Ingredients. 1 medium eggplant, washed and cut into small chunky pieces. ¼ cup shelled lightly salted pistachios, coarsely chopped. 3 sprigs fresh rosemary, washed and finely diced. 1 tablespoon smoked paprika.
1 tablespoon extra-virgin.Preheat oven to 375°F, and coat baking sheet with cooking spray. 2. Blend pistachios in blender or food processor until finely chopped.
Transfer to plate or shallow bowl. 3. Add sun-dried tomatoes, roasted red peppers, and garlic to blender or food processor (no need to rinse), and purée until smooth. 4.
In a small bowl, mix together the harissa, goat cheese, olive oil or water, balsamic and the garlic. When you pull the eggplants out of the oven use a spoon to brush the tops with the creamy harissa sauce and sprinkle the pistachios over the top. Garnish.For this vegetarian eggplant moussaka recipe, eggplant remains the star. I also add 2 to 3 russet potatoes and 2 zucchini.
All the veggies are sliced the long way to create our different layers. Eggplant needs a little extra TLC. So we start with giving our eggplant.

U can heavily salt the eggplants,leave for 1-2 hours,it’ll seep water, that’s the bitterness being extracted,u throw away the water then wash out the excess salt n then pat dry n gently squeeze to get out the salt even more…then u can fry or whatever else you’d like

Yesterday we made these fabulous eggplants for dinner and they are amazing!!! I had to make my own homemade pesto because I live too far to get the one you used but it was easy to find a recipe and now I’m going to use the rest of it in a minestrone soup… Keep up the good work!!!

Excuse me, but your #2 frig looks like it has black mold growing in it! Please take a few minutes to clean it out with some vinegar. Also, any reason why you don’t grow any green beans or peas? or corn? is it because you need to cook them and you limit yourself to a raw diet?
I tend to eat more vegetables then fruit. I find it hard to find good organic fruit here in Casselberry Florida unless I want to go to Whole paycheck, lol.

john you should learn about the harm of hybrid vegetables, this way your vegan diet can be even healthier and more focused
Do I have to move to California or a similar mild, steady year-round climate to practically live this lifestyle of economically eating a diet of fresh vegetables and fruit year-round? In the intermountain west US I’m stuck in inland areas that have harsh, long winters, or if not are very hot and arid. As such I would not be able to maintain a productive garden year-round, or at least a diverse one. I’m reliant on imported foods from the market, and homegrown foods have to be preserved (frozen, canned, dried, freeze dried, etc.) half of the year. I require permissive firearms laws and unfortunately that prevents me from moving to the west coast or a mild oceanic climate island, like Hawaii, where I could most easily have a verdant garden full of thriving fresh vegetables and fruit year-round. I’m willing to relocate for a better diet and health but am reluctant to leave the region. I’ve been researching climates. While I dislike humidity I’d consider moving to the southeast US if it would mean a much better diet and health, which I’m looking into. I dream of a diet like in this video.
I love this dish. Ate it a lot at the nearby Caribbean restaurant. But I didn’t know so much oil went into its preparation. Oops! Maybe I should it file this dish under “guilty pleasure”.

I love veggies and fruits (that I grow). When I came to the U.S. I knew how much hormones/antibiotics/vaccines animal products were getting and I stayed away from it for 15 years. I only ate raw milk cheese from Europe once a month….I was always weak. then i read the book “it’s all in your head” by dr huggins that explained how in his NON SPONSORED studies he noticed that a 100% plant diet didn’t allow the body to detox heavy metals (animal products are complete proteins)….. and I was poisoned with mercury from living behind a coal power plant… so 12 years after I was poisoned I added farmers’ veal liver, eggs, raw milk cheese from France/Italy, fish, beef (once a month) and I stopped being cold and I got my strenght back…… without even doing chelation……… Check your metals load before going plant based. Personally if food is clean and with no poisons, the body can handle it. I feed it all kinds of foods.
John nobody knows more than you about this stuff but how about a video on designing a kitchen for the lifestyle? I think Ann Wigmore kept pulp scraps in large laundry like open cloth containers in her kitchen without odors. I love French Door Refrigerators over others since all your produce is close to eye level and easier to see comparatively. What about countertops, juicer & blender storage, stove tops..etc. etc.. #goodbetterbest!

I did make my own pesto from scratch and use spelt grains instead of Quinoa which I did not have in the kitchen and mushrooms in place of courgettes but never the less turned out fab and my husband loved it!:) Many thanks! hi John. I’m really impressed with your garden. I’m also amazed that you have three refrigerators! I don’t know if I could eat all that food without it going bad. Of course I don’t have a juicer so there is that. Anyway, I just wanted to say that your dog is so cute! A lot of people don’t know that dogs can be vegan. Of course, cats are obligate carnivores but dogs can be vegan and it’s so nice to see that you are talking about feeding your dog fresh fruits and vegetables. It would be nice if you had an episode on how healthy a pet can be if the pet is eating a vegan diet, well if it’s a dog.
I think Markus Rothkranz did a video where he interviewed a veterinarian who talked about how awful the pet food industry is and how it is destroying the health of our pets. I wonder if you could find a veterinarian like that to interview so that I could send the video to my parents. You wouldn’t believe how much cat food that they buy for this cat. And I know that most of it is junk. This cat loves kibble the same way that most people love chips. if they could see a veterinarian talking about how bad kibble is for a cat then it might keep them from buying it. It would also be good if the vet could talk about what kind of meat would be best to buy for your cat. I know from the price pottenger experiments that cats fed raw meat do better than cats were fed a cooked food diet. The problem is that my parents are afraid that feeding cat raw meat is going to introduce bad things into the cat’s diet. but, cats were designed to eat raw meat. In fact the cat they had previously used to catch and eat lizards. Of course, he still ate the food that my parents gave him. And at the end he was very very sickly.
My best friend also has a dog. so, she could also benefit from seeing a video of an interview with a veterinarian.

Like John implied getting sick is about catching a virus, not about what you eat. You’ll feel better vegan but you can still catch your death. Its incredibly common for McD eatining, corndog injesting, high corn syrup spewing folks to never have had a cold in the last 40 yrs…

Have you ever been sick while vegan? I notice that in my vegan journey, which has lasted about a year and a half, I haven’t gotten sick at all. This is odd for me because before going vegan, I’d get sick at least twice a year and extremely sick at least once. Sick as in colds, fevers, virus, ect. Love your videos!!

Hi John just a comment,,, B12 is actually derived from the soil and the dust that us gardeners breath in on a daily basis,your b12 is fine. In addition I cant fathom eating all that food. Your a far piece from being down to seeds and stems as we,d say back in the 70s
what a great idea, the sweetness of the pistachios and balsamic helps balance all that provençal richness/umami.
