Grease a 7 x 10-inch baking dish heavily with the butter. Distribute 2 cups of bread in the pan. Sprinkle in blueberries, and top with the remaining bread. In a large bowl or blender, thoroughly whisk together the eggs, milk, brown sugar, cinnamon, nutmeg, and lemon zest.Preheat oven to 350°.

I’ve been making bread like a typical quarantined person and i needed to do something with it after a few days bc it goes stale so fast. I’ve made stuffing before and this time tried the bread pudding. It was so good! I didn’t add foil and let it get nice and crispy at the top and loved it. Next time i will probably add cinnamon and raisins not bc it needs it but bc i am so use to it that it feels odd to have bread pudding with out it. it is fabulous regardless. When my mother was teaching me how to make custard, the recipe called for scalding milk. When I asked her what that was, she said there’s a layer of something on the top like a layer of film. So I’m not understanding what you are interpretation is of scalding. Do tell

I found if you scald the milk first. It turns out a lot better than mixing everything together and putting it in the oven! I don’t drink, so I use brandy flavoring used in baking. It’s just my preference.
This dessert was absolutely delicious. (Five stars ⭐️⭐️⭐️⭐️⭐️ ) I have to tell you I did have a dummy moment. I tried to put the aluminum foil on a hot pan and ended up burning my hand.

This is more similar to Bread and Butter pudding in the UK. Bread pudding isn’t made with egg custard, it’s bread, spices, and dried fruit soaked in brewed tea, then baked. It’s stodgier than bread and butter pudding.
The chefs at the kitchen design company where I worked used to make a bread and butter pudding with marmalade and whiskey, rather than the sultanas (which this is missing!). Oh my gosh! It was delicious! I loved when they demonstrated to new customers:) so, I think that this version with brandy would be delicious too.

Your channel should be called Pretentious Kitchen. First, it’s not custard until you put the eggs in, and your custard technique is non existent taking it off the heat and letting it sit around? Like what? You have the fanciest pots and pans I’ve ever seen, copper each one of those is $400 at least, yet you make a rue flour based sauce for a custard based bread pudding. But the cherry on top goes to your brioche bread. Whereas every normal decent person who doesn’t waste food would make bread pudding with their stale bread to repurpose it, your recipe calls for a fresh baked drier brioche. Why the hell would you make a fresh baked bread and make it drier to simulate the dryness of a stale bread? Clearly, you have never had the need to actually cook for yourself.

The best bread pudding I ever had was when my (tipsy) aunt decided to make some last-minute and didn’t have everything she needed. Instead of cream, she used coffee creamer and just dumped everything except the bread together in a bowl, threw in some spices and brandy, and whisked it up before dumping it over the bread and baking it in a crock pot. I can’t tell you how amazing it was!!! She’s never been able to re-create it.
