Add vinegar, garlic, brown sugar, mustard and seasonings to drippings; heat through, stirring to blend. Transfer to a small bowl; gradually whisk in oil. Remove with slotted spoon and drain on paper towels. If you like a lightly dressed salad, leave about 2 tablespoons of the bacon fat in the pan. If you want.

I have a twist my. Mother taught me. I’m 68. Skip the veg oil and corn starch. In its place add an egg with a TBS of flour. When the vinegar and water et al boil put in the egg and flour.
I used to eat Spinach salads at a steakhouse in San Diego in the 1980s. I loved it then forgot about it when I left the area. I never could figure out the dressing, the ones I saw online missed the point and tried to make it healthy. Anyway, the only difference was adding hard boiled eggs to the salad. My mother made this for years using either spinach or garden fresh leaf lettuce. She usually added green onions in the spring and onions in the fall, but always she included thinly sliced fresh button mushrooms before adding the dressing. She called it wilted lettuce or wilted spinach.
Thanks so much for this recipe. I had been looking at the store for a low carb vinaigrette dressing with no luck. This dressing fit the bill perfectly. It had the tang I was looking for and was awesome on my spinach salad, with hard boiled eggs and bacon.

This is just my opinion..but hot dressing on salad..eww..makes the salad all mushy..for me a salad needs to be cold, fresh and have a bite in the veggies. I would rather make a variation of the dressing and use it as a sauce =)

The red pepper and goat cheese is a nice touch, I just use the bacon fat in equal proportion to the vinegar and usually use pecorino romano which is a sheep’s milk cheese.

I had this same salad for lunch today at a restaurant to celebrate my Mother’s Day. The exception is my salad had tomatoes, mushrooms, spinach, a hard boiled egg (sliced) and chicken strips with bacon dressing. Very good, I make it myself twice a week, every other week. It helped me lose weight.
The problem with this is u have to eat it before it gets greasy

The cooks in the south have been pouring hot bacon grease on curly lettuce since… who knows when. It was the only salad I ever saw served as a child. LOL. This is, I know, delicious. I will not make it exactly as shown because of an aversion to sweet salad dressing. To each their own. The black eyed peas on a spinach salad is going to be great… I just have leave out the sugar.

A lot of frozen and canned spinach seems to be %50-%70 water. Solution? I just got my first POUND of dried spinach from Amazon for $12 today. Great for soups, omelets and casseroles and it doesn’t go bad after opening.

@LucLeFou A roux is fat and flour so he could’ve done that with the bacon fat and the cornstarch, so I wondered why he had to go the extra step of melting it in water.

Technically if you get this at the Tippacanoe restaurant in South Bend, Indiana there’s no onions, goat cheese or craisins. They use spinach leaves, hard boiled eggs, fresh mushrooms (sliced) and crumbled bacon. The dressing is supposed to be made with bacon grease, olive oil, sugar, red wine vinegar and a little bit of regular vinegar (some ppl add some garlic powder). But to each his own ♀️

Kristie, how do you get your bacon fat from the baking sheet into your container? I had never used bacon or its fat in my cooking until I went keto. I’ve been using the oven method to cook larger quantities for meal prep, but when I try saving the fat, I always wind up with more on my counter than in my container!?
