Orzo is a weird pasta. I think that salad is the only way that orzo actually tastes good. Minced caprese with the balsamic is good too. Looks delicious. Great video

I always wondered why my Greek Salad was not getting that bright White Wine Vinegar taste. You cleared that up, what I was doing wrong was to mix the Olive Oil, and Vinegar, then add into salad. What I should have been doing as you suggest is to add Vinegar to salad mix in then add Olive Oil. Now I get that bright taste I was looking for.

I’m always amazed when cooks throw a ton of ingredients into a bowl just big enough to hold it all. Then expect to mix/toss it thoroughly. That bowl should have been bigger. Tossed completely. Then poured into a serving bowl.
So many fresh, delicious flavors and textures. Yum! This would make a great side dish, but it would also make a perfect lunch by itself, or with some hummus and pita.
