I’ve been on a keto diet for about 2 weeks and I was wondering how would I get back into consuming carbs? Do I go back to my “maintenance” calories with carbs or do I slowly add them in maybe 25-50 grams of carbs per week?

Saturated fats are neither bad or good. It depends on your diet as a whole. I am on keto. In that context saturated fats are good. If you are on high carb then you should avoid it.

I have been trying to doublecheck if the fats I am using for frying are the best.
I use coconut oil. For my surprise, when I look up Smoke Point for oils. Even refine olive oil, for instance, has a higher value. Macadamia nut oil appears in all the papers with the highest S.P. (difficult to find and quite expensive as Avocado Oil or Ghee butter)
Any thoughts why this massive contradiction??

11:15 wait that doesn’t seem quite right. If the daily recommendation is 20-30% of calories as fat but only recommends 10% unsaturated and saturated as low as possible. Where is the 10-20% missing?

we cannot use dietary fats. They can pass right through us, rendered down further by digestive enzymes ending up in the toilet or harm us as rancid and oxidized fats and oils can do. Dietary sugars make human fats and any kind of fats in the body all have their origins in a ribose molecule including ketones. If any exogenous molecule is that stable and hardy, impervious to much criteria then it will pass on right through to the toilet like so much corn and or peanuts. When u speak to “dietary fat” what is the molecule state? What condition is this molecule u and others hang their hat on. The fat molecule in a live cow say, is not at all the same after the cow dies, decay dynamics break it down. If the cow is rushed, soon after death to a freezer then decay dynamics are suspened. However, thawing out the meat will once again expose the molecules rendering them altered. Further, cooking will againg alter (destroy) the molecule. And then we have human digestion which seals the deal on this once intact molecule, in the live cow, no longer being intact. So when u speak to dietary fat tell us about the state of the molecule that matters a whole hell of a lot. A molecule altered in any way shape or form is useless (physics and chem 101) or not the same as it was before altered no longer with the same functions. Dietary fat in know way shape or form thus is providing any kind of fuel.

Great info overall, but if I may offer one slight correction: MCT’s are still saturated. They are liquid because the chains are short enough that the melting point is below room temperature. There is a direct relationship between carbon chain length and melting point.

I’ve heard that when cooking with say coconut oil you want to heat it but definitely don’t want it hot enough that it starts to smoke. it is at that point where it becomes not a good oil to ingest. is this true? Can you ask the Doc for a good clarification on this?

Saturated fats are the key to health. you’re echoing bs from decades ago that has been disproved.
Short summary,
You want to cook with saturated fats because they are most stable on heat. The higher the percentage of saturated fat, the more stable it is for cooking. So cook with coconut oil, perhaps butter?
Do not buy any type of fats in the plastic or transparent containers because it doesn’t do good to the fat if it comes in contact with the light. Even the fish oil should be in the dark capsule, that way it doesn’t come in light with the sun. Polyunsaturated fats aren’t found in the nature. Canola oil, corn oil, soybean oil. Never buy them in containers which are transparent. The only ones you need to consume are fish oils/omega 3. The fish oil is the only polyunsaturated fat is great and never cook with them (canola, corn, soybean).
Monounsaturated fats are the king. Avocado oil (avocados), olive oil, egg yolks, nuts.
Some other good sources are: red palm oil, sesame oil use as a conditioning.
I hope I grasped it alright because I had to re-watch this video 3 times. I had trouble understanding the Dr. Serrano, anyways thanks for uploading good infos.
So even get coconut oil in a dark container or is it ok cuz it’s saturated? For cooking get the hard style coconut oil that still has the saturated fat in it? Make sure my olive oils and other oils are in dark glass container. My fish oils come in regular style non dar capsule but are in non transparent plastic container good to go???

Great info!!! I’m surprised that there was no mention of how beneficial Macadamia nut oil is, or the high Omega-6/3 ratio of Olive Oil which isn’t great. I’ve heard that Macadamia nut oil is great for cooking, but I can’t find anyone that sells it locally (Grocery store, Whole Foods, etc.).
So educational, I have never heard FAT explained so well. I now have it on my phone for when I go shopping I can read FAT content. thank you so much
Absolutely agree with Dr. Serrano! I’ve been cooking with bison tallow, pasture raised lard and ghee for about 3 years. I mostly use butter on meats, oats, potatoes and veggies because sometimes it can smoke easy due to trace milk solids! In addition to this, the saturated fat has increased my testosterone to an optimal level! That is great for me as a woman working to build muscle and health thank you John!

You might be shocked to know that food companies although they have to label foods that contain trans fats are allowed to add up to half a gram per serving and still call it zero on the label. Look for words hydrogenated partially hydrogenated or shortening.
Please, do not appeal to American Dietary Guidelines, there’s a lot of bullshit since 1977.
awesome video! I always try to choose monounsaturated fats over polyunsaturated fats. However, one of my FAVORITE fats in all natural, no bullshit oils/sugar added sunflower seed butter…after looking up the fat profile of sunflower seeds, I realize they actually have more polyunsaturated fats than mono! should I be concerned if I microwave this nut butter with my meat/rice for 4 minutes? I do however consume great amounts of olive oil, coconut oil, and avocado oil fats in my diet. Thanks so much John!

When I started on my own fitness Journey 1 year ago I was a senior medical student in Poland. I knew about the benefits of coconut oil, and eating whole eggs. Good informative video…but…At 38 I triple by surgery, my surgeon, dietian cardiologist and physician have all said to stay away from and do not cook with or ingest coconut oil, avacodo oil but Olive Oil is OK but not to cook with cook with water and then drizzle olive oil on your food. So if Im to understand the Dr. Serrano…my surgeon, cardiologist, dietian, and physician are all wrong?? I’m sure over the years of practice individually and combined that they would know this same information and in fact I discuss what to cook with, eat etc etc… Lol. In 1952 a scientist claimed saturated fats/ just fats are bad for you because he saw that Americans eat a lot of fatty foods and die a lot and he compared it with Japan which eat little fatty foods and have a low death rate, explain to me how stupid and not stable this research is?? Its a small one but remember they are called monoacylglycerol diacylglycerol and triacylglycerol now. It will cost you points in an examination to forget this.

If we have 2 essential fatty acid in the body ( omega 3 and 6 wich actually some people say our body can produce it) does it mean that we don’t need to focus on eating fat since our body will produce it anyway if we have enough other carbs and portein from a whole food diet? even low fat food have minimal amount of fat, exemple you can find omega 3 in brocolis and papaya…. I primarily use clarified butter for high heat cooking. I find the flavor of coconut oil to be too strong for me, and the milk solids in regular butter burn when cooking at high heat. Thoughts on clarified butter for cooking?

Hi John, every couple of weeks I get my bloodwork done (I’m an AAS user). Everything is always fine except my cholesterol. My LDL is slightly raised, but the real bad one is my HDL. Last time my HDL was lower than 3. My cycle now last for 10 more weeks and then after my first competition I will go completely off. I hope my cholesterol recovers, is there anything I can do while on cycle to improve my cholesterol? Already taking Omega-3 fish oils and lots of other vitamins/supplements. Thanks.
Would you suggest certain times to consume fats? I’ve heard pre workout they can be used beneficial whereas post it’s better to have high carb, moderate protein and low fat?
Is there a limit to how much fat i can eat? I was thinking about a very high fat diet to gain weight, hope it might be easier to digest than loads of carbs, im trying to bulk but i keep getting digestion problems

Interesting video again. What about including the “essential” Omega 3’s and 6’s in the form before they are “converted” into the oils found in Fish? I take Udo’s oil which you’ve probably heard of and is a plant based form of the 3’s and 6’s.

Have you heard people talk about Meyaanit Fatty Escapeify (should be on google have a look )? Ive heard some interesting things about it and my work buddy got great success with it.

When u speak to “dietary fat” what is the molecule state? What condition is this molecule u and others hang their hat on. The fat molecule in a live cow say, is not at all the same after the cow dies, decay dynamics break it down. If the cow is rushed, soon after death to a freezer then decay dynamics are suspened. However, thawing out the meat will once again expose the molecules rendering them altered. Further, cooking will againg alter (destroy) the molecule. And then we have human digestion which seals the deal on this once intact molecule, in the live cow, no longer being intact. So when u speak to dietary fat tell us about the state of the molecule that matters a whole hell of a lot. A molecule altered in any way shape or form is useless (physics and chem 101) or not the same as it was before altered no longer with the same functions. Dietary fat in know way shape or form thus is providing any kind of fuel. we cannot use dietary fats. They can pass right through us, rendered down further by digestive enzymes ending up in the toilet or harm us as rancid and oxidized fats and oils can do. Dietary sugars make human fats and any kind of fats in the body all have their origins in a ribose molecule including ketones. If any exogenous molecule is that stable and hardy, impervious to much criteria then it will pass on right through to the toilet like so much corn and or peanuts….
you shouldn’t cook with poly unsaturated fats….so…have any of you on this thread heard that most olive oil in the US is actually mostly Soy bean oil which would be exactly what you wouldn’t want to cook with?
