Erucic Acid is controversial though. But one has to be very careful that don’t preserve mustard oil too long in a jar exposed to good light or oxygen for a long time because mustard oil has good proportion of polyunsaturated fat which is very unstable ( specially omega 3) which gets oxidised easily compared to monounsaturated fat. The oxidised output is rancid leading to formation of free radicals which has very dangerous harmful effect.. So remember to consume fresh mustard oil early and keep in dark bottle…

See first all the cholesterol present in saturated fat like ghee or butter is very healthy for our body.
But plant based oils have zero cholesterol,so it’s not beneficial for the body.
Secondly,saturated fat like ghee or butter or lard, they are called saturated because they remain stable when we apply heat on them, but unsaturated oil like mustard oil and sunflower oil as the name suggests they are unsaturated,that means they burn quickly when heat is applied and burnt oil is not good for health because later on it may cause cancer.
But among all the unsaturated oil we can sometime cook through olive oil or mustard oil because mostly they have monounsaturated fat,which means they are not that unstable than sunflower oil.
But remember sometimes,not all the time we should cook our food by olive or mustard oil.

Quinoa is one of my favorite grains. I eat 2000-2500 calorie mono meals of quinoa all the time, just plain quinoa with nothing added.
16g protein per 100g? Most quinoa i have seen range between 12-14g protein per 100g.
With insanely high levels of triglycerides that caused severely high LDL cholesterol for me, I tried a few tricks for 30 days and it worked:
1) Began Sippin’ Roselle (Hibiscus Tea) almost daily.
2) Started consuming healthy nuts/seeds (Sesame, Flaxseed, Walnuts).
3) Threw tthe white sugar right into the dustbin.
4) Began consuming citrus fruit juices mixed with cold steeped Green and Blavk Teas for enhanced bioavailability of EGCG and Theaflavins.
5) Began 15 mins of HIIT activities like Sprints almost daily.
6) Did 16 hours of Intermittent Fasting daily.
I was on 5 mg of Crestor while doing all this though which works on LDL and “NOT” on Triglycerides.
My LDL & Triglycerides plummeted from:
LDL 195 mg/dL to 80 mg/dL
Triglycerides 450 mg/dL to 105 mg/dL
And I didn’t take any fibrates or Niacin at all which are the only remedy.
Fulltime Plant Based Diet, and quit Dairy and Meat for that span AND ever since then, I’m a Vegan!

Really good video Sahil… I would like address the people with Thyroid disease…I’m not a doctor but have had Thyroid disease (Hashimoto’s) for 15 years…have done ALOT of research…the reason we are told not to eat these vegetables is because it CAN interfere with how we produce iodine…”when” there is a deficiency…you would need to eat unrealistic amounts of them to interfere with that…IF you have an iodine deficiency…talk to your doctor…but this is very rare in America because of the amount of salt in our food…I grew up in Michigan where sugar is used more than salt…and my doctor told me I can eat cruciferous vegetables as long as most of them are steamed. I eat large bowls of steamed broccoli a couple times a week…and lots of spinach, strawberries, and peanuts…Cooking cruciferous vegetables lessens their goitrogenic properties…and reduces the effect of goitrogens on the thyroid.

The process for making seed oils was invented in the 1800s and uses a lot of extremely high heat and toxic chemicals. As an increasing number of people having been increasing their eating of seed oils, there have been an increasing number of health problems. We didn’t evolve eating seed oils for 1.8 million years. So, I’m staying away from seed oils as much as possible:

We evolved for 1.8 million years eating animal fats. Fruit oils (coconut, olive, avocado) have been eaten for at least thousands of years and are very easy to get out of fruits. So, I eat mostly animal fats and with a little fruit fats.
If a recipe asks for a seed oil, I just substitute with an animal or fruit fat.
Sahil, the two people responsible for my weight loss (15-20 kgs over 6 months) are you and my wife.. Your recipes made it possible to be on keto without suffering from any withdrawal symptoms..!!

Unfortunately, quinoa is significantly more expensive than rice. When I make brown rice, I mix in a little quinoa with some buckwheat and some lentils. I boil the rice separately like pasta and drain the liquid to reduce the arsenic content. I also use vegetable broth instead of water, as quinoa tastes rather plain without it.
