That idea of thickening gravy with cream cheese is fantastic! I thickened beef gravy with cream cheese tonight and the cream cheese gave the gravy a wonderful, rich taste. We poured the gravy over the beef over the diet doctor’s bread that I make. I swear even a high carb person would have devoured it.

@ckrtom2 I am glad that everything has improved since the early days of Youtube technology, bandwidth, and especially skill at making videos. There are days I think about taking down all the old video even though many of of them have 40-60,000 views and re-doing them with new technology and hopefully more skill. Perhaps working 76 hours this week, marathon training when possible, and doing 3 videos contributes to looking old; at least I feel run down this week.

how much heavy cream? it looks like you use 1/2 cup of cream but on the website it says 2 tablespoons?!
I find with heavy cream (even kinds with no added stabilizers like guar/xanthan gum or carageenan) you actually don’t need a stabilizer, and the cream will soak up incredible amounts of fat. The trick is the reduce it. I don’t know if it works as a stand-alone gravy, but it works great as a sausage gravy. Just take maybe half a stick of butter, fry up a lb of fatty sausage in it, add a half-to-whole cup of heavy cream, and then just let it simmer/boil. For some reason all the water suddenly evaporates really quickly (maybe because the fats have a higher boiling point?), and you end up with this thick, silky delicious gravy. The cream seems to absorb other fats from the butter and meat easily in this way and doesn’t separate once thickened.

Kristie! So. My husband and I have been eating keto for about a month. It’s going really well, but I admit were often just eating plain old meat and some veggies for most meals. Salad with meat on top! When I saw this video, I knew we had to make it. Now I’ve watched a bunch of your videos and am very excited to try new things. You are now part of our family lexicon. Maybe it’s just me, but sometimes, after so many years of believing “fat is bad for you,” it sometimes feels “naughty” to eat something with a bunch of Kerrygold in it (or whatever fat, hello heavy cream). Now we say “Kristie says we should eat this!” Hehe. We say this affectionately because we love your recipes <3 We made this today, with your biscuits and it was DELISH. Even our picky teen daughter, who usually rolls her eyes at our "weird" food was smacking her lips at this:)

hi there. i am in texas and have trouble finding heavy cream. i have half/half and heavy whipping cream as my choices. Where have you found heavy cream in NC? I just figured walmart or aldis would have it…but not fortunate to find it yet.

I made this with Half a cup of heavy cream and half a cup of bone broth and the consitincy and taste are about the same but with far less calories per serving. Thanks Kristie this is still one of my fav recipes from you.
I don’t think you gave the xanthan gum method a fair shake. I think it would have been more fair if you did pretty much the same thing as the second method but without the other thickener you used and just added in the xanthan gum at the end.

Having started keto fairly recently, my hubby literally said, the very first thing, “you can’t stop making your famous traditional southern biscuits and sausage gravy.” Well, I’m going to be a hero on Sunday after church,for sure; perhaps even sooner. which one is better as a thickener psyllium husk or xanthan gum?
In Louisiana, File Gumbo, is made with Sassafras leaves for flavor and a thickening agent. Sassafras leaves have zero calories and zero carbs. A couple hundred years ago, flour was an imported product in Louisiana and very expensive, so they used locally grown powdered sassafras leaves to thicken the gumbo (called Fi ‘Le Gumbo). Sassafras roots made root beer.

thanks for the recipe. I made a very small amount of gravy with Carbquik and it turned out okay. I did not have the xanthan gum or broth. It was tolerable. the left over gravy I mixed with some cat food and gave it to the stray cats who adopted me.
I don’t think it’s very safe to use that scratched teflon pan any more, but thank you for the great thickening idea.
@blt7791 I’ll try that next time. One additional method I have discovered is to add cream and an egg yolk to the drippings. I’ll be using that method on my biscuits and gravy recipe.

This looks fabulous. I think I would go ahead and use a tsp of Kitchen Bouquet seasoning liquid though for flavor and color. It only adds 3 carbs to the whole thing from the vegetable base in it and would taste soooo much better than coffee I would think

This does look really good!! You made me think back to what my Mom would use to make her gravy brown. If I remember right, I believe it was called Master Gravy and it came in a tiny little brown bottle. I have no idea what kind of ingredience was in it LOL

Have you ever tried almond flour in gravy? I was wonder if it would go grainy!
Ground pork rind is a good thickening agent for sauces. You won’t get a perfectly smooth result but the taste and effect is nice and I’m not really a fuss-budget about textures generally.
Is the xanthum gum a necessity or can that be substituted with psyllium husk?

Made the mistake of using whipping cream instead of heavy cream, since it’s all I had at the time. Required much longer cooking time, which reduced the yield. My fault! Also substituted tapioca flour for xanthan gun, which also may caused slightly less thickening.

Made this and the biscuits for dinner tonight. It is FANTASTIC! I left out the garlic, but added everything else and I am so happy. My husband is saying thank you as well he has HD and this is the first biscuits and gravy he has had in 4 years.
@mark91345 you just use it like you would flour/cornstarch to thicken. mix with a little water and add it in. if you are making a dark colored stew/dish, then that’s what i would use. not any white sauces. I also like to let the stew reduce a lot to intensify the flavor.
