Ingredients 1 cup uncooked quinoa 1 tablespoon olive oil 1 yellow onion chopped 1 green bell pepper chopped 1 red bell pepper chopped 1 pound boneless skinless chicken breasts cut into bite-size pieces (about 2 large breasts) 1 tablespoon chili powder plus 2 teaspoons 1 1/2.Mix quinoa, chicken, black beans, salsa, tomato paste, garlic salt, cumin, chili powder, black pepper, and oregano into onion mixture; cook, stirring occasionally, until casserole is heated through and thickened, 5 to 10 minutes. Top casserole with sour cream and Cheddar cheese.Set oven to 350 degrees. Grease a 13 x 9-inch baking dish.

I don’t know why, but this is the only way I like chicken enchiladas. I absolutely can’t stand this dish with the red sauce-don’t know what that bias is about, but with the salsa verde, it’s a dream. Thank you so much for sharing your recipe and demo with us. How can I personally make a verde salsa that is NOT too hot. The Poblano salsa i have made lots of times and it always turns out great. However using the tomotios (sorry if mispelled) it always seems to turn out way too hot. Do you have any suggestions. I do love the flavor of the green salsa over the red. thanks!

Ramsay tried to call this Huevos Rancheros it may be his attempt but not close to being authentic. Blending the sauce was a big mistake. He tried but failed. The dish is to simple to screw it up this bad.

Here’s an idea my mom taught me. Burn the cast iron on high heat, brush on the oil or spray canola. It won’t ever stick again. give it a try. Just always dry on high heat and add oil before you put away.

I am Mexican and I tried this today. I was a little skeptical because I hate cooking chicken breast. They always come out too try for me. (picky eater) I followed your recipe except I doubled it since we are a family of 7. I AM IN LOVE with this! It was perfect! I added serrano peppers on top and broiled it for 5 mins, we love spicy food. I paired it with a riced cauliflower Spanish rice style and a cilantro salad with green chile very spicy dressing. This is going in my regular rotation! Thank you:)

My concern/ question is that once you get the chicken @165 degrees in the skillet then cook it that long in the oven afterwards, wouldnt that make the chicken over cooked? Im not sure. The cast iron has to be heated til the sides are hot before using and even if they say preseasoned you kinda have to wash with soap then season with lard (gives the best coat)… my dad made me send this! But he’s gonna make your green beans!

My husband and 3 babies have been loving it so far thank you
Looks so yummy! But it’s not a casserole. Casseroles are similar to stews, like soups but thick with big chunks of meat and veggies. That is basically just enchiladas but without rolling up the tortillas. I could definitely eat some of it right now
I have green beans in the fridge I need to cook up so I will use this recipe! I’ve only ever made it like that with calabacitas and they taste amazing so I’m sure it’s the same with green beans. I don’t have any chicken on hand only some stew meat so I will try it and hopefully it comes out just as crispy. My mouth was watering at the chicken lol

I do not know who told you but that is not the authentic Mexican ranchero eggs. The one who told you how to grill them cheated you. It is like when they think that taco bell or taco are original Mexican tacos. they distort everything.

Excellent! I made this recipe of chicken enchilada casserole and it was a huge Win in the Washington household. I will be making it again. Next time I may add some Rotel diced tomatoes to give it a little kick. But it was very good, the little that I got to taste, lol.

your cast iron is too rough that is the commercial seasoning. clean it then take sand paper to the inside till it is fairly smooth. then re season. put it on the stove with a little olive oil have your oven preheated to 400, then turn off the oven and stick you cast iron in it after making sure your iron is all covered in oil. once the oven is cooled to room temp take out the cast iron and wipe out excess oil. you might have to do this a few time to get it started. then it will just start building up while cooking from then on. just never wash it again just turn on hot water and wipe it out then re season.

Not sure about the seasoning, but usually if you lower the heat a bit and cook for maybe two minutes before turning, it should release

A tip about cooking with cast iron; before you add the oil, heat the pan thoroughly, think of it as a griddle with handles, 😉 then warm the oil and test to see if when you add a bit of food it sizzles, your pan will now do want you want it to.
