Ingredients 3 small summer squashes (total 1½ pounds) 3 fresh Anaheim peppers, seeded and chopped 1¾ pounds boneless, skinless chicken breast 1 teaspoon salt, divided 2 cups lactose-free milk.Cook rice according to package directions. In a large bowl, combine the soup, mayonnaise and milk. Stir in the chicken, squash, onion, pimientos, thyme, garlic powder, pepper and cooked rice. Spoon into a 2-qt. baking dish coated with cooking spray.
Heat olive oil in a large skillet over medium heat. Add zucchini and yellow squash; cook, stirring frequently, until fork-tender, about 4 minutes. Stir in white and light green parts of scallions, chili powder, cumin, and garlic powder. Set aside scallion tops for garnish.In casserole dish place remaining chopped tomato on bottom of dish.
Then add 6 tortillas. Pour squash mixture on top of first layer of tortillas and then add shredded chicken on top of squash mixture. Add ½ of grated cheese and then layer with more tortillas and the remaining squash mixture and chicken.

3 medium-size yellow squash, thinly sliced. 1 large red bell pepper, cut into 1/2-inch pieces. 1 yellow onion, thinly sliced. 2 tablespoons peanut oil. 3 cups shredded cooked chicken or turkey.
12 (6-inch) corn tortillas, cut into 1-inch pieces.Remove from the oven and allow squash to cool. Scrape out the insides with a fork and put in a bowl.
Set aside. Roast chicken: My absolute favorite way to make shredded chicken for a recipe like this one is to roast bone-in chicken breasts in the oven. (You can also use poached boneless breasts or even store-bought rotisserie).Spoon into the greased casserole.
Top with crumbs and cheese then dot with butter. Dot with remaining butter. Bake for 30 -35 minutes. Tips.

Looks good. I make mine similar. The only difference is that I don’t boil the zucchini. I let it cook during the baking process.

Yum, yellow and also green squash would be colorful. I also want to add that diced breakfast ham would also work in this. I have used your tuna mac/cheese and subbed in the diced ham and it is wonderful and also real crab meat on special occasions. Love your recipes and how I can make them my own with your help! Love the ritz crackers and this takes me back to my mom and how she would make a topping even on her scalloped potatoes:) Thank you for the reminder as I always have these crackers on hand. Great sounding dish and perfect for the season of my garden. I will try today with grey squash because thats what I have. The sauce recipe is what I needed most. Glad to see crackers used. It is an often used trick for old guys to just add crackers and call it gourmet.
Its amazing how people claim to cook a “southern style old timey” dish and then throw in things like Parmesan cheese, mayonnaise etc etc. Most old timey southern recipes originated on the farm…with people who had only the products of the farm to rely on and that did not include parmesan cheese. Cheddar was available in wheels at the general store that most folks purchased a wedge of and that was the cheese they made their dishes with. Farm wives had eggs and they had rich creamy milk from milking their cows and they made their own cream butter so those were the ingredients in many casseroles. Try making squash casserole with really the basics used in mac and cheese (southern style). Very simple…….eggs, whole milk, salt and pepper, layers of grated cheddar and topped with crumbled saltines or dried bread crumbs. Pour melted butter over the top for a wonderful buttery topping.

Thank you for recipe, I made this last night as its perfect for my keto diet. I did not add the cracker topping in order to keep it keto. Great flavor. Came out very good and bacon adds nice flavor. I added some roasted serranos cuz they were in my fridge and i like spicy foods. Gave it a nice kick next time i will add 2 eggs as it didn’t come out with a firmer soufflé like consistency that i was looking for, it came out a bit more runny than what i wanted but i did use 3 squash since it is all that i had jnstead of the 4 recipe called for. I did adjust the cream for the amt of squash i used. Will definitely make it again!
I like this version. I have been boiling squash first then mashing. This method the squash looks sturdier than mushy!!

Looks good, this Sabbath is potluck at church, so will substitute the bacon and use olive oil and maybe a spice or two and let the church taste it!
I would use the bacon grease in the casserole and take the bacon out. I do not like fatty meat in my food. It does not stay crispy it turns to pure flubber yuk yuk. The rest of the ingredients sounds delish.

I have a question what is the difference between heavy whipping cream and heavy cream? Can I use heavy whipping cream if I have it available? I have some zucchini and some squash that I need to use. I don’t have Ritz crackers but I do intend on using Panko.

Hi Angelica I have an easy squash side dish that goes very well alongside fish (calabacitas) chopped tomato and chopped onion sauzeed in melted butter in a pan big enough for the squash. When onion is translucent, add the sliced yellow squash and the sliced zucchini and cook till tender and add salt and pepper. I also add garlic powder. when all squash is cooked I sprinkle shredded co jack cheese on top (as much as you want) put the lid on and let the cheese melt for about 5 to 10 minutes and enjoy. really easy and so good next to grilled fish or even fishsticks.

My grandmother always used Ritz crackers in her clam casserole. Even way up here in the North saltine crackers weren’t used very often in recipes except for the Girl Scouts blushing bunnies. That was one of the first recipes I ever learned. Now I write cookbooks and I come up with my own recipes.:-)

I haven’t made a squash casserole in years, but I made it just like this except I used sour cream instead of mayonnaise. I would think either would work great. This was always one of my favorite casseroles to do when having a big dinner for singing friends or to carry to a church dinner. Thank you. Love it.
