There is a big debate that VEG biryani is NOT actual biryani as it doesn’t get enough time for the “dum”. Meats can be cooked for hours which also incredibly increases the “dum” in the biryani so naturally, meat goes best with it. When you cook vegetables for such a long time, they literally burn and become too mushy.
If you go to Hyderabad people look at you weird if you ask for “veg” biryani. They just don’t have the concept of that.
NOT TRYING TO OFFEND ANYONE HERE. Just a fun fact.

I did this recipe 3 times till now. But everytime i ended up keeping presdure cooker for 15 whistles(5*3 times) because both vegetables and rice did not get cook well. Not sure what iam doing wrong. Before putting vegetables in cooker i make sure vegetables shrink for 30 minutes. Any tips/tricks?
Have tried this biryani many times… comes out amazing… thanks for the recipe… guys the choice of vegetables is absolutely personal… but I must tell you addition of mushroom or avoiding tomatoes doesn’t change the taste of this biryani.. do give it a try before making negative comments

Malabari veg Biriyani is not like that. We never use cumin seeds in Biriyani.

Ma’am wonderful recipe tutorial but with all respect I would like to tell you that it’s not biryani it’s pulav.
I usually follow Ur recipes…but with 25 mins simmer, rice didn’t cook and water was also remaining. So I put it on high to get 1 whistle and switched off but the bottom rice burnt. All my efforts went in vain. I suppose the last step of just simmer for 25 mins isn’t correct. Pls check

For those who use electric pressure cookers like I do, I cup (225gms) plus 1 1/4 cups water needs to be cooked on high pressure for 5 mins + 10 mins on natural release. I hope this helps. I also added 1/4 cup yogurt. I would add less salt from the recommended amount in the future. Thank you Kabita!

Can you use a pressure cooker (cooker) to do the dum part? If not how do you make the atta to seal a regular pan? Every time I try it’s too sticky.
