Ingredients 2 small tomatoes 1 teaspoon olive oil 1 small eggplant, cubed 1/2 teaspoon salt 12 wonton wrappers 1/4 teaspoon salt 1 tablespoon olive oil 1 small yellow onion, diced small 2 small garlic cloves, minced 1 small red bell pepper, seeded and diced medium 1 small zucchini, medium diced 2.In a medium bowl, mix the sausage, Monterey Jack, Cheddar, black olives and Ranch-style dressing. Fill the baked wonton wrapper cups with the mixture. Bake.
Working with one wonton at a time, spoon 1/2 tablespoon of the chicken mixture into the center of the wonton wrapper. Brush the sides with water and fold into a triangle, tip pointing away from you. Does this freeze well? I’m cooking for one. I love so many of your recipes. The’re terrific. However I find I’m wasting a good bit of food because it gets mushy or just doesn’t look appetizing after eating it over a few days. If you could suggest/develop an eating plan for one or even two I would find that SO helpful. Thank you Jill!

I baked all of my vegtables except the garlic together so much easier.
I don’t want to be a debbie downer. I used Braggs aminos for years, but then I learned its not as healthy as you might first expect. The process of manufacturing it produces not only MSG but salt. It’s also a heavily chemicalised processed. If you’re going to eat that as a seasoning you’d be much better off using naturally fermented Tamari. I really love the taste of Braggs aminos but it was leaving me with headaches and aches and pains after. I cook the eggplant stovetop in 1/4 cup oil for 10-minutes before adding everything else. I only use 1-16oz canned tomatoes no salt added. Also, I just use 2-tablespoons fresh parsley and 5-cloves of grated garlic with 1 teaspoon each of salt & pepper. Everybody has their own variation. Looked good

Tonight I made this dinner. I used yams instead of potatoes and I used a jar sauce. I sprinkled the top with chopped garlic, chives and your recipe for vegan parmesan cheese. It was wonderful. Thank you so much for sharing this recipe. I will definitely keep this recipe and use it often. I look forward to trying some of your other recipes. This recipe has given me renewed hope in living a vegan lifestyle. I am no longer bored with the same foods (salads) all the time. You are inspiring me to cook again. I’ve tried boiling milk for an ice cream recipe twice before, I never seem to manage a proper boil, granted that was in a pot, and I think I stir too frequently trying to prevent scorching. This last time I started calling it when these tiny bubbles started forming here or there, but this has me questioning that.

This is the kind of dish that looks really good but after a spoonful, disappointment arrives
Tried making as per this recipe and was a disaster. Didn’t bake in 8-10 minutes as mentioned. Rather kept it for 40 mins yet the sauce was in liquid state and not baked ☹️

Hi Ani, Happy Thanksgiving. I’m in the middle of the pre-cook crunch. Made my vegan pumkin cheesecake, and some cranberry oat muffins that my mother requested. Was also gonna make my cornbread per my sister’s requested, but decided to send her my recipe so she can make it. That takes a bit of a load off from me. Tomorrow I’ll do my braised green beans and the Gardein Holiday Roast.

I recommend steaming the eggplant beforehand rather than sautée if you want less oil. It also holds together better.
