Meatless “Meat”balls 4 Ways

In a food processor, add the lentils, mushrooms, oil, curry, soy sauce and Sriracha. Pulse for 1 to 2 minutes or until well blended and texture is smooth. With a small scoop, dollop mixture into your hands and shape into small balls until all of the mixture is gone. Coat a skillet with cooking spray.
Ingredients 1 cup dried brown lentils, picked over and rinsed 1 bay leaf 2 cups vegetable broth (or water) 8 ounces cremini mushrooms (or white mushrooms), sliced ½ cup old-fashioned oats ½ cup flat-leaf parsley leaves 1 teaspoon dried oregano ½.Bake the lentil balls for 20-30 minutes, or until slightly browned. While the lentil balls are baking, add the mushroom broth, red wine, worcestershire sauce, onion powder, apple sauce, cornstarch and pepper to a saucepan. Whisk the mixture together and place it on the stove over.
Next, add lentils to a bowl and mash with a fork until the mixture starts to clump together. Try not to mash until completely smooth to add texture to the lentil balls. To mushrooms, add herbs, garlic, liquid aminos/soy sauce and lentils. Heat through and season to taste with salt and pepper.1 Preheat oven to 190°C.
To make pastry, combine flour and baking powder in a food processor on low speed. Add olive oil slowly until well combined. Add 60ml cold water, a little at a time, until.
Ingredients 2 cups cooked lentils 2 tablespoons scallions, chopped ½ jalapeno, de-seeded 3 cloves garlic, chopped ¼ cup cilantro 1 tablespoon tomato paste 1 egg 1/3 cup oat flour Salt and cayenne pepper to taste 1 cup of tomato sauce.In a food processor add the cooked lentils and mushrooms, pulse until finely chopped. In a large bowl add the mushroom mixture and the onion mixture. Mix with your hands to combined. Add more breadcrumbs if mixture is still sticky.
MEATBALLS 3 Tbsp (45 ml) + 1 tsp olive oil (divided) 1 medium shallot (minced) 3 cloves garlic* (minced) 1 batch flax egg (1 Tbsp (7g) flaxseed meal + 2 1/2 Tbsp (37 ml) water as original recipe is written) 1 1/2 cups cooked + cooled green lentils (cooked in vegetable stock) 1 1/2 Tbsp dried Italian.Roll the mixture into 1-inch balls (about 24 of them), and arrange them on the baking sheet or in the skillet. Lightly brush or spray the balls with about 1 tablespoon of olive oil. Bake for about 24 minutes, until firm and lightly browned, flipping the balls about halfway through.
Serve with your favorite sauce and optionally some pasta.Heat oven to 200C/180C fan/gas 6. Heat half the oil in a medium saucepan. Fry the onion for 3 mins, then add the mushrooms.
Cook for another 3 mins, then increase the heat.Preheat your oven to 200 degrees and prep a oven tray with baking paper. In a saucepan bring together the lentils, bay leaf, and vegetable stock. Boil, then lower the heat and simmer for about 10 minutes.
Remove from the heat, drain and let cool.Combine red lentil mixture and onion mixture in a large bowl. Add parsley, lemon juice, red pepper flakes, cumin, and salt; knead by hand until evenly distributed.
Step 4 Shape mixture into small logs or round balls and arrange on a plate.1 cup cooked lentils. 8 ounces cremini or baby bella mushrooms.
1/4 cup raw walnuts. 2 tablespoon ground flax seeds. 1-2 tablespoons coconut oil. 1/2 medium onion, chopped. 2 cloves garlic, chopped.
2 teaspoon rice vinegar. 1 tablespoon chopped fresh sage.Mushroom Walnut Lentil Balls Clean Eating paprika, mixed mushrooms, dried basil, grape seed oil, ground cayenne pepper and 11 more Spaghetti and Lentil Balls Yup, Its Vegan.
Lentil Meatballs 1 cup dried red lentils 200g, or sub 3 cups precooked or canned 1 tbsp olive oil + more for brushing the balls 1 large onion diced 3 garlic cloves minced 1 tbsp tomato paste 2 tsp curry powder of choice 1 tbsp soy sauce or tamari sauce ⅓ cup fresh coriander chopped ⅓.

Was searching this up cause meat is damn expensive and I’d rather get my protein elsewhere. They all look so delish
I’m a vegan too:).. 100% vegan. Proud vegan! And I don’t consume foods and products with dairy and eggs in it:( if you guys are vegan and want to try these recipes use the mixture of olive oil and baking powder. It will help to hold all the ingredients together. Or if you want to add different flavor, mashed banana is one of the healthiest substitute for egg. (I’m not sure though if that will taste good for you). Just a suggestion:) because anything healthy taste good for me..
What would you recommend as a substitute for the almond flour?
You vegans are the strangest lot. You don’t eat meat, you don’t want other people to eat meat because it’s “cruel,” you don’t want animals being killed to eat, but yet you eat “pretend” meat. So if you are REALLY against eating meat and LOVE your plant diet, you shouldn’t be pretending to eat meat because then you’re “pretending” to eat something from an animal. See how illogical that is? So if you’re TRULY into vegan eating, you shouldn’t be promoting ANYTHING similar to meat at ALL if you’re all into NO MEAT! Might as well make a big cow out of plants and then chop it up to eat. So in reality, you’re hypocrites because you’re promoting eating “meat” in another form. This is insanity!
If you need a vegan binding agent instead of eggs, try grated zucchini thats been wilted in the pan with some oil, works great

I just tried this recipe for the first time. I did everything except I forgot to put butter in the pan when the water evaporated from the mushrooms. I could not figure out why they weren’t browning so I put in a little oil. Sad to say, my mixture did not caramelize like it should have. I finished the rest of the recipe following it for the rest of the recipe. After they were done I tasted one and it still tasted like meat. They still came out better than I expected them to. The next time I make them I will be very conscious of putting the butter in and I bet they will come out like real meatballs. One or two of them did fall apart, but I didn’t care because they were still very good. Thank you so much, Chef John for sharing this recipe with us. I love watching all of your videos.
You sir should do more research about how dairy is more harmful to cows than raising them directly for meat lol. And chickens are also treated absolutely terribly for eggs as well.

No animals were harmed in the making of this recipe? Sadly your wrong, direct harmed no, indirectly yes. However you can make this dish truly vegetarian and cruelty free by adding an egg replacer of your choice. And Parmesan can be easily replaced bu adding a nutritional yeast and walnut crumb. It would be better for you as well.
Anyone know how well this would work if you froze the meatballs for later before throwing them in the oven?
I once met the most gorgeous woman who was staring at raw preformed meatballs in the meat case. She didn’t even know what binder and filler were, she couldn’t scramble and egg, she couldn’t cook at all. it didn’t matter to her at the time because she was being “kept” by a local French chef, in his fabulously expensive house. She relied exclusively on her external beauty and sexual favors. I reminded her that eventually gravity was going to get her just like the rest of us, and stood there teaching her to make her own basic foods like meatballs, coffee, eggs, oil and vinegar dressing. I think of her every time I hear about people who get ingredients mailed to them in a box with instructions on how to cook a tomato and a piece of fish… how helpless some young people are becoming. Cooking is a pleasure, not a task.

Why are you baking the meatballs, this would only dry them out making them rely on the sauce instead of being a standalone meatball, try frying in some garlic and onion oil to get them brown on the outside so much better that’s how I do them
FYI the purpose of targeting MEATLESS in your title is for people not interested in the consumption of MEAT or products. Next time try using Aqua faber as a binding agent or um a host of other substitution ingredients.

The basic recipe for someone who doesn’ have a specific one,is lentils (or any other legume)
oats (or any other grain) onion,greens and spices of our liking.
And then we can have a ton of variation,adding or substracting or changing some/all the ingredients.

Made a double batch. I made one batch after only 3.5hrs of refrigerating, and the second one the next day both had the same amazing results! The meatballs did not fall apart in the sauce. My husband said after his first bite, “so did you use beef for the meatballs?”
These are also light on the stomach.
Mushroom oat meatballs are not meatless, with the eggs! Could have used ground flax seed in place of the eggs. This is why I don’t trust restaurants “ meatless options. Sneaking in a nasty egg

Hey, John, in the off-chance that you read this… Do you think it would be possible to replace the salt in the mixing stage (with the eggs) with some soy sauce? Since I think that will add even more of a meaty flavor without actually containing meat. I’m thinking of making a swedish Pannbiff with this recipe (which are basically minced beef patties cooked in a pan, as the name would imply) and serving it with some nice baked potato wedges and a Swedish meatball gravy. What do you think?

I made some meatballs today based on this recipe, except: I didn’t have onions so I added onion powder; i used hand crushed chunky parmesan flakes; I added cumin; omitted the parsley; and I only let it rest for 1.5 hrs before shaping n baking. Texture: 9/10 Taste: like what I have imagined raw ground beef would taste like and a hint of doritos.

Hello! Are the red lentils raw and soaked or were they also cooked?
The egg production industry artificially inseminates chickens with a probe so they’ll lay frequently. They’re separated side by side in cramped metal wire cages with a “basket” underneath that sorts their eggs and leads to a production line. In these cages they can hardly move or walk at all.
The dairy industry actually slaughters the mothers once their milk production slows down. To produce milk a cow has to be artificially inseminated so she gets put into a rape rack. After she gives birth her kid is ripped away from her so the calf can’t drink her milk. It’s either slaughtered or raised up to be a dairy cow all over again. Just some education for y’all! Also cows mourn the loss of their kid and will cry out for them. They have a very strong maternal instinct/bond. Another thing to add would be that almond milk contains more calcium than cows milk, cows milk has also been proven to have negative effects on your health.
This is why vegetarians often switch to being vegan! Also should add it’s better for the environment.

Chef John, I want to thank you for this recipe! I made one change, Italian seasoning instead of just oregano, and doubled the recipe for game night snacks for my largely vegetarian group of family and friends. This dish is delicious and so much better than the meatless meatballs that come in a package! I was so glad to find it. I’m not vegetarian, nor is my husband, but we all ate them like crazy and even our friend who ‘hates’ mushrooms, gobbled them up! If you want to replace the egg in the recipe, try adding ground flaxseed. It is often used as egg replacement in baking. It serves as sort of glue to hold things together, it doesn’t cook like an egg does though.

To anyone who has made this, how is cost comparison of this recipe versus the equivalent (half a pound?) in beef? I can probably buy a 2 full chopped cups of mushrooms for about $6-8, and I have to add in the cost of a bag of oatmeal ($3.50, though I’ll use maybe $1 worth) and another say $0.30 for an egg. The cheese will likely bring this cost over that of beef.

I’m sorry to say to all the vegetarians that have tried and ate this, this recipe is not vegetarian. This recipe contains Parmesan cheese which is a non-vegetarian cheese. Parmesan cheese contains in most scenarios rennet which comes from a calf’s fourth stomach.
There is no such thing as meatless meat, don’t support mass delusion trends please:)

Wow, great tips on the egg substitute…I had no idea. Coincidentally, I was getting ready to do a zucchini meatball that is stuffed with vegan mozzarella and to make it totally vegan I needed an egg substitute. Also, what brand of parmesan did you find? Ok so eggs and Parmesan isn’t vegan but I can substitute that.
Just remember that traditional parmesan contains animal rennet derived from the stomach linings of calves, and is thus unsuitable for vegetarians. Just a word of warning.

Lastly, the National Sunday Law is about to be enforced upon us. It involves the Mark of the Beast. The Beast is a religious & political system, which includes the Pope and his followers. Their sign of authority or seal is Sunday observance because they claim to have authority over the Bible and they admit that Sunday worship is their mark of great power. (Revelation 13:6) (see Catholic Record, Sept.1, 1923).
They will seek to enforce worship on all. (See Revelation 13). IT is their plan to force all to come together, and to worship on the 1st day of the week (Sunday) and have that as the ONLY DAY of worship. They want everyone to forsake God’s law which includes keeping the Sabbath, and accept man’s tradition.
When it is *enforced*, and people accept Sunday worship INSTEAD of accepting the Seventh Day Sabbath (Saturday) as the Lord’s Day and only true day of worship, they will receive the mark of the Beast.
The system seeks to promote false worship.
So because Sunday sacredness is their mark of power; God’s seal is found only one place, and it’s in His 10 commandments, specifically the 4th (see Exodus 20:8-11; Revelation 14:7; Revelation 7:1-4)
Why:
It tells us the Name, the Title and Territory.
Name: Lord thy God
Title: Creator
Territory: Heaven and Earth.
So only those who truly love God will keep all His commandments and will be sealed for Him, for eternity. (See Revelation 12:17)
So, it’s our duty to keep God’s ten commandments, including the 4th which talks about the Sabbath because in the end, we have to chose 1 side.
Those who receive God’s seal will be saved and those who receive the mark of the Beast will be destroyed eternally.
It has always been about worship.
Now is the time to be serious about our soul, and not to believe in false doctrine, but to accept God’s truth from the Bible (see Isaiah 8:19,20).
By God’s grace, let us be ready for the time that is just before us.

Made these today and they do indeed fall apart if you don’t refrigerate them for four hours i fried them and they fell apart once I put them in the sauce and started stiring. Also try this with spiralized carrots or zucchini. Surprisingly tasted like spaghetti and meatballs with less carbs
Looks yummy. I would add a bit of Asian roasted curry powder (about 1/2 tea spoon) to this.
Do you think this would work with rice instead of bread crumbs?
Our balls struggle with staying formed/falling apart. I thought rice might be a run variation.

I don’t understand using vegetarian Parmesan cheese then using 2 eggs. If you want to go vegan then use soaked flax seeds not eggs.
Amazingly ironic, Beth has been researching zucchini meatballs since we have so much zucchini coming in off the vine. She is thinking zucchini meatballs and spaghetti squash for the “pasta” so to speak. I am sure she will get some nice tips out of this one. Ironic timing Jeff! And looks delicious! jamie

Flax egg or mashed up bean or mashed up potato will work beautifully instead of the egg. And of course, nutritional yeast instead of Parmesan
I’d still mix in meat with this, making a hybrid. I’m not interested in going meatless but I’ll reduce the amount I eat
Most of these comments are crazy! If you have special food requirements learn how to modify the recipes you like. If not, go to a channel that specializes in your chosen diet. Otherwise, complainers will eventually make a lot of fantastic You Tubers give up what they love doing. Being a creative cook is a passion. Creativity is quickly lost when others have their own wishlist and try and put their own ideas into what the outcome should be. Bottom line, create your own. Blessings
