The sauce and meatballs have a little Tex-Mexfeel to them, so you can serve these in a naked burrito bowlor taco salad bowl alongside vegetables and some velvety guacamole. The meatballs could also be wrapped in corn tortillas. You can use leftover meatballs in a lunch salador as an addition to a soup.Using a small cookie scoop or a tablespoon, form meatballs and place in a single layer on baking sheet. Bake until golden browned, about 30 minutes, flipping once halfway through the cooking time.

Turn the oven to 400 degrees and bake for an additional 5 minutes. Transfer the meatballs to a baking dish and then add the wine.
Scoop meatballs out (I used round spring-handled ice cream scoop). Roll and shape with hands. Flatten the tops a bit. Fry in batches in pan until nice and brown, flip and brown the other side and cook through.

I’m not a vegan but I like to eat a couple meals with no animal products a week and I’ve found Mexican food is the easiest and tastiest food to seem like your not missing out on anything! When my friends find out I don’t eat pork or beef I always encourage them to try vegan Mexican food because it’s so easy to manipulate into a filling and flavorful alternative.
the food was great. i really enjoyed cooking for my friends like he did for his mates. really loved how the whole show was shot and i was introduced to a lot of British music which i still like today. Stone roses and Mock turtles were pukka.

I have a whole bunch of Jamie cookbooks and pretty much all of them are spattered with years of tomato sauces, olive oils, lemon juice and the odd splash of other random condiments. He totally changed the way I approach cooking from the way I buy food, store it and plan my week of recipes. The first Naked Chef book isn’t my favourite of the early books but it still has plenty of stuff in it that I still cook. Last week alone I made Salsa Verde from the first book (page 233), baked fruit (we had peaches, page 198) using the vanilla sugar (page 200) and the Fragrant Green Chicken Curry (page 122.) I don’t even need to read the Spicy Couscous recipe anymore (but if I wanted to check its page 180) and if I want a happy wife I make the mushroom risotto (from page 175 but only half the recipe as we don’t need to feed 6!) I tend to not eat too much of the risotto, just in case I made the wife *very happy*.
I’ve been a kind of maverick home cook since I was little boy. And Jamie was the one who convince me that is OK. I am a big fan of him even though I am much older than him. Thank you Jamie for all the knowledge and inspiration of having fun in cooking. Keep on inspiring us

Best guacamole is avocado (diced, not mashed), fresh cilantro, diced tomatoes, red onion (finely chopped), lime juice, and coarse sea salt.
Looks delicious! So funny to see how different people make guacamole. I never add garlic and always use lime instead of lemon, and definitely some chopped tomatoes in there also.

I do sea salt, garlic, black pepper, diced onions, diced jalapenos or (NM green chile when available), lime juice and mix it all together with the avocado. Then I put it in the fridge to chill for 30 minutes. Then I garnish with diced tomatoes and cheese on top.

I’m of the mind where you brunnoise a single peeled, seeded Roma tomato and mash it in… and, if you’re drunk or serving guacamole to smokers, a small, grated, raw garlic clove helps. In every other aspect, this recipe is the definitive version I find it hard to believe Chef John doesn’t possess a Williams-Sonoma molcajete. Those things are always on sale over there. Even worse than cutting skin with a cheese grater is having your non-painted thumbnail guillotined off and then trying to find it in the pile of similarly colored Gruyere cheese . Also, weird knowledge gained from a pharmacist that the pith of citrus has healthy somethings that have all sorts of healing benefits. As a kid, I discovered I liked the pith, too, and used to peel my orange and scrape the pith off with my bottom teeth before eating the innards. However, trying to add citrus pith to any dish would ruin it, so I guess I (we?) will have to continue running them through our teeth scrapers for the benefit lol.

have you came across “Rambutan” well I’m not sure what people call this fruit in other country but in Indonesia we call them ‘rambutan’ because it’s peel is filled with hair. and hair in Indonesian is “rambut” therefore it’s called Rambutan:D

I know this is SOOO late but an easy way to do layering is to put a ring of icing around the edge then fill the circle with your jam/marmalade or fruits. That way you have a clean edge and no spillage but can fill the middle up with yummy goodness.

John, forgive me if I didn’t emphasize my point: dragging the blade of your chefs knife, or any blade across any surface is gonna dull it leading to increases sharpening. I have Shun knives and I spend a good time honing them. So I don’t want to dull them unnecessarily by scraping them across my plastic cutting boards. Instead, I achieve “identical” (demonstrated over many years) results with the top of the knife. It simply is the same. If you haven’t tried it, please do. You are always trying new more efficient ways of doing things-I suggest you reexamine this approach to removing food from a cutting board into a cooking vessel.

I followed this recipe exactly but the cake didn’t turn out well at all! I used my microwave to cook them because my oven broke last week while I was playing hide and seek with my neighbor’s cats. Made a mess and tasted like cold turkey gravy. For the record, it was the best turkey gravy I’ve ever had.

Hey Stephanie! I love that you’re making cooking videos now, and as someone that loves to cook latin food (I learned from my Honduran mother-in-law), I have a couple kind suggestions, if you wouldn’t be offended. First, that delicious bean mixture would be complimented with some fresh cilantro and a little cumin. The guacamole I loved but you could try using some diced tomato and yellow bell pepper, it adds a nice tangy veggie flavor. This is all to preference, but I highly recommend trying it because it’s very yummy and slightly more authentic.:)

I saw you were using a your potatoe smasher and said it’s hard for you to use. My mum got me this kitchen utensil and I use it for my avocadoes all the time! It smashes them up nice and smooth. please think about trying it and it will make it so much easier on your Avocado life obsession. Funny enough it’s called Good Cook Meat Chopper, it’s typically used to smash up group beef, but it works so well mashing up my avocados. And I don’t need my fiancé zach to mash them up for me no more either now. lol. It’s only like $4 u.s. online, dont know how much it would be for in Ireland. Please think about trying it, because I know you’ll love it, really helps your life out and your wrists lol.

I did a really tasty cashew cheese last week from blissfulbasil.com. Just search for ‘Herbed vegan chashew cheese’ on that website, if you want to try it out. I would really recommend it, I had it as a dip, I had it as a sauce on wraps, it’s just so versatile! It’s even tasty with some nachos! =)

I prefer red onion for its flavor, if you haven’t tried it in guacamole, I recommend giving it a try sometime. Definitely going to try your chopping/crushing technique next time.

I cooked my first meal for myself from The Naked Chef, that garlic oil spaghetti with crispy herby breadcrumbs thing. It was so good and I remember watching every episode as it came out on TV.
Omg I have the same thing guacamolé is LIFEEEE!! I have a different recipe I use as well half an red onion and two garlic piecies and citron but I don’t use balsamico, I use a tomato with the avocado you should try it!
I will tell you that protein in my diet has been a real problem due to my illnesses. This is perfect and actually sounded good to me and appetite has been a problem. The carrots are a great idea for that bit of sweetness! I already told my husband about your creamy pasta recipe. I don’t know if you like cumin but I think that it would be yummy in there too! My husband has to cook for the family along with working. This would be a great make ahead meal. I will let you know how it turns out
The first guac I ever made was pretty much even amounts of avocado and onion, blended in a food processor to a silky smooth texture. I then added a lot of garlic and lemon juice.
Served on top of Blinis (tiny russian pancakes) with shrimp and thin slices of parma ham.
It was amazing!

When I make Guac I mash the avocado and lemon separately with a fork and then add the onions jalapenos cilantro whatever things afterwards since it’s more chunky that way. Never tried balsamic in guac however, definitely going to next time.
Also does anyone have tips of keeping guac from turning? No amount of lemon juice or vinegar I use will help. I tried putting plastic wrap along the top of it. Anyone can help?
I make mine with tofu and beans then of course onion tomatoes lettuce etc…But nice recipe…

Could you make something with breadfruit? It’s starchy like a potato but the texture varies depending on how you cook it. I haven’t seen it prepared in a dish before and would be interested to see how it could be incorporated into a meal!

Capsicum?! That blows my mind. We call them bell peppers. Also, this looks good, but I don’t think Mexican food can really be called Mexican without cumin. Cumin is like the cornerstone of Mexican seasoning. Also oregano.

I make guacamole very often (with tomato version) but I live in Eastern Europe, so I’mm sure that avocados available in our stores can’t be compared to those from their natural habitat. I wish I could taste those… someday…:)

Jamie small question since I believe in your opinion,apparently the olive oil releases some dangerous toxins if you use it while frying like my friend told me so but I mean anything can be toxic above its smoke point im guessing? Your vegan recipes look so good! I worked at a vegan restaurant when I was a teenager back in the mid 90’s and some things were good but I have to say it has come a long way since then and all the bland tofu we ate. Lol!
