how does it stay fresh in the fridge for? im going to make whole made crunchy peanut butter.
I have used both of these blenders. I don’t know if it makes a difference, but at 5:16 and again at 6:13 you did not lock the ninja into place by turning it to the right, so it was just sitting on the base. Perhaps that is why the nuts would not hit the blade.
Could you let them sit on the cookie sheet or in a bowl overnight? Would that make any difference?

I make this once a month. It is amazing but there is a learning curve due to oven differences.
Here in Japan I use a convection oven that is small by American standards.
My oven temperature in selected by increments of 10, so I bake the almonds at 180 Celsius.
I bake them for exactly 14 minutes and remove the immediately to cool.
During processing I use 3 tablespoons of coconut oil to make the resulting almond butter smoother and more easily spreadable / less thick.
Love the videos that teach how to make things from scratch so we don’t have to buy pre-packaged EXPENSIVE foods. If you ever figure out how to make a successful low carb milk chocolate, that would be golden. SO many recipes rely on expensive chocolate chips or bars that if we had a sub for expensive low carb Chocolate, it would open up the possibilities immensely.

Hate to burst your excitement bubble, but “Journal of Food Science” reveals that almonds roasted over 280 F can damage their cellular structures and degrade their quality, making them more susceptible of releasing oil during storage. Roasting almonds above 130 degrees Celsius encourages acrylamide formation, a product with links to causing cancer. In another study from the “Journal of Food Science” in 2007, the amount of acrylamide formed increases as the color of the almonds gets darker as they roast. Almonds are most susceptible to the formation of acrylamide, since they contain high amounts of the amino acid asparagine. Acrylamide starts to form in almonds when they are heated above 266°F. The formation of acrylamide becomes especially high at temperatures above 295°F. You should have done your homework…roasting detroys nutrients!!! Instead, soak your almonds, the dehydrate them in a dehyrator, and then turn them into almond butter.

Using the ground blanched almonds (or Costco Almond flour) 1 cup, pure almond extract 2T, and powdered sweetener (Costco Monk Fruit) 1/2C, you can make matzipon (or marzipan if you don’t do the Berliner sound) to create a sweet almond paste. I say for nut Butters (raw or roasted)hang both of these up! Too much work when it shouldn’t be that much work. For a nut butter I throw my nuts & salt into my 14 cup KitchenAid food processor. Then Walk away:-)

The larger diameter canister can’t keep the powdery nut material within the path of the Ninja’s blade. Neither machine does that well as they are being used here. I would try adding slightly warm water (95 F) for processing; when completed, dump into an open wide mouth container (jar) and let the excess water evaporate out…stirring it several times daily until I achieved the ‘butter’ consistency I wanted. Be sure it doesn’t get rancid or contaminated, infested!

Can you make almond butter in the small 8 ounce cups? I just got mine and it was an epic fail as there was no way to push the nuts around. I got finely ground nuts but not creamy enough for nut butter.

We figured out the big difference between homemade and store-bought (often creamier). Both are 100% almonds. But only one is 100% of the almonds.

I was making hazelnut butter and viewed this just to see how long it takes in the vitamix. I have made it in a food processor before so giving the vitamix a try. It is SO much creamier in the vitamix I love it. I will make this almond butter as soon as I finish my hazelnut butter.

Put a little oil of your choice, and it will blend smoothly. Read the jars, and they all have oil added.
You should always add some liquid when using nutribullet. It s not made for mixing nuts.

Why didn’t you try the blend setting? It changes speed to help with the blending process. All you did was spin the almond crumbs.
If you’re going to test the two products then you need to fill the container in order to blend. Clearly there isnt enough in there for the mixture to blend

Does your container lock in place? I have a 5300 and it does not lock in place, which is a little annoying for me because I have to fight it from jumping off the base when I use the tamper.

A spatula is safer to clean the blades with,…(fingers aren’t replaceable)…also to shove the ingredients down during the processing procedure. Metal utensils, will, absolutely scratch your containers. You need to allow the blender to come to a full stop before tryi,g the remove the blending cup. You’ll damage the unit trying to rip it off like that.

Almond butter is one of the hardest butters to make, even with a blender that has 2.2hp the consistency of almond butter is much more dense and thick than lets say than peanut butter. the type of blenders this guy is using is very limited to what it can do

Why not leave skins on and save a step? I use almond butter and coconut cream every day in my breakfast smoothie. You can go broke buying both of these. Winco has the best price on the planet for grind your own almonds to make butter. They’re just roasted with skins on. A nice sized deli style tub usually ends up costing between $5 and 6 bucks. Hey. Love your recipes and methods. I had a crazy idea a few days ago that I have not yet tried. So I would like to run it by you and your followers. My food processor is a cheap one with not much power, and I worry about burning it out. I have a good supply of blanched almond flour and am considering converting it to almond butter. Most of the hard work is already done! I would probably add coconut oil or coconut butter and a touch of salt. I haven’t worked out the cost per ounce, but it might be an easy hack for folks with a cheapish blender or food processor. Let me know what you think. Thanks.

Nut Butter, that would suggest there was Nut Milk from which to separate the Nut Fat from the Nut Milk to make Nut Butter. Almonds must have gone GMO if they have mammary glands to produce milk to make butter. how many MACHINES does it take to PROCESS the almonds into spreadable mush? too many. it’s called Processed Food for a reason.

Steve, you can do the same thing by just pouring boiling water over the almonds. I have also had success by just soaking the almonds in cold water for 10 minutes to 1/2 hour.
Thanks Steve for that tip on taking the skins off easily. I’ve been staying away from nuts for the most part because of the enzyme inhibitors in the skin. Now you’ve given me an option to use nuts in a lot of different ways! One bag… oh so many choices!

The researchers estimate that more than 1,000 larger species of mammals and birds will go extinct in the next century, from rhinos to eagles. They say this could lead to the collapse of ecosystems that humans rely on for food and clean water. Humans have wiped out most large creatures from all inhabited continents apart from Africa over the last 125,000 years. This annihilation will accelerate rapidly in the coming years, according to the research The future extinctions can be avoided if radical action is taken to protect wildlife and restore habitats, and the scientists say the new work can help focus efforts on key species. Animal populations have FALLEN BY 60% since 1970, suggesting a SIXTH MASS EXTINCTION of life on Earth is under way caused by the razing of wild areas, hunting and intensive farming. Scientists JUST SAID that human society was in danger from the decline of the Earth’s natural life-support systems, with half of natural ecosystems now destroyed and a total of a million species at risk of extinction! “It is worrying that we are losing these big species when *we don’t know their full role,” said Robert Cooke, at the University of Southampton, who led the new research. “Without them, things could begin to degrade quite quickly. Ecosystems could start to collapse and become not what we need to survive.” Climate Chaos Of course, climate change will continue to threaten species around the world in 2019. “The impacts of climate change aren’t showing signs of slowing, and this administration refuses to recognize it,” says Charise Johnson of the Union of Concerned Scientists. “Water temperatures are rising, increased flooding, deforestation, fires, storms—these are all things that affect a species’ existence.” And new threats continue to emerge. “There’s been a lot of discussion about how global climate change affects ocean acidification, and now there’s emerging evidence that the even greater threat is reduced oxygen levels,” says noted conservationist William Laurance of James Cook University. A study published last month found that ocean deoxygenation could have a major impact on zooplankton, one of the building blocks for the ocean food web. Deoxygenation also causes increased algal growth, like the red tides that choked the coasts of Florida this past year and killed hundreds of manatees and tens of thousands of fish “Changes in ocean composition will be a large-scale driver of mortality,” Laurance says. “Some people are calling this ‘the great dying.’ ” A related issue in the Arctic also appears to be another emerging threat. According to the just-released “Horizon Scan of Emerging Issues for Global Conservation in 2019” (the tenth annual edition of this study), climate-change induced release of carbon from polar ice will further worsen global warming, while the release of mercury from thawing permafrost will create a toxic threat for animals, plants and soil. Meanwhile, on top of the obvious weather-related changes, climate change could create an additional unexpected threat to some species: wildlife trafficking. “Some species will undoubtedly decline as a result of climate change, making them rarer and thus potentially even more desirable by those who trade in them,” explains Richard Thomas, global communications coordinator for TRAFFIC, the anti-wildlife-trafficking organization. “Addressing wildlife trade issues and promoting sustainable harvesting are likely to become more important than ever,” he says. Politics in the Trump Era—and Beyond Among the greatest threats to wildlife are the Trump administration and similar politicians around the world, such as Brazil’s new far-right president, Jair Bolsonaro, who took office last week and immediately moved to undermine indigenous rights in his country. “The new president in Brazil could unravel 50 years of progress for species, tropical forests and indigenous people,” says Lindsay Renick Mayer, associate director of communications for Global Wildlife Conservation. That could be devastating to one of the world’s most biodiverse regions on the planet, which is often referred to as the “lungs of the Earth.” Mayer adds that the recent election in Madagascar could be just as bad. Former president Andry Rajoelina, whose previous tenure was marked by a dramatic increase in illegal logging, deforestation and biodiversity loss, was reelected last month, although as of press time the election remains mired in protests and accusations of fraud. “The risk of losing the amazing biodiversity of Madagascar is always a big story and it could get worse now,” Mayer says. Getting back to the Trump administration, many experts worried about how things will play out for this country’s wildlife in the year ahead. Roads But outside of Washington, things are speeding up. New road and infrastructure projects, many backed by Chinese investment, are currently being carved into critical habitats in Indonesia, Africa, the Amazon and other regions. Much of this stems from China’s Belt and Road Initiative, a development strategy to build extractive industries in 70 nations around the globe along with overland roads, ports, railways and pipelines to exploit them. “We’re experiencing an avalanche of new infrastructure projects,” says Laurance, who points out that the Initiative has at least 7,000 developments planned or underway. One of the most notorious projects is a gigantic hydroelectric dam that could wipe out Tapanuli orangutan (Pongo tapanuliensis) in Sumatra. Meanwhile, a similar—if not even more extensive—proliferation of illegal roads is being constructed around the world by loggers, miners, poachers and other extractive industries. These activities threaten everything from elephants and tigers to insects and rare plants. A Host of Other Issues Here are a few more factors predicted to play a big role in 2019. First, we continue to learn more about how plastic waste affects wildlife and the environment. Most recently, a study found that 100 percent of sea turtles had plastic or microplastics in their digestive systems. With more and more plastic being produced every day, this will be a major focus of research and conservation the coming year. Meanwhile many experts also expressed fear about emerging diseases, like those affecting bats, frogs and salamanders. Lips also noted that it’s often hard to get funding and other support for these growing problems because they’re less in the public eye. “People and the media tend to focus on the current emergencies rather than the slow, long-term problems because we are not very good at maintaining focus and attention,” she says. The threats of poaching, snaring and wildlife trafficking will also remain significant around the world, as the forests of southeast Asia and the plains of southern Africa became emptied of their animal life and as “valued” species such as tigers, rhinos and pangolins face ever-increasing pressures. The Countdown Begins The year 2019 has just barely begun, but experts warn us that the opportunity to make a difference on these issues is already running short. “I don’t want to sound too bleak, but time is literally running out for the world as we know it,” say TRAFFIC’s Thomas. “The Earth simply can’t take the punishment of relentless over-exploitation of its natural resources, poisoning of its atmosphere and pollution of its oceans. We need to put aside political differences and work together to do something about this catastrophic situation—and quickly.”_*Update: I did another batch and this time I blanched the almonds and then soaked them over night (aka “sprouting”). I then dried out the almonds in my dehydrator. Now this may sound like a lot of work (though honestly it’s mostly passive time), but the result was the creamiest, silkiest nut butter I’ve ever had. It only took a single 50 second run in the blender and I didn’t need to add any oil.
i make mine usually between 1.5 to 2 mins.. I was scared at first but finally understood vitamix lol. I make it a point that it’s not less than 4 cups.. the more the nuts, the better it blend.. and just blend it at max! works all the time.
I love that you don’t get any insects in the almond butter unlike the store-bought stuff the FDA allows for a certain amount of insects per batch of peanut butter. This way you know you’re not getting any extra protein that you don’t want in there.

A tip I learned about peeling the skins is to wrap the almonds loosely in a tea towel and knead them for a minute.

I guess blanched almonds are better if you don’t want too much almond flavor, but for certain things like your toffee candy bars I’m thinking I might roast the almonds before making the butter for more almond flavor.:)

Wish I had a mill. I just use my food processor. But instead of salt, I add some sweetener and a touch of cinnamon. Personal preference. I grew up on peanut butter, but now I’m addicted to almond butter… FTW.

You may be wondering if you can just use blanched almond flour and some oil instead of going through this process. I’ve tried this and found that what I got didn’t taste good and I couldn’t get the same smooth texture as using actual almonds. This was using the Kirkland brand almond flour and the same almond oil that I used in this recipe. I’m not saying it won’t work for you, but it didn’t turn out well for me.

I make mine. A trick for good flavor is in roasting before grinding. Unsurprisingly a Champion juicer does a wonderful job of grinding with the blank plate in. No need to add any oil or salt or sweetner. Before doing all this I happen to also soak over night in water, then dehydrate first. That’s when I roast and grind. I leave the skins on. So yummy!
I found blending at speed 6 was better but i used half the amount you used. I found if the speed was too high it would bounce off the blade. Conclusion speed depends on how much buts you use 😉

I made this an accidentally roasted the almonds for 20 minutes instead of 10. I immediately made a second batch and did it properly and the first one was so much better. The second batch was too dry I had to add oil and it didn’t taste as good.

I now own the Ninja. It’s a way better machine. The NutriBullet is built like crap! Trust me. The bearings and seals will wear out in no time leaking a black residue on your food. Very poor engineering. I went through three nutribullets to learn this. Every time that’s what happened. You are supposed to pulse the ninja. It has Special Operations instructuctions for that machine. If it’s too thick just keep pulsing it it will break down evenly, plus a little roughage is good for you. If you still cant handle that then just run your smoothy through a nut bag. It only takes a second to do.

My 600W Bullet of 5 years finally broke recently. Good timing for mother’s day:). Hence I am now looking at both Bullet 900W and Ninja 1000W Auto IQ BL480. The Bullet 900W with 10 pieces packaging is only $99 and the Ninja 1000W Auto IQ BL480 is $139. Bullet is meant for making smoothies, convenient and small. If you want your Bullet to last longer you’ve got to follow instructions closely, it needs LTC:). However, the reason I am looking at Ninja is because it has more features, the auto and pulse and their cups are made of polycarbonate material. In addition Ninja is able to crash ice into snow. Ninja is heavier and a bit more bulky than Bullet. Ninja BL480 $139 is clearing this model as they have launched a newer generation and Bullet 900W for $99 is value for money. I already have a bulky Braun blender so which one should I get?
I just have the nearest Vitamix containers, is it ok to do nut butter with that too?

Awesome! A great add to your video collection for those who prefer to make ingredients from scratch.:-). I use Blanched Almond butter for lots of things. On getting the skins off quickly, you can rub gently the almonds after the ice bath in a bread cloth towel and they will come right off.
So keep in mind I did this test WITHOUT any oil. When you buy nut butter in the store, it doesn’t have ADDED oil, so I figure why add it to the recipe.
Want me to do a future video tested it with oil? It would probably work.

If you haven’t tried this ingredient before, you have to look into it. Its a flavor bomb. It tastes like MSG.

There is a grinding blade attachment for the nutri blender. Both came with mine. You are using the wrong blade and not pulsing.
The taste of coconut is epic, so I welcome any recipe that involves that , but blanched Almond Butter? Now that’s next level.
