Great video, you have a lot of good useful suggestions, but you do realize the reason they serve pineapple with cinnamon at Brazilian restaurants is because cinnamon reduces your appetite. SO YOU EAT LESS MEAT. I’m not a 100% sure, but I highly doubt it is a Brazilian delicacy, but rather a money saving gimmick, that actually does taste great. All the same great video.

This is the first complicated one of your recipes I’ve attempted and it took me a while so I’m hoping you add the written recipe to your blog at some point.
I did it completely vegan and other than shop bought vegan mozzarella used the same ingredients; (only Cajun spice I could find was labelled extra spicy).
Tastes amazing, love the combination of spice and pineapple.
Used a half cup (US size), as a measure as don’t have a scoop.
Got 8 and 3/4 delicious sausages.
I put 6 in the freezer and devoured the rest.
I just made these and they taste amazing. Even my meat eating husband likes them. Thank you Connie

I liked the look of it so much, that I did a version from scratch (with whole wheat flour, which I sifted to get rid of the hard bits). Even without the pineapple and with the onions uncooked it was a really satisfying feast. Served with a side of steamed young potatoes with chickpea crumble and chickpea omelete it had a success even among my meat eating family members.

Amazon.com has several different makes and styles of sausage molds. Silicon vented with holes for steaming, cover and can be used time and again. Skip the paper and foil if you are going to make a lot of meat treats in this shape!

I would totally try that seasoned BBQ watermelon! I think it’s so interesting how much the texture has changed. I wouldn’t go as far as saying that it looks like meat (because it does not), but more like a very dense juicy tomato… Still looks good.

So, it’s summer in NZ and I just made a double batch of these sausages, AGAIN!!! Can you believe I totally forgot to add the beets this time?! I live in Beetland beets are everywhere here they put them on everything and on burgers instead of pickles… and I forgot them! But, the sausages still turned out RAWSOME! I also learned something not all VWGs are the same. I tried a new one this time one I purchased from an online vendor. It was a little more expensive than ones I can get in a store in a “bulk” section, but was so worth it SO much fresher, and it made a HUGE difference in the taste. One question, Connie how do you store your mushroom powder in humid conditions? Is it okay to freeze it, or should I keep it in a plastic container in the cupboard?

People who cook with gloves creep me out. I don’t want the latex and chemicals touching my food. I would much rather have clean hands against my pineapple. Studies have shown that people who cook with gloves transfer more matter onto foods than people who use their clean hands. Besides, you are cooking the food and the heat will kill any transferred bacteria, no gloves needed. Also cuts down on the waste of throwing all of the gloves into land fills. Let’s get back to basics.

World’s Best Really? Wondering why in the world would you have to steam these for 60 minutes? I made vegetarian sausages the other day with quite similar base ingredients, steamed them for JUST 6 minutes, and they were ready to hit the skillet (I did precook the onions and veggies, but she did also). I’ve been watching a few of Connie’s videos, and she seems to make a number of odd suggestions like this without even explaining the logic, or tells you to do something but for the wrong reason. I’ll would also bet you cannot detect any difference between this recipe with or without the agar. I’m skeptical that she really knows much about cooking. She also totally lost me when she added pineapple to the dough huh? I could see topping these with a pineapple salsa but why add something so tart to a sausage, the onions are already providing adequate caramelization and texture. Seems like chopped shitakes or nuts would have been nicer than pineapple, if you are looking for more varied texture..

HI, Connie! I used to have a cast iron pan for many years. However, I heard Dr Neal Barnard say that the iron we get from such a pan gets ‘rusty’ in the body. It produces free radicals so it’s better to avoid it and get the iron from food like beans etc..
Unfortunately oil is really not so great for the arteries and heart. I try to leave it out as much as possible. It’s incredible how food can be roasted with only water but it must be hot and added only little by little.

I think what I liked most about these sausages is you don’t taste VWG at all there are so many wonderful, smoky/sweet flavors. The texture was just like a sausage the oats/VWG ratio is perfect.

Just wanted to say I cooked some of these for a few of my carnivorous friends (from freezer stock). They were all understandably a bit apprehensive when they took their first bites..
After the first few chews it was an overwhelming “These are good”, then moments later an all round; “These are really good”, and the sausages disappeared in seconds.
The only bad thing is I’m now expected to make more/much more.
I’d only bought 1kg of vital wheat gluten, can see me getting more as it’s also fantastic for a flour improver… Our (UK) strong white bread flour here is (imho) hugely improved with a tablespoon of that stuff per 400 grams of flour.
I keep going in here and watching the vid over and over again because trying to write all this down. Really taking me too long so was wondering if u have a written version of this?

For all you donkeys, never stir sugar as it caramelizes. He stirred it once he added other ingredients. Caramel doesn’t magically stir itself in with the butter and cream.

You are the best, you do not use plastic and reuse the parchment…I reuse my parchment and stay away from plastic as well.

This is an old macrobiotic recipe. I ate it as fajitas. Made it a few times with lenghtwise vegetables and tofu. Avocado and salsa too. It’s sooo amazing.

You fucking idiot. This recipe is shite! The pineapple doesn’t cook all the way through but you are left with burnt bitter lines. The caramel is okay, but your recipe doesn’t allow for the flavour of the caramel to infuse with the pineapple.
So.. you’re left with a bitter tasting, hard Pineapple pieces with a drip of caramel.

I used a whole pineapple on a rotisserie with sugar and cinnamon. I got the idea from a book by Steve Raichlen. I think that cutting the pineapple beforehand is a better way. I used a gas BBQ which doesn’t the same amount of heat as charcoal.
