Ingredients 1 ½ cups butter, softened 2 cups packed brown sugar 1 cup white sugar 1 (15 ounce) can pumpkin puree 1 egg 1 teaspoon vanilla extract 4 cups all-purpose flour 2 cups quick-cooking oats.I cannot leave well enough alone. As soon as I think I’ve found my chocolate chip cookie recipe, another one saunters across my computer screen singing its siren song. It drives my husband crazy, because the only recipe he wants is from his Alpha-Bakery cookbook (circa 1987). But I need more excitement in the baked goods department, which is how these voluptuous pumpkin oatmeal chocolate.
Preheat oven to 350F and line a cookie sheet with parchment paper. In the bowl of a stand mixer, beat together butter and brown sugar until light and fluffy. Add eggs one at a time, mixing after each addition. Pour in pumpkin puree and vanilla and mix to combine.Ingredients 2 cups + 1 Tablespoon ( 258g) all-purpose flour ( spoon & leveled) 1 teaspoon baking soda 2 teaspoons ground cinnamon 2 teaspoons pumpkin pie spice * 1/2 teaspoon salt 1 and 1/2 cups ( 120g) old-fashioned rolled oats.
Preheat the oven to 350. Mix all the dry ingredients (flour, oats, cinnamon, allspice, nutmeg, ginger, salt, baking soda) together in a small bowl. Beat the sugar in a mixing bowl until light and fluffly. Add the white and brown sugar and continue to mix until well combined.How to Make Pumpkin Oatmeal Cookies To make these pumpkin oatmeal chocolate chip cookies, first whisk together the wet ingredients with the two kinds of sugar.
Stir in the dry ingredients, then gently fold in the chocolate chips. Scoop the cookie dough into balls and place on a tray or plate.Stir together dry ingredients (flour, oats, cinnamon, baking soda, sea salt, nutmeg) in a mixing bowl. Mix together wet ingredients (pumpkin, sugar, coconut oil, flaxseed and vanilla) in a separate mixing bowl.
Combine wet and dry ingredients. Stir in 1/4 cup chocolate chips.Blend in egg then blend in vanilla extract and pumpkin puree.
With mixer set on low speed, slowly add in dry ingredients and mix until combined. Mix in chocolate chips and pecans (if you want some chocolate to show through set some aside to press into tops before baking).In a large bowl, with hand mixers beat together the butter (softened and not melted) with the brown sugar and white sugar. Beat in the pumpkin, egg yolk, and vanilla. (Make sure your canned pumpkin is high quality and not watery. If it is watery your cookies will be more cakey.

Scrumptious! We don’t have access to any pre-made pumpkin puree in Australia but I can make my own or roast some sweet potato and use the flesh from that instead. Will definitely give these a go though, thanks!:)
Take bowl out some water in it. Microwave till the water is steaming. Throw the water out. Place the bowl over the butter for about 30 to 60 seconds. And presto…. you have softened butter

Yum! I find that slightly runny butter gives the cookie a chewier texture!
When I was a kid, we had a family member who worked at DAD’S. They made the best oatmeal chocolate chip cookies, and were HUGE! I love the flavour SO MUCH and would actually nuke them to get them a bit soft and the chips all melty. THIS reminds me of them, plus with pumpkin spice? OH YES! Love these……sigh…now to find the time. LOL (We don’t have pumpkin puree here, so I have to roast and mash fresh pumpkin like Laura Ingalls). LOL
