i have tried a lot of recipes off youtube and this one did not turn out as hoped. i tried this recipe and method exactly and got a soft mushy crust. attempted to leave it in the oven longer and got a really over cooked salmon. if i could make any changes would toss the butter and bread crumbs in a pan till golden brown and then continue the process.

Absolutely gorgeous dish Chef. What species of Salmon do you recommend? I’ve had Salmon several times but with mixed results. I’ve had it where it just tastes amazing, and other times where it’s just gross and fishy tasting. I know freshness has a lot to do with it, but I’ve had restaurant Salmon dishes with the same results. I can only attribute it to maybe the type of Salmon it is, any thoughts? I’m a cook as well, so I have somewhat of an understanding of different foods, but this escapes me lol.

cook your bread crumb and herb mix in the oven before there is no way a thick layer like that is even remotely cooked in 10 minutes. And you would want to taste the fish, not the bread crumb only
