Did corn tortillas create health problems for the South American natives who ate this corn flour staple for hundreds of years, or maybe even thousands of years?
I have been searching for a keto tortilla / chip for several months. Was at a bookstore drinking coffee on Sunday and found Martina Slajerova’s book “Keto: Slow Cooker & One-Pot Meals.” I bought this book on a whim because of the tortilla recipe. Found that someone had pinned this video on pinterest, and it looked simple. Yesterday, I tried it. It was amazing! It is obviously not going to have the texture of a flour tortilla. However, trying the keto diet seriously for about a month, trading the 27g of Carbs on a flour tortilla with the 9g of total carbs (2 net), has made me very happy. Thank you, Ms Slajerova, for taking the time to test and publish this recipe.

Sweet tortillas would taste alot like the sweet tamales that are made by Latin families all over Latin America. Chocolate, Strawberry, Pineapple, Apple, Raisin, Coconut, Guavayou name itit is already in a sweet tamale form.
I think cultural appropriation is an overblown issue, to put it mildly. Everything has its origins in something slightly different which down the line belonged to a different culture. Complaining about bits of your culture being misappropriated has more to do with tribalism and ego than any real moral standards, and to me it also hints at a lack of self-respect. Taco Bell’s founder was an asshole though, he should’ve shown some gratitude to those people.

Coming from a Mexican-American, raised by Mexican-Filipino cooks, favorites don’t exist. If they are home made, flour does win. They are actually like birthday foods. Hard to make, stupidly delicious when done correctly. Corn is a little more standard, especially for tacos. In our house we don’t fry them hard though.
I think the real thing people are missing, is that it’s cabbage not lettuce. You take shredded cabbage, salt it, and coat it with lemon juice. Regardless of the wrapping, this will improve the product.
When making chips, could you skip the cooking in the pan step and go straight to the oven???

Yep, in the north of Mexico we eat both flour and corn tortillas, in any taquería around here you can get your taco with any kind you want.
As a note here in Sinaloa a flour quesadilla with carne adobada is called a gringa. (femenine of gringo)

I’d opt for this corn flour organic masa harina corn flour as it is not GMO. You don’t get as much for the money but it’s totally worth not messing up your gut flora.
Also worth pointing out that some corn tortillas are better than others. And also: you want them very, very fresh. Even if you tend to prefer flour tortillas, if you ever have a perfectly made fresh corn tortilla you may end changing your tune!

You are suggesting people don’t get the majority of their calories from grains, which means the majority of their calories must come from meat. 25 years of science has shown us that those low carb, high meat diets cause heart disease and diabetes and increase all cause mortality. A high carb, low fat starch based plant diet is best. It’s the traditional human diet that brought humans from being tribes to being great civilizations.

As a gringo who spent a year working near Zihuatanejo I discovered that authentic corn tortillas made with care often hold up much better than their common U.S.-made counterparts. As you suggest in the video, I felt the mealy texture that I was familiar with detracted from tacos. However, fresh corn tortillas made by an expert can be rolled tightly and squeezed without cracking (perfect for bean dip), defying the logic of any store-bought corn tortilla. I discovered within 48 hours of my stay in Mexico that corn tortillas and flour tortillas both have ideal applications, much as you have alluded here. Great vid!
Like many other recent terms, cultural appropriation has been taken to the extreme. Yes, it can be a problem. However, when ppl send death threats and protest outside of Rick Bayless’s restaurant for cultural appropriation, I get SUPER frustrated. He has as much respect and passion for Mexican cuisine as anyone. He is showcasing how Mexican cuisine can be on par as French or Italian in fine dining.

If you have a problem with the texture of tortillas, your tortillas are of bad quality, if they break like that they are either old or bad. Also we do have corn tortillas in the North of Mexico, and they are preferably used over flour tortillas for tacos, except in Sonora. Also I hate it when Americans refer to themselves as white or the West and everybody else as non-white… I dont know, not trying to be ass, it just very annoying to me.
Heads up: I phoned Maseca & they definitely are a GMO corn. Bob’s Red Mill is GMO-free but is ground coarser than Maseca (& it costs more) so must let sit longer to hydrate or dry grind in blender. Bob’s is made from yellow corn & tastes WAY better than Maseca’s white cornmeal! Love your channel:)
I have tried store bought corn tortillas and I found them to be gross. Yeah, I am used to eating the store bought flour tortillas. Currently, I have been wfpb sos-free for almost three months. Do you think it is a good idea to try these? I am afraid I still won’t like them. Is there something I can add to this recipe to make them taste better? When the WEST started to manipulate corn and introduced pesticides to farmers ALMOST ALL FOODS found in the farm became DANGEROUS for consumption. Humans DIDN’T get sick from eating grains. Humans BECAME sick from ingesting pesticides and other toxic chemicals used to make plants resistant from insects and diseases.
This is one of the few good/great low carb tortillas I’ve ever seen. But I still prefer a lettuce leaf like Romaine for me personally.
As long as you don’t disrespect the culture with hate as the intent then I’m fine and dandy about people taking an interest in another culture even if they UNINTENTIONALLY do things wrong. I use a glass pie plate to press my tortillas. Works great! Also adding some black pepper to the tumeric greatly improves absorption, acording to Dr Greger. Just use one part pepper for each 4 parts tumeric.

I grew up in Texas on alot of tex mex and also more ‘authintic’ mexican food and honestly I don’t have a preference for corn or flour tortillas. Both are goodwhen they are fresh. Premade Flour tortillas you get at your average grocery store taste awful. The corn tortillas are much better in that regard.

There is a margaritas resturant where I am, Family owned. The father murdered his son I believe the kitchen it might be the other way around. When customers walked in the place was open and there was blood coming out of the kitchen into the dining area. They suprisingly never went out of business. But I never went there for that reason. Think of the poor mother has to cook in a kitchen where her son was murdered.
CORN TORTILLAS ARE HEALTHIER!:) Powdered lime stone is added to the kernels in big steel cooking vats. This then act as a preservative and softens the outer layers of the corn (pericarp, aleurone). When this happens, the STARCH is literally boiled out of the kernel which is removed before grinding them into dough. Cheers!

Fresh Masa tortillas are superior in every way, imo. They are not “mealy” texture, but rather delicate, and have a far better flavor profile. Flour tortillas, if not fresh, taste terrible and have a revolting texture.

Totally untrue, the difference is that wheat has GLUTEN in it, that’s thee biggest weightgainer in the world. No grains is best, if you can do it, even corn is in grain department, but the single fact that gluten is removed, is HUGE…..I’ve eaten corn and corn tortillas for 10 years and still went from 170 lbs runner, to staying at 143 lbs………you need to eat something for fuel on long fast runs, and the tortilla is not bad, and corn based products are not horrible, certainly better than flour, no comparison……..knock out the gluten, big thing, then if you are super human and into an extremely boring life, then knock out all grains……….then there’s no discussion if you knock all them out, but boooooring

I am trying to convince my Dad to go whole food plant based since he has heart disease and this diet clearly cures the problem. He also has atrial fibrillation, and there was a study of obese people in Australia who went on a diet to help with atrial fibrillation: it lowered the frequency by like 80% and the duration/severity by like 50%. This is very important.

In the late 70s or early 80s I went to a restaurant in Sacramento County that served dishes representative of different regions of Mexico. I enjoyed a couple of different dishes there but then they closed and reopened as a taco and burrito restaurant. I guess that’s what people wanted.

Q: Why did you insert politics into a food video?
A: The corn vs flour tortilla dynamic is political whether I acknowledge it or not. Just read my comments every time I cook with flour tortillas. A lot of people view the flour tortilla as emblematic of diluted, commodified, Americanized Mexican food, and yes, as an emblem of cultural appropriation. I don’t think you come to my channel to hear my political opinions and I make an effort to not shove them in your face, but lots of food topics intersect directly with political ones, and I’m not going to pretend the political dimension doesn’t exist when it’s directly relevant to the food I’m talking about. And when I give you my own opinion, I make an effort to present you with an alternative opinion, or at least with enough information to empower you to come to a different conclusion than mine. A: I feel like a lot of people leaving comments like this didn’t make it to the latter part of the video where I tried to illuminate the difference between harmful cultural appropriation and benign (or mutually beneficial) cultural exchange. If you’re a member of a group that has hurt another group a lot and is currently dominant over that group, I think you should be particularly sensitive about how you adopt and use cultural items from that group. (Yes, the lines of membership around such groups are usually blurry, but they’re still real, and we still have to deal with them.) That doesn’t mean you don’t borrow. I’ve made several Latin American-inspired dishes on this channel, but I do things to avoid hurting people when I do it. I don’t presume to represent “authentic” versions of dishes. When I take an idea from a specific person, I credit them, and when they spend a lot of time helping me make the video, I pay them. When I do a video like this one that deals a lot with someone else’s culture, I make sure to seek out members of that culture and to let them speak for themselves, instead of presuming to speak for them. I think a lot of what people dismiss as “PC” or “SJW” is just being considerate of other people’s feelings, even if you don’t understand them.

if your corn tortillas are too brittle, you could heat them up in a microwave between two plates to retain some of the moisture.

Has no one ever figured out you can cook a corn tortilla in a pan with some oil and it wont be crumbly anymore?! In my opinion this it the only way to eat corn tortillas and I don’t understand why restaurants don’t do this! Instead they just double them up and they still fall apart. It also tastes better and solves all the texture problems. Why has no one talked about this

In San Diego I buy Mr. Rancho brand ( Berber in San Leandro ) soft taco sliders. Cut in half and place on a cookie sheet in toaster oven at 375F until stiff. Remove and sray lightly with high heat avo oil in a Mr.Misto bottle. Sprinkle with salt and smoked paprika ( Arab markets have best price ). Whole Foods also has their brand of soft tortillas.
Corn and flour tortillas each have a purpose in Mexican food. And yes they are both Mexican proper. Hell the other day a Chinese friend of mine had some spicy chicken his mom made we had no rice so we slapped it in a flour tortilla and down it went and it was good. Thats some cross pollination right there. Point is food has to be right for you it has to be good for you. Set aside your cultural purity and let’s se what an appetite and some imagination bring about.
I like that you can roll them out without using parchment paper and stack them too when raw without them sticking. I have a tiny kitchen so stacking them before cooking will save on space.

My 2 cents on cultural appropriation. If we want cultures to avoid each other. If we want cultures to never blend together or people to try new things or god forbid improve on something from another culture in their own way. That’s fine.

The other thing a Norwegian friend of mine introduced me to and I’m going to misspell this leftsah a wheat and potatoes tortilla/flatbread crazy good with butter cinamon and sugar.
Starch-based diet. Lots of fruits and vegetables. Mostly restrict processed foods and limit animal protein… That’s healthy… don’t get me wrong I eat meat, but only a few times a week and small portions when I do. The mind and body is meant to run on carbohydrates and when eaten without processed or added oil or animal fat your insulin level rises and falls very quickly. When incorporating oils and animal fats that are processed and not whole foods, insulin stays elevated longer and inflammation is more likely. Low carb is another term for starvation. Ketones are a byproduct of your body utilizing stored fat for energy. This is ok in the short term, but damaging long term. It creates too much stress on the system because the ketones are acidic. Blah blah….just be sensible. And let’s not forget the niacin rich yumminess of homemade tortillas!
Looks pretty good. Tortillas that PUFF UP when cooked mean they’re being done right, just ask you momma about that. I’ll have to try a very small batch first. What level of flame ♨ did you have going on your pan/griddle..??? Temperature makes a BIG difference. How many minutes or seconds did you cook on each tortilla side..?? Did your tortillas fall apart when you made the tacos..??? I ask cause they looked a little cracked on the edges.

Toasting corn tortillas does wonders to fix the mealiness and strength. There are some places around ATL that do that and you get a single tortilla per taco without issue.
Oh boy, one thing that makes tortilla dishes fun and also kinda complicated is how we have names for everything.
Deep fried corn tortilla if cut in triangles = totopos, cut round = nachos
Deep fried corn tortilla cut in triangles with red/green sauce, onions and cheese = chilaquiles.
Deep fried corn tortilla unfolded with something at top = tostada, folded = Taco Bell (we don’t have that one at all)
Corn tortilla with anything = taco
Corn tortilla with something wrapped with red/green sauce = enchiladas. With beans = enfrijoladas. With Mole = enmoladas.
Corn tortilla with something wrapped and deep fried = flautas, in US known as “taquitos”
Corn tortilla “cake” with tomato sauce, cheese and other ingredients = enjitomatadas or aztec cake.
Corn/flour tortilla with anything + cheese = quesadilla.
Flour tortilla with anything = northern taco.
Flour tortilla wrapped with anything = burrito.
Flour tortilla wrapped with anything and deep fried = Chimichanga.
Flour tortilla “sandwich” with ham and cheese in the middle = sincronizada.
Flour tortilla “sandwich” with meat and cheese = gringas (some regions have a specific name for every kind of meat)
And at least with pre-made tortillas that’s all I can remember, If we go starting for the corn-dough the list will never end.
EDIT: Reading the comments is very sad how many people complain about “cultural appropiation” like if it was a warcrime when it’s been part of history since forever, exchange and adapting dishes is what makes modern cuisine nowdays. Mexican food itself will be nothing like it’s today if it weren’t for Europeans, Arabians, Indus and other cuisines influences. Food if to share and enjoy after all.

I’m from Monterrey, Nuevo León, in Northern México. I am very much of a corn tortilla guy, I have gluten intolerance but even if I didn’t, I much prefer the versatility and overall taste profile of corn tortillas. That being said, the overwhelming majority of my friends prefer flour tortillas, and in my family everyone eats them and always has flour tortillas in their fridge.
A lot of people I’ve met from other parts of Mexico completely believe that flour tortillas are Tex-Mex stuff, which is honestly quite funny.

Loved this idea! I just made some, but they were premade tortillas, clearly had some added fat to them, and they were pretty thin. What I did was spray them lightly with water (with a spray bottle), then added my seasonings (Mrs. Dash No Salt “Fiesta Lime”, it’s all I had on hand at the time) and followed your cook temp and time and man were they good and crunchy! Thanks so much for all of your fun videos, you’ve helped me on my plant-based journey, love them all! Now I want to get the tortilla press and a taco shell former. Thanks again:-)

If you put a corn tortilla on a skillet to get some black/brown bits and to puff it up a little, then cover the tortillas in tinfoil or a tortilla cover thing. The get nice and soft are rollable from the steam.

This video was pretty good, but I think it could have discussed a point that Gustavo seemed to allude to. Mexican-American food isn’t different from Mexican food because it’s Mexican food made by Americans, it’s because it’s food made by Mexicans who became Americans. Food like that wasn’t imported from Mexico then distorted, it was already here when America acquired New Mexico, Colorado, Arizona, Nevada, Texas, California, and Texas. It’s similar to Mexican food, but different because these regions were so far and isolated from the rest of Mexico. My family has been living in New Mexico and Colorado for 400 years (and 5000 years), and we have always eaten food that has been called fake by Mexicans. Fried corn tacos were mentioned in our first cookbook in 1931. A similar point was brought up thankfully, how Northern Mexican and Central Mexican food are different. So, the United States inherited hard shell tacos and other “Mexican” foods from New Mexicans and other Hispanos. We’re generally very happy to be American, especially considering we tried to separate from Mexico in 1847. So we’re more than happy for our culture to be considered part of American culture. It would be worse if that were not the case, some people still call us Mexicans and treat us as perpetual foreigners.

Thank you! I just made these tortillas and made 8 6-inch tortillas, which was weird since I thought making them smaller would give me a bit more. Also my overall net carb count for per tortilla came out to be 2.5 instead of 1.5. I’m pretty sure it’s because I’m using a different brand in the flours since that’s what added up the most. Just trying to get the lowest carb count possible so which brands did you use in this recipe?

The comments here make me frightened. People please do your own research of GMO foods and understand that they are not something to be afraid of. I would be willing to talk with anyone about this. There is no reason to fear GMO products. You eat thousands of them a year without even knowing it. Most fruits and vegetables you eat are perfectly safe and are genetically modified to have desirable characteristics such as sweetness and larger fruits. GMO IS NOT THE ENEMY.

I can also understand why you don’t like corn tortillas that much. those seem really yellow compared to what we eat here so they’re clearly different in which type of corn is used.
Also corn tortillas are always better fresh, that’s why here in Sinaloa we have tortillerías that make those every day a few blocks of any given home; so if you put them on the fridge or something to transport those then they would taste worse for sure.

Excellent advice…love your channel…just wanted to let you know that Maseca corn flour is made from GMO corn, which I have only recently became aware of…it also tested high for weedkiller…good news is, that there are organic non GMO varieties now available…this is one option I found on Amazon…Gold Mine Masa Harina…I am not affiliated with this company but try very hard to avoid GMO products…cancer survivor so just being careful…

Maseca brand has tested positive ( 10/2018 as high as 95% ) for glyphosate and Roundup. The Mexican owned co. ( Gruma ) must be importing GMO corn from US et al. since it is banned in Mex. Bob’s Red Mill is so expensive you might as well just buy ready made non-GMO tortillas.

Pizza Hut isn’t owned by Italians, McDonalds isn’t owned by Germans (particularly from Hamburg) and Dunkin Donuts isn’t owned by Netherlanders (where the doughnut was invented). And really… would they want to? Pizza Hut is technically pizza and pizza is technically an Italian dish but would Italians really want to reclaim ownership of Pizza Hut? If you want an “authentic” Italian Pizza you don’t go to Pizza Hut. If you want an “authentic” Mexican burrito… don’t go to Taco Bell.
And these corporations aren’t owned by anyone any more, they’re publicly traded companies, they are owned by faceless shareholders, these shares are owned by pension funds and are paid out to… who?

Corn tortillas aren’t really that crumbly when they are fresh, the pre-made vac sealed ones you buy really are, they’re stale and disgusting. Some larger cities might have Mexican restaurants that sell fresh nixtamal, and tortilla presses are pretty cheap, you could also grab a bag of Maseca if there’s no source of fresh nixtamal near you… just don’t buy the pre-made tortillas and think that’s what a taco is supposed to taste like.

You may be right about some of the benefits of sprouted corn, but the options for non-GMO, organic varieties are out of reach economically for most. Its good information but not practical, especially if you have a family to feed. If you are worried about GMO, or non-organic varieties I suggest the following: 1) stop eating corn altogether, 2) find a local farmer that grows organic, non gmo corn or 3) learn to grow your own organic variety and sprout your own corn. Its easy to do just takes time. Anything worth while takes time, learn to do it your self.
I like this. Simple. Healthy. I like the summary statement the ratio is about 2 teaspoons of whatever spice you want in the cup of cornmeal. I also like the idea of using the water to blend cilantro (or any other whole fresh item) and THEN put it into the recipe as instructed. I like super simple recipes like this that I can easily “memorize” and make. In my daytoday life, I have a bunch of super easy recipes I don’t have to think about much, and then some that I will pull out the notes. This one is easy. No notes necessary.

Schools in Texas started using a “whole wheat” tortilla. I don’t like them. The texture was odd, sort of like eating a taco wrapped in the Declaration of Independence.
Can you make flour tortillas? The commercial made ones have so many scary ingredients in them.
