My mother in law would make this every morning for her other grandbabies but when I had my son I made them for him and no way, he wasn’t having that. He wanted them separately so he could have the eggs in a blanket of tortilla with hot sauce. My son’s grandmother was Mexican and woman could cook. Before she would go back to Pasadena she would make a stack of tortilla’s for him to last for months. I’m going to try your recipe for the tortilla’s, if your husband can make them I should have a running chance.

You scared me a bitI didn’t see any cilantro (vital for any central Texas dish) until your still photos. Cilantro! Must have cilantro! Other tip: flour tortillas are great, but fresh corn tortillas are also good for filling with migas.

I grew up with them being called “imigitas”. I had no idea others ate this delicious breakfast mishmash. We pour crystal hot sauce on this. Or salsa. Lol. Wow, this floors me! It’s like we grew up in same family!
My mother, raised in a very poor American farm family in the 1950s, made something quite similar while raising me in the 1970s, only with the addition of potatoes fried first, due to the longer cooking time, and eggs scrambled into the whole. She called it “Poor Man’s Dinner” and served it as an evening meal, back before prices for the component parts were cheap enough to qualify for the meal’s title when serving a family of four. I was excited to see a different take on such a similar theme from Spain, even if I am so late to the party! I absolutely love your channel, Keef!
I make them like this all the time!! I’m 45 yrs old and I’ve been cooking this since I was 11 years old and now I’m cooking this for my now grownups kids and had always made this since my kids were small and this meal has always been there favorite and usually I Make refried beans on the side. Raising 3 kids.. this meal was flavorful and affordable for my family. I love all your recipes it seems like we were raised somewhat with the same Mexican food style! My friend’s Mexican grandma made this for us as a snack growing up one time and I kid you not we probably ate about 8 helpings of this a piece! Only difference was She topped hers with cheese. I will never forget the first time I had this dish though.. because it was so freaking delicious and I was such a pig about it!

Trying this for breakfast this weekend! My hubby makes something similar but he fries the whole tortilla making sure to press in the center to make a small well. then when it’s crispy he cracks an egg on top and cooks it. It’s like eggs in a basket but with a tortilla.
