If you are sensitive to spice or heat you can always take the seeds out of the peppers or even use less peppers. This salsa is spicy, but my kids love it this way, and would be upset if it wasn’t on the spicy side.

Question. I’ve made something similar before, but when I do, the salsa has skin in it and it’s tough. I always strain it to get rid of the skin. You didn’t. Can you not taste/feel the skin? I blend super well in a Ninja blender.

I’ve made this recipe and variations thereof so many times, including with grilling the veggies first (including the tomato). One thing I’ve tried to figure out, if I use a bit more tomato, when I refrigerate, the salsa often has like an aspic quality? It becomes jello like, and I have to leave a room temperature for it to be enjoyable. Anyone know how to mitigate this effect? Sometimes it’s more of a problem when I use more onion, but I’m not so certain, as it’s happened at times when I used little-to-no onion.

Hi, love the first method caramelization of the vegetables gives it an awesome flavor. I found the second method using the blender cracked the tomato seeds and made the salsa slightly bitter.

You have to mix the tomato a little bit to have a better texture for a sauce.
I don’t doubt that is tasty but in Mexico no restaurants would serve that. The closest like that is the pico the gallo but that has lime juice. Mexican salsas ( most of them) are either toasted, boiled or fried.

Awesome video, reminds me of home as I am a Native American from New Mexico and us natives also have our own versions as we absolutely had to adopt the geniusness of salsa. I love using New Mexico green chiles, serranos, and poblano for a very robust pepper flavor.
Looks great! A trick with the comal so it doesn’t stick to it and easier clean up is put a piece of foil on it and then char/roast on top of that. It still works great and the pan will not get messed up. Once again salsa looks great, thanks!
Don’t use a blender, use a food processer. Even if you have to do it one ingredient at a time, and combine it in a bowl. It adds too much air into your salsa and messes with the flavor. Plus the shape of a blender means you have to liquidize whatever goes in, giving you far less control over the texture. Unless you’re trying to make something smooth, like a sauce to go into a squirt bottle, avoid the blender.

Try adding dried oregano!!! I use this every time it’s so good!!! I also blanch the Roma tomatoes and remove the skins but other than that I also put lime juice.

She only used a little of the water to make the salsa…You can bet a lot of the flavor from the vegetables and chilies was left in the water that never got used. I dunno, this recipe kinda goes against some basic principles of cooking. I would boil my vegetables and chilies in the exact amount of water I needed to make the salsa, no more, no less.

My most well known, home made salsa “Baile De Sabor: Samba” is as follows: Fresh ripe tomatoes, tomatillos, extra cilantro, fresh garlic, red and white onion, jalapenos, habernero, poblano, red and yellow bell pepper, limes, Himalayan salt, black pepper, cumin, and last but not least avacados. Every vegetable except the cilantro and avacado gets fire roasted and seared very well on both sides, for a huge depth of flavor in the salsa. A food processor is used for the chopping. Salsa is kept refrigerated. The salsa sits for at least 24 hours before eating, for all the flavors to fully release and work thier true magic. The avacados are added in as a cream, after blending in the food processor and it adds a beautiful creaminess and flavor to the salsa. Habernero adds an amazing flavor that most people dont realize and that pop of heat.
You made it look so easy, and it was, but mine came out too brown, almost like dark chocolate… maybe I over-toasted chiles? My pasillas looked darker than yours so maybe that’s why. It tastes pretty good though, in fact I “smeared” some on a flour tortilla and then made a quesadilla with it. That was delicious!

I dont think this can be frozen:( is there a way to store this for later use? For how long max? Also if i needed to make this for 1 or 2 servings at most how would the ingredient count change?

As a Spaniard I will never understand why salsa is considered a type of sauce when it literally means sauce in Spanish. It’s like no one bothered to check the meaning. “Hey check this out, when I asked they said it’s called salsa!”

Dang it! I made some street tacos tonight, and I used a tex mex recipe with chili power, cumin and tomato sauce. It was good, but not that I seen this, It gives me another idea for next time. Carna asado tacos with salsa roja looks fantastic!
I roasted my garden tomatoes, small onion, and a Serrano pepper. After I blended it with a big tablespoon of crushed garlic. I stemmed my cilantro and added that. My wife juiced my two little limes. I added 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 1/8 teaspoon of cumin, and 1/8 teaspoon of sugar and I forgot Chile’s you shown, but it still tasted okay. I use white onions instead of red. Many people have a sensitivity to red onions. They gives me headaches.

I tried to follow this recipe with Molcajete and was left very frustrated since in this instructions doesn’t show Grilled/roasted red onion being incorporated into this recipe with Molcajete. It was very challenging to have the red onions smashed in the Molcajete. To make it worse, I was so hungry making me some chicken tacos. Half way through, I ended up throwing everything in the food processor.
Is there a reason you char the first salsa ingredients but then boil the second salsa ingredients? Can I use charred ingredients in the blender?

Instead of chopping somethings I just chucked everything in, and it turned out delicious ONLY if you can handles spice.

I use that stone bowl, I can’t spell it, to make the best Garlic Ranch French Fry dipping Sauce ever, I crush two cloves of Garlic with a teaspoon of sea salt in that stone bowl just like you did it, then I put the garlic in a bowl with a one cup on Sour Cream, one half cup of mayo naise, then pour in buttermilk to your desired thickness, add some herbs of your choice, and “over the moon”, the garlic crushed in that bowl made some real magic just like she said.
Is this how salsa is made traditionally? The recipe I saw earlier called for roasting chillies on a flame, letting them cool and then deseeding them. The tomatoes were dunked in boiling water and left covered for 15 minutes. The skins then came off and the tomatoes were ready to be used. Hmmm… I’m not sure if I should go for this recipe or the one I mentioned. This one seems easier, but the other one seems tastier: S
