tabbouleh, hummus in pita), tomato on toast too, lol. I suffer from Fibromyalgia & it makes such a difference! I also make a couple different Za’atar blends. I was given this Jordanian version which adds cumin, garlic powder, turmeric & a couple other spices which ups the anti-inflammation even further. One of my favourite things is Mujaddara (lentils & rice as you know, I love your mum in that video) I make with my Jordanian Za’atar, served with tomato, cucumber, red onion with lemon juice, sprinkled with sumac & of course fresh yoghurt! As you can see I was super excited to see your new video.
Thank you for this. After hearing you mention za’atar so frequently, this was the video to push me to try some (thanks Tara and Eloise for suggesting). I tried it three of the ways you mentioned: zeit u za’atar; mixed with olive oil, lemon juice, salt and pepper as a salad dressing; and the scrambled eggs and goat cheese. Totally digging it subtle, but with this interesting tang that must be from the sumac.
It’s like a middle eastern furikake; I am definitely going to try making za’atar onigiri someday:-)

I was SO excited to try this recipe because I love Maddie and I watch all of her videos. I didn’t make the sauce, the dressing and the wrap, I only made the falafel and I don’t know, perhaps that was the problem. I made sure I used the exact same ingredients with the proper measurements but still… it just wasn’t good at all. I know it’s Indian food but it was SO SPICY and it makes sense because it has pepper, turmeric, coriander, red pepper flakes and cumin in it but literally my family and I weren’t able to eat them, maybe we’re not used to spicy meals:( Either way thanks for sharing!

I went vegan December 2018 and today was my first time trying all these new spices and flavors. It was absolutely delicious! I made it into a wrap using lavash, spinach, iceberg lettuce mix, mushrooms, and fresh coriander sprigs and I loved it! So glad I have leftovers for the rest of the week

i just watched a video about za’atar spice blend she put ground sumac, gried oregano, dried thyme, dried parsley (i would use fresh parsley) ground cumin, sweet paprika, onion powder, garlic powder, salt, black pepper, ground coriander, and marjoram equal parts she added the sesame later she because it goes rancid fast and she did not want to compromise her mix just in case. https://youtu.be/JtvdZ76N8s8

I actually just bought some pita and zataar today and went on youtube to find a way to put them 2 together and didn’t think of dipping it, DUH! lol…. We usually get our fresh Zataar + bread baked at Forn Al Hara in Anaheim, CA. its great there. great reviews on Yelp too!

Good ideas. But I think there’s a problem with Naming, the word Hummus comes from the name of Chickpea in Arabic, it’s called “Hummus Habb,” which literally means pieces of hummus or hummus seeds. So, saying Pea & Feta Hummus totally means that it contains Hummus “spiced chickpea paste” with it..:)

It took me to evolve to this from G-d given (and asked for) wisdom, via Jesus our supreme healer and almost dying (from CHF) at age 52 in 2010 (now y’all know how old I am! why don’t you try some mint in the hummus. It actually tastes good. Also use a bit of lemon to balance the chilly.

While I was adding the ingredients I kept thinking “this seems like too much tahini” or “I don’t think this much cumin is going to taste good”. I was very pleasantly surprised. I don’t like hummus and it causes some gastric distress, but I love this version! This sweet potato hummus goes great on my homemade spelt and buckwheat bread…YUM!! Thanks Chef John!

Hi Blanch I went to a Greek Middle Eastern store called Adonis in Toronto Canada area and found a table and it said Za’aTar but it had a herb on it that looked like oregano only the leaves were much bigger and it was as big as a parsley bunch and it was fresh. I love the taste of Marjoram that was our favorite pungent flavor type of oregano. Now in your video you mentioned that Za’atar was a spice blend of thyme, sesame seeds and sumac the purple spice. Greek people put it on old meat to hide funky smell. I guess it helps in digestion. I was told by a Greek businessman, he hates when restaurants put in on meat.
I always known thyme to have long grained rice shaped leaves not round flat leaves like oregano/ or marjoram.

I LOVE Aaron but I can´t stand fresh coriander (plus, it´s ridiculously expensive here in Finland, especially in the winter) so I´m pretty much f*cked with all of his recipes….. =/ But I´m still going to try them substituting the coriander with parsley and hope for the best! =) XX

Great recipe but watch out for how sweet it tastes, it may not be to your liking. Recomend molding the mixture with your hand into small balls and covering them with flour before frying, just like a falafel, trust me you wont regret it.

it is kinda different, seeing sweet potato “falafel” and hummus with feta instead of yoghurt, but it actually sounds and looks quite yummy. I’d give it a try.

HUMMUS is Arabic for GARBANZO BEANS!
What is called HUMMUS, is a short for MUDAMAS HUMMUS which is, in a CHEF’s lingo’ “PUREE of GARBANZO”
So in general, instead of “HUMMUS” the French “PUREE” is better
“PUREE OF SWEET POTATOES” is best, as far as I am concerned… but NOT HUMMUS….. LOL

I LOVE this idea. I am having issues with digesting beans. These things start happening when you start to get older (and I love beans!). Think it is the skins causing the problem. And I love hummus. You are the Bomb. (Again, showing my age since I think “the bomb” is an eighties phrase, oh well⭐❤)

As far as I know, falafel are made with raw chickpeas that have been soaked overnight but not cooked. Anyway, I will try your version. Thanks for sharing! You look so lovely!
As far as food safety goes, it should probably be mentioned that it only takes 6 hours for a time-temp controlled food to become legally unservable. this is NOT a food you can leave out very long. Remember also that you have to count the time it took coming to room temp and add it to any time it sits out after removing from refrigeration. You only get six hours above 40°F.

I tried making this recipe. It was horrible. The falafel didn’t form in the shape of ball and stick to the bottom of the pan. It’s floppy like a scramble egg. It was messy and gluey. Never make this recipe again. Scrubbing pots and pan isn’t fun.
I have a on/off relationship with hummus, i dont like it plain but if it has roasted peppers or a shit load of garlic I cant get enough, however, sweet potato hummus sounds like something I would love every time no matter what
Thank you so much for this. I’d never tried za’atar and asked for some for Xmas and now I have a nice jar of it. Your suggestions were exactly what I was looking for. I’d also be interested to know if you have some suggestions for using baharat; I bought a big jar of it along with my beloved ras el hanout, and while I use the latter in EVERYTHING I’m a little stumped finding a way to let the baharat really shine.

Without Chickpeas or any beans it’s not falafel. Cmon you could’ve added Chickpeas or broad beans and let the sweet potato be something to sweeten as an additive.

To anyone who has tried this, was it not too sweet? That annoyingly sweet flavor of sweet potatoes is not really my thing, and while Chef John says that we don’t eat hummus because of the garbanzos, but because of everything else in the hummus, the garbanzos have a much milder, blander flavor that can be dressed up more easily. I can’t imagine mere garlic, spices, and citrus overcoming the sweet potato flavor.

My mind is blown. why did no one ever tell me how delicious this substitute in a traditional recipe is? WOW.
Just made this with purple sweet potatoes and it turned out excellent! Had to use a bit more water and tahini as purple sweet potatoes tend to be a bit drier, but it’s all worth it for the stunning color! And if you add a bit more lemon juice, it helps to brighten the color even more!
Made it; burgers turned out pretty tasty, but the dill sauce drove me crazy till I got something resembling a tasty mixture needed 8 or so tbsp of rice milk, and added soycream and honey to it; also used honey instead of maple syrup in tahini and turned out pretty good… thnx for cool ideas, you guys! Keep it up.
I love making homemade hummus but hate cleaning the food processor. Using the potato masher for this will be the perfect solution!
