Breakfast Kale Turmeric Scramble Recipe

Ingredients 4 medium red skin potatoes 1 medium onion 1.5 tablespoons olive oil 1/2 teaspoon salt 1 medium bunch kale 1 tablespoon olive oil 1/2 teaspoon salt 8 large eggs 1/4 teaspoon ground turmeric 1.Whisk 3 eggs with 1 tablespoon water; season with salt and pepper. Heat 1 tablespoon butter in a nonstick skillet over medium heat. Add 1 tablespoon grated.Heat the Butter Olive Oil in a skillet.
In a separate bowl whisk the eggs. Add the spices and heat until fragrant. Add the chopped kale to the Butter Olive Oil and cook until slightly wilted.Whisk eggs, milk, turmeric and other spices together in a larger bowl.
Gently pour egg batter on an oiled sheet pan (or in large casserole dish). Place in oven for 10-12 minutes or until eggs have started to set. Remove or gently pull the out the oven rack, stir eggs on the sheet pan with wooden spatula, then slide back in oven.
Add the eggs and turmeric to the pan and scramble the eggs, pushing them around the pan until the garlic is mixed in well. When the eggs have almost finished cooking, add a generous spoonful of sour cream or greek yogurt and mix it in. This makes the eggs extra rich and creamy.
Stir the eggs and potatoes with a spatula and when they are the desired consistency, take the pan off the heat. Cook them according to taste, cooking longer for well-done eggs and vice versa. Place the scrambled eggs and potatoes on a plate and sprinkle over some.
Warm canola oil in a small skillet. Stir turmeric into oil; immediately add eggs. Pour in water; cover and cook until firm, 2 to 3 minutes.
I am fairly sure I’ve commented before but this is one of my favorite recipes! Tonight I made it with potatoes as a scramble. For the first time I added just a wee bit of turmeric and they looked just like scrambled eggs. So yummy!!! If there was a 10 star rating this recipe would get it.

Wife had a rough night with our newborn so I decided to wake up early and make her a real breakfast. Typed in tofu scramble and saw this. Cooked it and holy crap, this is amazing. I’m not vegan, and I’m eating keto, but if I wasn’t I would’ve devoured the entire portion. This is amazing. Better than the crap they try to pass off at restaurants. 10/10
@hot for food: How long do you think it will store in the fridge? I’m thinking meal prep breakfast burritos. Seems easy enough to just keep a container of this at work and then pop some on a tortilla when I get to work and heat it up. Would that be good?

This recipe is unreal, tried a few on here but haven’t found one as good
Tip: there is the stuff called black salt, which I guess is similar to Himalayan pink salt except it has more sulfur in it. Anyway, it smells like eggs. I know that sounds a little weird, but if you replace the salt in this recipe with black salt, it takes this recipe to a whole new level. Also, try putting cashew cream instead of plant milk in the recipe for super creamy scrambled tofu. Yum!
How was the tofu super crumbly? Was it set to dry for a period of time? What firmness of tofu is recommended? Thanks!

Seriously Lauren, you are the absolute best! I just made this recipe added garlic powder, red chili flake and kala namak (black salt) and it was insanely good. I melted a slice of chao tomato herb cheese on it and put it on gluten free bread. It tasted identical to the egg scramble I used to make, actually it tastes so much better. This makes me so happy, I can’t even begin to tell you! I missed eggs so much going vegan. You are a true genius, a vegan Houdini.
Love the recipe!!! The only change I made was adding “Black Salt” in place of the Sea Salt which gives it an “egg taste” due to the black salt’s high sulfur content.

I’m desi & I made this today & wowww. It’s incredibly good. The only changes I made was that I added mushrooms & didn’t put a 1:1 ratio of garam masala & turmeric, more like 3:1. I didn’t make the yogurt sauce he did. Honestly, didn’t really need a sauce.
It definitely had an amazing flavor profile from the garam masala/haldi eggs, the zeera & mustard seeds in the onions. Y’all gotta try this. 5/5

Never extract oil from seeds/nuts. Oil is protected from oxidation inside the seed. Also lose the nan. The rest of the stuff seems OK.

This guy is full of crap. This isn’t an Indian street food at all. And almost all his Indian dishes are all wrong. He mentioned oil in this recipe. Usually he says olive oil. Indian recipes don’t use olive oil and almost all his other recipes he mentions olive oil.
Can you keep the leftovers in the fridge and re-heat? If so, do you need to add some non dairy milk in a pan to reheat or simply in the microwave?
Adding mustard seeds and cumin doesn’t make it “spicey”. Adding turmeric and a bit of graham masala doesn’t make it “spicey”. Just because you’re using Indian spices, it’s not necessarily spicey (hot) tasting!

I do this too, but instead of milk I use mayo and add sriracha hot sauce and make a burrito out of it
Just made this today for breakfast. Sauteed onions and green peppers + turmeric + garam masala + eggs + butter. Didn’t have any yogurt, but I had 5% sour cream, so I slapped that inside a tortilla wrap and topped it with store-bought mango/ginger chutney…. then grilled the wrap for a few seconds per side… god damn incredible amazing as heck recipe Dr. Ramsay.

Delicious! I used some Kiawe Smoked Sea Salt in place of the regular sea salt and added cooked mushrooms, onions and jalapeno left over from the night before and the entire family loved it. Thanks for another awesome recipe!

Sir we don’t add turmeric to raw foods, turmeric has a bitter taste specially when it’s raw. It’s one of the most misunderstood and difficult spice to cook with. Raw gives bitter taste and overcooks easily as well. You need balance. We always cook it. We do add red chilli powder Rather than turmeric yo yogurt dip you also can add pan toasted cumin. After roasting you can powder the cumin by your finger and that would give immense taste to spiced yogurt. Salt, roasted cumin, black salt and of course dried or mint. Make a powder and use it to make instant yogurt dip. I also add chilly powder for colour but that would be spicy for you.
Basically it’s paratha and anda bhurji with curd.. Just wrapped everything together
