Place the ramekins of chilled pudding on an ungreased baking sheet. In a small bowl, combine the cinnamon with the remaining sugar. Sprinkle each ramekin of pudding with ½.
Tapioca pearls tend to be large and need to be soaked before using in a recipe, but quick cooking tapioca (or Minute Tapioca) is a smaller grain and will cook more quickly than the pearls. How to Make Tapioca Pudding. To make tapioca pudding quickly and easily, simple heat the milk, sugar and quick cooking tapioca in a saucepan.
Whisking constantly, pour in a third of the tapioca mixture. Whisk yolk mixture into the pot of tapioca; simmer over medium-low heat, stirring constantly with a heat-proof spatula, until thick enough to coat the back of a spoon, about 5 minutes. Transfer pudding.Instructions.
Place the vanilla and ghee in a 4-cup capacity bowl. Place a fine mesh strainer over the bowl and set aside. In a medium saucepan, not over heat, combine the dry ingredients and whisk until combined, breaking up and lumps as much as possible.
Combine milk, tapioca, sugar and salt in a saucepan; let sit 5 minutes; add egg yolks; bring to boil, stirring constantly; remove from heat (mixture will be thin); stir in vanilla. Pour the pudding into a serving bowl; stir 1/3 of the stiffly beaten egg whites into the pudding; gently fold in remaining egg whites, leaving little”pillows” of egg.Tapioca Pudding is a timeless and old-fashioned dessert! This is a quick and simple recipe that does not require overnight soaking and can be ready in under 30 minutes!

It looks in the video like it is 1/4 cup of small pearl tapioca, and not 1 cup as listed in the ingredients list. Looking at other similar recipes online give the same ratio

We here in India also do something similar but with cow/buffalo milk, sugar, soaked tapioca in water ; all cooked together into a porridge like consistency and had as a desert. And for flavouring we add cardamom or nutmeg and some dry fruit slivers for garnishing.

FYI: If you do not soak your small tapioca pearls, please make sure your water is BOILING before you add them to the water without the soak. So it stays as a ball, if the water is NOT boiling when adding them to the water fresh from the package, they will become a ruined mess. Cook until translucent. Also, coconut milk is a great substitute <3 Yum

She pours it in a loaf pan and slices it after it’s chilled. You forgot to mention in your recipe to soak the tapioca pearls ahead of time… I ended up with a brick following the recipe as you’ve outlined. The package on my tapioca pearls says to soak them for 30min before the cooking starts.

Mom did an excellent job cooking coconut tapioca. Thank you for sharing. I like to eat this warm, more as a sweet soup than as a cold pudding. I like to add taro, cut into little cubes and cooked into the tapioca. It gives the dish a little more texture and chew.

This is also called sago pearls because sago is made from tapioca. We use sago pearls in Malaysian cooking and in the Malay language, sago is sagu.

Tapioca desserts are delicious, I like the Cambodian one which you can put bananas, Jack fruit, even sweet potatoes (kumara) but cook it with the tapioca. I like sticky rice with sweet coconut cream sauce on top with fresh mangoes or durian is nice also.

In Sweden we eat rice pudding as a dessert on our smörgåsbord of Christmas food. it’s super yummy with a sweet Strawberry sauce! However we cook it differently. We use short grain rice and instead of boiling the rice before adding the milk we just pour in the milk and let the rice boil in it.:) it is also a Christmas tradition that you put a almond in the saucepan and whoever gets it is supposed to marry with in a year.

Hi, next time try soaking the tapioca pearls for 2 hours before cooking by doing that, the pearls cook fast and even; and they also become so fluffy… it is so common in southern India to make tapioca pearls kheer (sweet porridge)

Just for the curiosity aspect of the thing:
the pronunciation in the word tapioca is with an different sound in the “O”. It’s not like in “oval” it’s more like “owl”. (There is a symbol for this phonetically but I don’t have it in my cellphone keyboard lol)
If you put the word in Google translator you could hear the Brazilian portuguese original pronunciation.
It’s a word that comes from our native Brazilians, from their Tupi-Guarani language. They are one of the various different people that lived here before European people came. Some tribes still live in our forests nowadays, eating tapioca and other mandioca (maniva) products.
Here in Brazil tapioca is very common and we eat mandioca in it’s many forms in a regular basis. Is a really good an nutritious food. Glad to see other people trying and enjoying it too

In Brazil, we call this pearls as Sagu… it is eaten chill. We cook in wine or grape juice till all “pearls” are translucent

Wow this is VERY similar to the Danish festive dishes Risengrød & Ris a la Mande. The first of which you serve hot for dinner with a sprinkling of cinnamon sugar, topped with butter and served with a low alcohol beer called Hvidtøl. The second is the dessert edition, which has cream instead of milk, almonds, vanilla and is served cold with a hot cherry sauce on top. Usually a whole almond is hidden in the whole portion of the latter, and the one who is lucky enough to get it, gets a small present. This looked like a great variation, I need to try it! Great recipe!
Could one substitute the milk for coconut milk or hemp milk and have similar thickness results?
Well, this sure beats my makeshift rice pudding of using old takeout rice, throwing in milk and cream as well as cinnamon, vanilla and nutmeg and stirring until the consistency is what I like.

If you use brown rice and cut down on the sugar, you get something that’s more enjoyable as a hot breakfast item. It’s good when you get tired of oatmeal and want something simple and filling but not heavy like bacon and eggs.

I bought everything to make this but the instructions for the tapioca pearls say to soak them overnight. Is this necessary? Also, my coconut milk is already sweetened so do I need to further sweeten it with sugar while it’s boiling? Thank you!! Can’t wait to try this!

If I had seen this before I had gotten into bed and had that drink or two, I would have immediately made this. But then again maybe its the alcohol speaking:)
Indians make a very similar dessert with tapiocas. its called Kheer in Hindi. The only difference is we dont add eggs and vanilla to it and we add saffron and cardamom. its very delicious. we also use it in savory cooking. sautee some onions chillis curry leaves and spices and add the tapioca and salt and garnish with fresh cilantro.
cook it in milk and add an orange rind. No egg or butter and sugar to taste.
Man, I want to try this one soon! I have tried making rice pudding through an online recipe I found a couple of years back but it never turned out the way I wanted (including the texture). So I am going to give this one a whirl! It looks already like it’s leagues better than the one I have done so many times too many.
