There’s just one problem with these recipes. The only reason to eat salad is because it’s healthy. The moment you add a ton of calories via mayo, oil, bacon etc it ceases to be low cal, and therefore why bother eating it? If you want a huge heaping of fat, oil and salt eat something deep-fried. If you’re eating a salad, use a low fat (and low sugar) dressing on plain fresh salad ingredients ie lettuce of your choice, a green for fibre (baby spinach or rocket, arugula to americans) tomato, cucumber, salad/spring onion, a little avocado, capsicum and whatever fresh herb you like the taste of. Peel a little carrot onto it, substitute in blanched vegies like zucchini or broccoli, but whatever you do keep it lean or else what’s the point?

The panzanella is also loaded with two things that I can’t stand, cucumber and raw onion, as are far too many commercially prepared salads.
Nooo! Panzanella can’t just be plated up and served! It’s about the bread absorbing the dressing and the juice from the tomatoes they are not croutons! It needs to sit so everything can absorb! The bread is supposed to be soggy not crunchy! Which is why, much like french toast, Panzanella is best made with stale bread.

You shouldn’t use wax paper in the oven because it can melt. Use parchment paper.

It’s funny, in my family we made our own croutons out of stale bread. I personally don’t like store bought white bread since home made is far tastier. You can skip the butter altogether or use olive oil. I know some people prefer butter. Most of the flavor is in the seasonings so butter isn’t really necessary and does not contribute that much to the flavor once it is in the salad and covered in dressing. I don’t remember anyone in my family ever buying croutons.

CHef John, this recipe is a staple in our household. My husband makes them. I had been making fried croutons in small batches. Now we make THIS recipe and keep them for days. We eat them like chips; we use the crumbs in hamburger meat and other recipes; my hubby makes them the day before Thanksgiving dinner and includes them in the stuffing instead of using old bread or crumbs. It makes the most amazing meal. Thank you for this. I share this video with anyone who asks! <3
So I sort of didn’t answer your question.. lol. Truthfully, they last for a couple of weeks if we don’t use them up before that, if you keep them in the fridge.
We keep the leftover croutons in a ziploc bag in the fridge crisper. We use them like we would bread crumbs if we get tired of salads. For example: we add them crushed to hamburger meat, we add them to dressing for turkey dinner, etc. You will be amazed how creative you will get to use them up. Plus, like other people say, we tend to eat them like chips or popcorn. They are hard to resisit.
