In a medium bowl with a hand mixer or using a stand mixer, combine cream cheese, vanilla, lemon juice, and agave syrup.This easy no bake sugar free cheesecake has a silky-smooth, creamy filling and a buttery almond flour crust. It’s a low carb cheesecake recipe the whole family is going to love – in fact, you’d never guess it’s sugar free, gluten free and keto.
Mix the almond flour and nut butter until well combined. Line the bases of 6–8 12–14 cm springform cake tins with baking paper. Press some mixture into each base.
You might have some left over – use it to scatter on top of the cheesecakes.Preheat oven to 350°F. Mix the almond flour, butter and sugar substitute in a bowl. Spray 8×8 square pan (or pie plate) with cooking spray, and press this mixture evenly into the pan.

Pro tip: separate the egg yolks and beat the egg whites with your KitchenAid mixer. The egg whites will fluff, then add the yolks back. Beat, then add your other ingredients. It’ll be a lot more fluffier.
I’ve made this many times. It is amazing. OMG, adding the lemon makes it so much better. I don’t cook the strawberries though. I blend a few with a little stevia and then slice the rest by hand and mix the slices with a little more stevia. So good!

I have had the cheesecake ‘split’…I have found that if you turn your oven off, and open the door of the oven slightly…by letting the cheesecake cool down slowly, this eliminates a cracking cheesecake. I also add lemon extract..oh my…so good! I also freeze once it has cooled down, and before serving, thaw slightly. Wowsie Wow wow, so good!
I make this all the time…if you mix up the filling except the eggs, and then add them 1 at a time…it makes for a much smoother filling.

Love the recipe and you make it simple. The only thing I didn’t like is the dynamic between you and your husband. You’re doing most of the work so he just seems like an extra body. It would be nice if you didn’t ignore him. You seem so absorbed with the camera that you forget that your husband is there or even making a comment.
I get that you’re probably the mastermind behind this channel so you dominate, but for me, as a viewer, the dynamic is uncomfortable and it makes you look controlling. Perhaps it’s not necessary to have your husband there at all or if you want him there, involve him alot more and make us feel like he is part of the show.

I wonder if goat cheese will work too. Can’t have any artificial sweetners as it makes me sick and inflames the liver. I wonder if honey can be substituted. Not a sweet tolerant person so wouldn’t need much. I used to make a killer NY Style Cheese cake but now if I eat bovine dairy makes me sicker than a dog. I think I have become bovine dairy intolerant due to caseins 1. Goat, sheep, buffalo dairy (caseins 2) causes me no ill effects.

I made this cheesecake w/50% less sweetener but added more to the sauce. That way, when my “non-low-carber” friends have a piece, they won’t complain about the lack of sweetness, & I can forego the sauce, as I don’t care for this much sweetener. I wouldn’t be true to myself if I didn’t change things up a bit. I’m putting down what I added, notes to myself, so please don’t mind me.
I added 1/4 cup unsweetened finely shredded unsweetened coconut, 1/4 tsp. Nutmeg and and 1/8 tsp. Cardamom to the almond flower crust. To the cheese mixture, I went by taste and added a little more sweetener and lemon.
So many of these keto recipes need almond or coconut flour. They are so expensive in my country. Only for the affluent.

As a child who spent a lot of time around my mom and dad’s 5 star bakery, you’d like your crust better if you toasted the almonds first, add them with sugar substitute and almond oil (or coconut oil) add nutmeg and NO SALT in your butter. For deserts, always use unsalted. The salt in your butter will sour bitter-it and fight the sweet. Lastly, a hint of good quality vanilla in the crust after it has been toasted, then mix. Just some friendly suggestions I have found useful in my baking of 40 years! Happy eating friends.

Ok, so I made this yesterday using Ricotta cheese instead of Mascarpone, as you said this was an option. It was in the refrigerator overnight and for another 12 hours subsequently, and it still didn’t set! I used 100ml less double cream, because it looked so runny, and the full amount would not have fit in my dish anyway. It tastes lovely, but ity’s still liquid consistency.
I’ve now moved it into the freezer, and will eat it frozen as cannot afford to waste it.
Any thoughts?

This cheesecake is so easy to make. Great flavor. However, the cookie batter crust is a real pia to spread, especially over a circle of parchment paper I put on the bottom of the pan to keep the crust from sticking to it. When I make this again, I will definitely use a crumbly crust recipe instead of the batter one. Other than that, this is an excellent recipe,

In India, I was unable to find the brown sugar replacement so I just use erythritol in the base as well as the cream. It gets mixed well in the cream but in the base it remains powdered/ lil granular, any suggestion how to make the base also soft textured?

I tried another recipe but this looks like it will be a lot better. The other one added 4 eggs and very little sweetener and they put it in the oven at 250 for 90 minutes. It didn’t turn out good, it wasn’t sweet at all and I only put 3 eggs in it and had a slight egg taste. Way too many eggs. 2 is perfect.

Tried this recipe and it turned out too eggy. Next time I’m going to add more cream cheese and reduce eggs to just two. I also made the mistake of not getting ingredients fully to room temperature. Next time I will give them at least 2 hours out of the fridge. The amount of sweetener needed is tricky. I didn’t use enough. I also doubled the amount of melted butter for the crust and it worked better. Also I did take your advice for a great blueberry topping. I’m very eager to keep tweaking this until I get it right.

I made this and it was delicious but if you don’t have a springform pan and use a regular pie pan you only need about 2/3 of the filling recipe.
Also I highly encourage adding cinnamon to the crust and/or filling. It adds alot!

Hey guys so I just started keto, how often do you recommend enjoying these keto desserts? once a day or 2-3 times a week…I can’t help feeling guilty for eating them, perhaps because they taste like the actual desserts and not like I’m compromising. Please let me know thanks!

All I did differently was added chocolate chips to the crust because I have a serious sweet tooth. This made it to my liking. Pure deliciousness!

Just did this but instead of almond I used half pecans half walnus grounded. And then i baked them for 12 min. It was delicious!

I just baked one of these, substituted pecan for the almond used in the original. It’s still cooling but small slice that I’ve tried is incredible.

Base looks a little crumbly maybe add melted butter once the almond flour has been toasted to get it to set properly

The cheesecake turned out great. I believe it needs the FULL cup of swerve, though, and It also needed to be “cheesier” IMHO. Anyone have other modifications to this VERY GOOD recipe?
I have made this cheesecake twice and it was a big hit! I used Lakanto sugar instead, but not the confectioner one, and it still came out great! Actually, I’m just about to make another one now!

f you don’t bake the almond flour till brown but keep it light it will not crumble. Nice cake. and my family asks for more.

Made it today! I’ve got to let it rest in the fridge overnight, but judging by licking the mixing bowl, it’s WONDERFUL! I added a little lemon zest to the cream cheese filling (I’m a fan!) and some cinnamon to the crust. I can hardly wait!:D

We tried your recipe for my mom’s birthday and it turned out amazing everybody loved it!!! I added lemon zest and lemon juice (my mom loves lemon),we doubled the crust, and topped with raspberries. Also the cinnamon crust went really well with the lemon and raspberry. Absolutely loved it!! This is now my go to cheesecake recipe. Thanks so much!!!!
This is the BEST cheesecake I’ve EVER had. Warning, use 1/2 cup less of the monkfruit; otherwise it is VERY sweet.

Followed the steps, but the crust came out soggy and watery and the cheesecake is liquid in the middle from the inside despite looking perfect from the outside, I’m confused, anyone with experience in cheesecakes please help me understand what went wrong. I baked it in 300 degree oven with fire from the bottom only, other than that I followed the recipe to the letter.

Best video on how to make a Keto Cheese Cake thus far and I’ve looked at plenty of videos. Used this video/recipe to make Keto cupcakes (easier for me to have control of how much I’m eating).
Added some cinnamon to the crust. Lemons zest to the batter. And coconut flakes on top once a baked it for a while. It takes like heaven! And the smell was beyond amazing.

Hello-I’m wondering why you say 9 inch spring form pan on your video but on the written one you say 10 inch, also you say 300 degrees on the video but on the written 325? Which one is it? I don’t want to make it wrong you are a wonderful cook and I want my family to enjoy it.

I had to divide all numbers by 3 cuz I didn’t need such a huge cake, but it turned out to be big anyway. Three people have been eating it for, like, 3-4 days. I also changed lemon for orange (just wanted to), didn’t use the cinnamon (others in my family don’t like it) and used a regular erythritol. The cake was delicious, but the best part of it was the crust tbh, best crust I ever ate. Thank you, Jennifer!

I made this for the first time 2 weeks ago and am making it today again! IT IS SO GOOD. my mom has diabetes and I like making it for her so she can enjoy some desert! She loves it! I highly recommend this recipe. If you use the right sweetner, there is absolutely no aftertaste! I used monkfruit erithritol that I got on Amazon.

This is the most delicious cheesecake I have ever put in my mouth!!!
For those (like me!) who like a heartier (rather than smooth) cheesecake, sub some ricotta cheese for the cream cheese. It actually has a better nutritional profile, with more protein. Also, I often cheat a bit and add a tiny bit of maple syrup to balance out the bitterness of the Swerve (or stevia) sweetener. The stevia/Swerve acts as a sweetness magnifier when just a little bit of real sugar (like maple syrup) is added, and it reduces the bitterness.
Where did you buy that tiny mixer? Could you post the brand & size of mixer. Love your videos!!!!❤️

Ugh…. my first try and it has a long split as it cooled. I may have cooked it too long (9″ size). I also noticed one side was snug against the side of the pan (not badly stuck), while the other side had nicely pulled away ( keeping its shape). I used a spring form recommended by Test Kitchen. I may have beaten my eggs to much, too? I WILL try this again…I don’t give up easily. Thank you for the recipe.
