What temp do you preheat the oven and how long do you bake the cake for?
For those using a glass bread pan, it takes 1hour and 5 minutes to bake at 350 degrees.
The cake is delicious but a little oily, so I would cut the amount of coconut oil by half and substitute the other half with butter.
Also, a dash of poppy seeds complements it nicely:)

Hi Sonal, i tried this today and while the smell in the house was awesome, but my cake split in the middle and burnt a bit on the top in about 25 mins on 180. What could i have done wrong?

I used a loaf tin lined with baking parchment. Cooked it for 15 mins then put foil over it for 25 mins. Perfectly cooked when taken out of oven. I also used half coconut oil and butter, it was soooo light and moist the best cake recipe yet for me! Thanku x
I made it and the frosting saved it other then that the bread part was pretty good but 7/8-10!

hi. i noticed before u put the icing that the cake looked a big dark at the part which was baked at the bottom. it looked kind a burnt at the bottom. or was it me imagining.. may b your oven was hotter at the bottom side??

can i use all coconut flour because i can’t have almond flour
I used vanilla bean, I added poppyseeds and almond flavoring. I mixed it altogether and did not do it the way she did. It took 1 hour and 20 minutes on 350. Once the cake is done, it’s delicious and you cannot tell it’s keto. I’ll try doing it exactly like her next time and see if there’s a difference. For the cream, I would put more cream cheese and less heavy cream. Otherwise, a great recipe.

At first I thought “ya right” when you said tastes as good as conventional cuz gluten free & keto usually taste subpar… But your recipe was FANTABULOUS!!!!! AND easy!! The only thing is because I’m allergic to dairy I used rice milk & daiya coconut “cream cheese” for the icing and it was watery so I added gelatin and then it became a solid But I put it on the hot loaf and it went over nicely! SOOOOOO DELICIOUS THANK YOU for this amazing recipe
I have a question, is the coconut oil you used the type that comes in the solid form? Did you microwave it to liquify it or are you from a hot climate and it stays in liquid form? I just ask because I dont want to scramble my eggs if II microwave the coconut oil to liquify it.

I have always loved VERY lemony treats so I tweeked your recipe a bit by adding 2 Tb of fresh squeezed lemon juice and the zest of 3 lemons to the glaze. I also poked several holes in the cake after it cooled 10 minutes and drizzled lemon juice on it so it would soak up more lemon tang before glazing it.
This cake is worthy of being given as a hostess or gratitude gift!❤

It is very filling. I froze it in two pieces for a day when I really need a treat. I just started Keto going on my eighth week and trying to keep it simple for now.
I make a lemon loaf for my sister-in-law because she always has company and buys lemon loaf with no taste so I make her some for her company. Thanks again for sharing.

The cake came out too eggy, too oily and too sugary. I used half the amount of coconut oil and it still was too oily. Next time I won’t use stevia and will lower the amount of erithritol. I will also skip the coconut oil altogether. Baking sheets are a must for this recioe. Even though I oiled my cake form, half of it remained stuck. I am really sad.:(
When you say type A disease are you talking about blood type? If so, that’s me all day everyday. Everything is sensitive to me unless it’s green, fresh and organic.

I made this last night and it was good. I would probably add more lemon juice next time, it had more of a coconut taste so I would scale back on the coconut flour. The texture good. I would definitely make this again. Thanks for sharing.

Hello! I made this bread this morning and decided to add about 20 drops of liquid stevia. Even so, it seemed pretty bitter to me. Is that what you’re aiming for? Bitter bread? If so, you hit the mark. Next time, a think I’ll add at least a half cup of swerve and instead of vanilla, I’ll try some coconut extract. Wasn’t that fond of the coconut flakes, they were not that user friendly. The coconut extract should complement the chocolate flavor. To offset the bitterness, I made some sweet whipped cream and it went great with the not so moist and bitter bread. Thanks for the recipe, though.

you are on the right track but you need to drop the microwave. microwaves just destroyed all the good tht you put into the cake, microwaves mutate and rupture the molecules therefore it chgs everything good into free radicals. drop the microwave. it is better to be patient and wait for the oven,

We made this cake and it was DELICIOUS! We did cut back on the oil to 1/2 cup. It was so moist. Also added lemon zest to frosting and some in the cake.. so good
