Not interested in hearing that continuous repetitive annoying music. I couldn’t make it through this video.
This recipe is so off that I don’t know where start. The dry to liquid ingredients is off by a lot and it is not due to humidity (in the flour). I rolled them thin and even after +5 mins in the oven of the baking time still doughy. This is obvious a recipe of someone that is either using an uncalibrated oven and didn’t really measure the 1 cup of water but eyeball it.

I use a thin-walled glass to cut them out. I don’t like to buy special tools if I can help it. You can also cut squares with a pizza cutter. I also use a pasta mill to roll the dough. I don’t put the noodle cutter on, so it just makes a long, narrow sheet about 6″ wide, any thickness I want. Also, instead of poking with a toothpick, use a fork. It is 4 times faster.
