Ingredients 2 large zucchini 1 tablespoon salt 1 pound ground beef 1 ½ teaspoons ground black pepper 1 small green bell pepper, diced 1 onion, diced 1 cup tomato paste 1 (16 ounce) can tomato sauce ¼ cup red wine 2 tablespoons chopped fresh basil 1.Ingredients 1 pound 93% lean ground beef 1 1/4 teaspoons kosher salt 1 teaspoon olive oil 1/2 large onion, chopped 3 garlic cloves, minced 1 (28-ounce) can crushed tomatoes 2 tablespoons chopped fresh basil Freshly ground black pepper 3 medium zucchini Cooking spray.For the vegetables: 1 1/2 pounds zucchini, ends trimmed and sliced lengthwise 1/4 inch thick 3 tablespoons olive oil 1 3/4 pounds cremini mushroom.When you think of lasagna, the signature wide, flat pasta noodles come to mind.In this recipe, zucchini replaces the noodles, boosting the nutritional value while providing a slightly different texture than a traditional lasagna. Plus, the zucchini drastically lowers the carb count.

You can buy two big jars of the Raos sauce at Costco for the price of 1 jar at Publix. Do you not recommend full fat mozzarella cheese? Looks good. Will have to try this. TFS. Connie

Coat the inside of your foil with PAM or equivilent, so it doesn’t stick to the cheese.

You can also roast your zucchini in the oven to get rid of some of the water.
She’s got great ideas…appreciate this a lot. And, using the word “healthy” when using other ingredients that are not (meat, cheese, etc) is what so many cooks say to intice us. I hope the word “healthy” becomes used in an accurate and truthful way.
Her technique info is useful and as a Chef, I’ve learned from this you tuber… but… healthy this dish is NOT.

You should cook the meat until the water is reduced and sounds like frying. Extra flavor.

Perfect recipe. You can also make smaller lasagna in dollar store foil pans and freeze for later. Bake when needed. You can probably get three smaller lasagna out of this recipe.
It takes under a minute to chop an onion, and its probably a lot cheaper too

You can bump up your veggie content by adding spinach. I use frozen and allow it to thaw then I squeeze it with in a cloth until I get as much moisture out as I possibly can.
Adding it to your sauce is a great option, or for a beautiful green & white layerto your cheese mixture.
I LOVE the grilling technique! Plus it adds the extra flavor. Having girls over for a birthday lunch and will make this recipe sans the meat and with Alfredo/pesto sauce! I’ll let you know how it turns out….

Great recipe! Carrots will throw you out of ketosis mind you. Need meat and sausage but this is simple as it gets!
I use Hunts with no added sugar. It’s 4 grams of net carbs and it’s under a dollar a can. I could never ever afford to buy Rao’s no matter how good it is. I have always used Hunts even when I wasn’t on Keto. It’s delicious. Also, why are you paying attention to the whole fat kind of ricotta when you bought part skim mozzarella. Shouldn’t that be whole fat as well? And I don’t use the processed parmesan in a jar anymore. That is junk. It has stuff in it to keep it fresh. Grate your own from fresh and keep it in the fridge. It is so much healthier.

I never thought to add shredded carrots and chopped spinach to lasagna cheese mixture. Great way to add extra veggies.
I would still lay them down like lasagna instead of roll still nee sauce at the bottom regardless how you do it but less work instead of rolling same sequence

I make this with zucchini, eggplant and bechamel sauce. I call it moussaka.
it’s Keto, but don’t add the sugar, be mindful of the tomatoe paste as that contains a high concentration of carbs and some times sugar, use the sauce instead and add add tomatoes if you want.
This size of dish should last you about 7-8 servings!

Lasagna simply means, in layers, which this recipe follows with meat, then cheese, etc. Though I would not use Raos as it costs $10 a jar. TFS❣️

I would of just laid the zucchini flat like lasagna noodles and layered meat, cheese, ricotta, sauce and repeat….stacking it like a Neapolitan. would be much easier!

As a follow-up I tried the recipe and it came out too runny. This was because I used my convention counter top oven and should of done it in my stove oven. I loved my flavors because I did an onion & garlic sofrito and added Italian seasonings & fresh basil & added my spaghetti sauce of choice. So next time no short cuts…She did warn us to be sure we dried out the zucchini well.
Doesn’t even say how long and at what temperature to bake. These things are important!

BLEH, not a real lasagna. This is just as bad as a cottage cheese lasagna. Real lasagna has meat in it. Anything else is a counterfeit in my opinion.

I’m making this right now! But, I changed it up a little bit. I added a ground beef, onions, peppers, chopped garlic mixture. I also found it easier to spread the ricotta on the zucchini first, then the sauce, topped with the beef mixture, and mozz cheese. Repeat three times and in the oven till done! Made this last night and it was so delicious! Make sure you use a deep dish 9×13 to safely hold it all with no overflowing!
I substituted eggplant for the zucchini. I grilled the eggplant like you did with the zucchini. I like the eggplant flavor. I remove the skin of the eggplant as it can be tough in the lasagna. Tastes great. Raos is a good sauce if you don’t want to make your own.

This is the 2nd and to see how much your face has changed in a little over a year, from what I assume is due to low carb, is remarkable. I’ve been low carb for 1.5 years and I still have my pudge-faced license in my wallet as a reminder of where I’ve been.
I always put more veggies in the saus. Cut op unions, bellpeppers, carrots, leek, caulifower, greenbeans, peas, sellery, what ever sounds good and or l have left over.
You can also lightly salt them and cover to sweat the zucchini instead of pre baking.

I rather make a vegan version of this. I use firm tofu and blend sautés spinach with fine chopped onion and fine pressed garlic and salt and adobo seasonings and Italian seasonings. For my meat I used cooked lentils I cook with chop veggies garlic and onions and cilantro.

Why no onions or garlic? I would add these to the pasta sauce as well as the ground beef. If I made this lasagna I would probably put one layer of noodles in the middle.

I discovered Rao a couple of years ago. It’s more expensive but I love it.
Yesss! I do something very similar, but I use a pound each of sausage and hamburger, and make it like a regular lasagna. Just use the zucchini as my noodles, and I use an Italian herb mix too. Grate the garlic if you want it dispersed more evenly. Sooooo goooooodddddd!!!
