In a pan over medium heat, sweat down onions, pepper, garlic, and carrots. Add toasted spice mixture. Add zest, bay leaves, thyme, and orange juice reduce for 10 minutes. Add hand crushed tomatoes and olives simmer on low heat, covered for 30.
Hearty stews needn’t be meat-laden. Case in point: this rich, vibrantly-spiced vegan stew of eggplant, tomatoes, zucchini and peanut butter that is seasoned with North African spices like cumin, coriander, turmeric and cayenne. Fresh ginger and jalapeño add a little kick. Featured in: Strict Vegan.Heat 2 teaspoons olive oil in a large saucepan set over medium heat.
Add onion and cook until the onion is just starting to brown. Add the garlic, ginge.Vegan Chickpea Stew recipe tastes delicious with rice. I used my crock-pot and cooked the beef and other ingred. (except the potatoes) for 8 hours on low. Looks yummy! But as a moroccan we add cumin right after putting the heat off and never while cooking (like in Indian cuisine).. trust me it takes the taste to another level!

Hi! I love all your videos, and recipes. Thank-you for posting them. They give me all sorts of new ideas and insights. My grandson especially LOVED your sweet potato flat bread. A great way to get good food into his tummy since he claims he doesn’t like sweet potatoes! LOL! This next bit of information is for those cooks who don’t cook with jalapenos and serrano chiles too often. I noticed in the video on the ingredient list for the Japaleno a substitute of 2 to 3 serrano chiles is suggested for the ONE japaleno. Now I love serrano chiles, and prefer them over the Jalapenos because of the flavor, and they are hotter. In my experience if I need to sub one Jalapeno with serrano, I would use 1/2 a serrano chile to start off with. 2 to 3 serrano chiles would make the dish way, WAY hotter than one jalapeno, much hotter than what this recipe seems to call far. When comparing the various types of chiles the smaller the chiles, the hotter they are. The larger the pepper, the milder and sweeter they are. So an average jalapeno is much milder than an average innocent-looking serrano chile.

The lentils taste so good. I made my own jerk spice mix (google the recipe), the chickpeas taste so creamy too, love the coconut milk flavor. Pasta is amazing, better than the non vegan version and easier to cook, less mess. Love all the dishes. Thanks a lot!
