I went through browsing a ton of tzatziki recipes on this site and finally stumbled on this one. I had to scale the recipe.Ingredients. 1 small cucumber peeled, seeded and roughly chopped. ¼ cup tightly packed mint leaves. 1 garlic clove.

I serve mine with some homemade pita bread.” – Chef John. Greek Tzatziki.You’re in for a treat today; this authentic Greek Tzatziki sauce recipe comes to us from the Greek island of Paros! Tzatziki is a creamy Greek yogurt sauce with cucumbers and fresh garlic. This is a versatile sauce that is the perfect accompaniment to many Mediterranean dishes.
Chef John is a delight to watch in his video. I really wanted to love his recipe too, but it had a terribly sour aftertaste. After letting it sit, I tried adding sugar, salt, even blue cheese to bring out a richer flavor, but nothing could cover up that taste.
Having had tzatziki sauce.Some people swear that it must be made with mint instead, but dill is how I fell in love with it, and so dill it is. You may do what you like, the recipe below is the same either way (just substitute mint for dill in the same amounts). Tzatziki Recipe.

In a medium bowl, stir together the cucumber and strained yogurt. Mix in the garlic, salt, pepper and mint. Chill the mixture for 1 to 2 hours.
Remove the mint leaves from the stem and gather them together. Finely mince the mint leaves and then add it in with the garlic. Pour the oil and vinegar in the bowl with the other ingredients and stir together.
Peel the cucumbers and cut out the seeds.Ingredients: Tzatziki: 2 cups Friendly Farms Plain Nonfat Greek Yogurt. 1 cucumber, peeled, seeded and diced 1/3 cup Carlini Extra Virgin Olive Oil. 1 lemon, zested and juiced 1 1/2 teaspoons Stonemill Iodized Salt. 1 1/2 teaspoons Stonemill Ground Black Pepper. 1 tablespoon Stonemill Minced Garlic in Water. 1 1/2 tablespoons chopped dill.Egyptians enjoy the fresh, kicking taste from three simple ingredients. You can go for this tzatziki sauce recipe if you prefer less garlic.In a medium bowl combine greek yogurt, cucumber, garlic, white wine vinegar, dried dill week, dried oregano.Salt and pepper to taste and add lemon juice and drizzle olive oil on top.
Refrigerate for 30 minutes to let the flavors blend.Allow cucumber to sit, salted, as long as the yogurt is straining. After several hours place salted cucumber in a clean tea towel and gently squeeze the liquid out.
Add the cucumbers to a medium bowl. Add the yogurt, garlic, lemon juice, and mint, and stir well to combine. Add salt if needed.
In a bowl, combine the yogurt, garlic and 1/2 teaspoon salt. Sprinkle the remaining 1/2 teaspoon salt over the grated cucumber and drain, 10 to15.

I lived in Athens, Greece for 5 years, 1989-1994. Greek yogurt IS the best. They only used Fage brand then. Looks delicious. Greece is an amazing country and the people too. Some day I want to go back.

What is the difference between Tzatiki and Cretan Tzatziki? Someone said to me I should add feta cheese in Tzatziki. But this is what I know in Turkish as “Girit ezmesi” “Cretan fava”.

I have tried to make this so many times and I could never get it to come out right. I followed this to the letter and now it is PERFECT!! Thank you, Akis! <3. I know I've commented before about not being able to get it right but the key is the white wine vinegar. The stuff I used the first time must have been no good. I just bought some new WWV and now it's great.

allow me to give you a small hint which will make the mixture more of a (dip) instead of Soup
use your chopper to chop and mix everything but (not) the yogurt
once everything is chopped and ready, mix it in a bowl with the yogurt using a spoon..mix as slowly as possible and as little as possible…in fact, it should be (folding) more than mixing

U people declare wars over redicilous things! I grew up in Lebanon, our families making this recipe for many generations and named it “khyar b laban” i never knew it is also greek until i moved to europe. So here is the thing, both countries are Mediterranean, and its very normal to have common things. Just like as we share same recipes with the turk and the armenian because we are from the same region! Probably we cant know the origin or who took the recipe from the other, especially if one country made it in the international market and took the credits.. but definitely having common culture is not offensive for anyone! Grape leaves recipe is known in the whole levantin( lebanon, syria, palestine), turkye, armenia! This is incredibly beautiful, no one should be offended. Go and educate yourself in geography, immigrations, transports, and culture exchange! This is how the world it is. Oh by the way, she did not do it the right lebanese way, and i don’t care! I don’t find this offensive. I understand that this is the beautiful thing about us as nations, we learn things from each other and than we go creative

Dill is a must! I have been told the fresh ginger cancells out the garlic breath! I have also heard that the garlic body odour is due to the body eliminating poisons. Christine, I have always had a problem making Taztiki sauce! I could never get the consistency right. With your guidance my sauce came out Perfect! I actually made a smaller amount, I just used an individual container of yogurt, one mini cucumber, onengarlic clove, dill, s&p. With your help I am turning into a pretty acceptable Greek Chef. I thought the technique used in this video was excellent. For example, suggesting other ways of straining yogurt if you dont have cheese cloth. I think this approach is less intimidating to the home cook. Encourages improvisation and creativity in the kitchen.

Oh you made my day. I miss Greek food..I worked for a greek family at their restraunt 25 years ago or so. I learned how to make it they way you make your food. We put sweet onions (drained) I saw in your gyro episode you don’t like raw onions. Getting some great extra tips and am a new fan! Stay safe ❤
I make Tzatziki sauce all the time-I love it and I eat it like other people eat fruit flavored yogurt (I also put it on gyros)! I learned in a cooking class to remove the cucumber seeds from a regular cucumber and dice it really small (maybe like a brunoise), put it in a mesh strainer and salt it. It tends to keep the cucumber firmer so that the sauce lasts. I always use lemon juice (love the flavor), fresh garlic, olive oil and fresh mint leaves. I used to use dill but the mint tastes really fresh. I love it!
I love Tzatziki but I tend to add a lot of garlic. XDXDXD In the summer I love a simple dish. Boiled baby potatoes with butter and Tzatziki. I know that this isn’t a Greek set. I should send you a recipe for Chłodnik (Polish cold soup). This is a soup based on yogurt, cream, vegetables and herbs. It’s perfect on hot days. XDXDXD You show me how to make a Greek salad, please. The salad should consist of tomatoes, cucumbers, onions, feta cheese, red onions, olive oil, kalmata olives and oregano. Do you add green peppers?

You are so cute! I am so happy I have discovered your YouTube! My family lives up north 20 minutes from the Turkish border, Orestiada. My most favorite dish is Pastitsio and I love your dad’s recipe! The only thing different from mine, which I learned so much of my cooking from my mother-in-law, is I have never tried the clove and allspice in it. Will have to try sometime. I love all of your recipes! The lemon potatoes remind me of so many weddings there that served it with chicken. I was raised in so calif and I found Karoun Labne in an Armenian store. It’s from cow’s milk but is called a yogurt cheese. We needed to move to so Oregon 15 years ago to help my parents and thank God I found it up here. It’s the only thing I use for tzatziki. It’s pretty thick so I do not drain my cucumber. it is so creamy and reminds me of the tzatziki in Orestiada and what my family makes. I am not one for dill although I love dill but just did not grow up with it in their tzatziki. kali sou mera!

do not take offense but it is NOT libanese, it originated MANY centuries ago IN GREECE, why else would it be btw with GREEK yogurt? and I just know due to my Greek friends which is generations and I often had to listen to familystories, this sauce originated in Greece and NOT anywhere else, secondly your recipe is LOL far from correct, wtf is this sauce??????? no really I like to know what that is but just cant recognize ingredients and it does look good but it is NOT Tzatziki especially with your spices ( which u did not even mention and why olive oil???
My mums tzatziki has so much garlic in it.no pepper a tiny bit of white vinegar. Oregano instead of dill. Tzatziki like all Greek dishes are very regional. Kali orexi

If you make it with cheap ingredients, it’s better to bump up the garlic a bit, though.
