All I can say is that is one very unhealthy food. Yuck!
Take a ton of your favorite spices and the potatoes and toss them in a ziploc bag coating “all” side of the potatoes. Them put them on the baking sheet (the oil is enough for non-stick). Her way gives you hardly any flavor and you can use all your great steak blend spices to make really flavorful fries.

I boil veg and keep the water. This water is the vegetable broth eye use for many things, such as miso soup. Matzoh ball soup, gnocchi in brodo, kasha, etc. sometimes I will drink the cooled veg water. Never throw it away.

I was in the Kitchen Nutrition Business for over 10 years and although this is a more complicated topic if you are going to include enzymes which start to be destroyed around 49C the biggest enemies are too much Air, Heat and Water. Microwaves, pressure cookers and even ovens use high heat and some of the other enemies. The best to preserve nutrition is waterless vacuum cooking with some sort of temperature control to keep it under 87C where most of the nutrition is lost. There are cookware out there that do this if you search. Also stay away from teflon and Aluminum. Dr. Greger, if you “steam” your vegetables in a pressure cooker (ie, veggies not soaked in boiling water), wouldn’t that retain most of the nutrients like microwaving does? I would imagine that steaming veggies in a pressure cooker would be healthier than microwaving since microwaves are notorious at producing microscopic burnt spots on foods, whereas steaming in a pressure cooker creates no such phenomenon.

The thing about microwaved food is sooo wrong. It’s been proven 100 times over and over that microwaves destroy nutrients period. microwave is unhealthy in the way of emitting very high levels of radiation that passes through walls even 10 feet away! the entire family can get hurt from that.
You need to compare a pressure cooking (and consuming the liquids in it) vs. the others. Yes, of course, if you just remove the vegetables out of the liquid, then nutrients will be lost. But the whole point of the pressure cooker is to prevent anything coming out of it, losing nutrients to vapor as well, and keep it together. With all of that, if you consume everything in it, including the liquids, your going to retain more nutrients that if you pull the vegetables out of water.
Yah, if I microwave vegetables in water, and then take the vegetables out of the water and eat it, I’m going to loose nutrients too…

Good to know that boiling, apparently the ‘worst’ method, only reduced the antioxidant content by a small amount. Much smaller than I thought. I happen to save and eat the veggie broth alongside my vegetables when I cook them, so with the water sapping up those lost antioxidants, I feel less bad about boiling.:)

Veggies high in Fat Soluble vitamins should be fried, such as:
Carrots
Beets
Sweet Potatoes
Spinach
Peppers
Bok Choy
Best to consume some fat with the above veggies. I believe coconut oil is also helpful with absorption.

Thomas, you DID contradict yourself. @ 2:28 you référence a study which stated that carrots, broccoli and courgettes were better for you if steamed or boiled. Then @ 2:50 you mention water soluble vitamins such as Vitamin C, contained in broccoli, would wash out into the boiling water. Which is it?

However after my cousin follow it, and finally lost tons of weight by using it without starving herself. I’m persuaded. so i just made the first method with conventional chicken and it was fire yo. it was about an inch bigger than the conventional one he had and instead of 4 min flip 3 min; I did 6 min flip 5 min AND IT WAS PERFECT!
If you steam your vegetables… like broccoli, carrots, cauliflower… save the water and throw in the fridge and use that water the next day for a smoothie.

VIC is high in certain vegetables regularly steamed. Those vitamins aren’t lost as long as you save the steamed water!
This is bullshit! This guys vitamin is steroids. And obviously he did not read the studies he is quoting. The 1st study on red peppers had nothing to do with Vitamins and Minerals that he is lying about, it only tested antioxidants. After I read that I did not look up the rest of the studies. He knows nothing about vitamins and minerals obviously. As soon as you pick a fruit and veggie they both begin loosing vitamins and minerals. Next go look at your healthy canned and frozen veggies and fruits. You will see 0 vitamins and minerals unless they are added as an ingredient. Because all of them are destroyed during those processes.

I steam my vegetables, and then use the water to soak & cook my navy beans. No nutrients lost, just deferred to the beans. And no waste of flavorful water.

Microwave ovens produce radiolytic compounds, which was shown to be dangerous. A woman in OK is suing after a bd blood transfusion in which the blood was altered. When stir frying veggies that have fat soluble nutrients, do you need to stir fry them with oil? If so, wouldn’t that have the same affect as water soluble nutrients and boiling?

I do not know if you heard about the plants being water with same water but one specific plant, the water was pre-heated on a microwave before watered and this plant dies. Do have to leave the peeling on the beets when stir frying them, sense you were talking about the tougher skinned Vegs to stir fry.
The second study includes carrots and says it’s better to boil and at 3:32 to 3:34 you mention carrots as an example for stir frying… also i’d say that courgettes (zucchinis) also have a thick skin, but you DID say it’s just a rule of thump with exceptions. The taste is probably a good indicator for all of this. Last time i overcooked veggies and they tasted SO dead and bad i couldn’t eat them at all… but nice informations and good style of presenting.

I guessed right. I’ve been trying to stir fry. The theory is that the heat doesn’t get all the way through the vegetable.
A list of vegetables you should steam/boil and one for those you should fry would be very helpful. Also, very happy to hear about the microwave. Have been using it for my vegies my entire life (because I am lazy and dont like scrubbing pots) AND I am still alive and kicking!
Pressure cook the veggies and drink the broth with them. Problem solved.

You said study 2 says broccoli keeps their nutrients best when steamed/boiled.
Directly afterward, you said broccoli and peppers lose most of their nutrients through boiling/steaming because of water-soluble vitamins.
I boil water, and pour it onto a cup of frozen vegetables. And just like tea, I drink the water that thawed out my veggies. Then I eat my veggies.
Interesting because I have heard that microwaving veggies is the worse thing. I would imagine that anything is better than boiling vegetables.

Chickens/Turkeys haven’t been given hormones/steroids for over 50 years. Growth hormones are proteins similar to insulin used to treat diabetes. Like insulin, they can only be injected into the body because they are broken down in the digestive tract. Therefore, it is pointless to provide chickens/turkeys growth hormones in their food because they would be rendered ineffective. They only used hormones in the past to battle disease from over crowding not to make them bigger. If you have a bird that’s bigger it’s due to the breed not juicing. Gets your facts straight!!! Hate the California miss leading hearsay stuff like all natural is better fad. Read the truth about free range or organic. There bought from the same suppliers, transported to the same slaughterhouses, given no antibodies for disease or infections, cramped in cages just like industrial farming and often have worse lives due to debeaking & rings through the nose to prevent them from eating harmful organic plants/roots just so the farmers can charge top dollar. The free range/organic doesn’t state how long the animal has to be outside, usually it’s only from moving pen to pen for cleaning or rotating old with new. Because of this video, I have been able to make the best chicken breast! I never really cooked white meat because I didn’t know how to not dry it out. I like to fry it on the pan. I sear it on both sides for about 5 min each or so and let it sit for 5 min after on the side. It’s been juicy every time!

I stick to green veggies and cayenne pepper seems to help with flavor along with pink salt and black pepper.And yes I choose butter over yogurt any day. Got my blood sugar a1c from 11 to 8. Wonder how blending works. One thing I have daily is usually (everything is organic): bone broth, with two sticks of celery, small handfuls of spinach and kale, quarter avocado, one teaspoon of zero carb bullion I found (with sea salt/garlic/etc in it), some black pepper, and a 1/2 teaspoon of black garlic. I blend that up and then nuke it with a table spoon of cultured, organic, grass fed butter. Is it not as healthy as I think it is? (2 minutes, stir, then one minute more). It never reaches boiling.
