Directions Cook orzo according to package directions. Drain; rinse with cold water and drain well. In a large bowl, combine orzo, shrimp, vegetables, olives and herbs. Add vinaigrette.Ingredients 8 ounces orzo 1 cup baby spinach, chopped 1/4 cup chopped sun-dried tomatoes packed in oil 2 tablespoons olives (green or kalamata), chopped 1/4 cup cubed or crumbled feta cheese 1 tablespoon olive oil 8 ounces peeled and deveined shrimp.

You should mix all dressing ingredients before adding to the salad
I like that you use the less expensive olive oil to start & finish or top off with the cold press…& yes those cukes are awesome!
I need to see some of your eggplant dishes…I had a greek variety in my garden 20+ years ago it was golden orange & looked like a very large tomato!
Says and cuts parsley rough chop and looks a bit smaller chopped when putting in…size putting in better in my opinion. Also, cutting shrimp in half lengthwise still gives a nice appearance in the salad while being easier to eat.

I’d like to know if I can substitute shrimp to chicken due to health issues. I’m ok, but my cholesterol is on the borderline towards high. It slightly went down, but it needs to go down more.I’ll definitely make this, but I will have to use chicken instead. Pray for me!

So many fresh, delicious flavors and textures. Yum! This would make a great side dish, but it would also make a perfect lunch by itself, or with some hummus and pita.

I have been making this recipe for years, it is excellent. I use a little less red onion. I always take this to picnic concerts with a nice bottle of white wine and french bread. Yummmy.

Most excellent! That is very close to the way I make it. In fact, I’ve been thinking of doing a video except mine doesn’t pretend to be Italian so I know people will get bent out of shape. I really like your idea of using pepperoncinis. I usually add toasted slivered almonds. Brilliant way of slicing tomatoes.
Orzo is a weird pasta. I think that salad is the only way that orzo actually tastes good. Minced caprese with the balsamic is good too. Looks delicious. Great video

Nice dish. I added and a roasted red pepper, and if you buy the shrimps unpeeled, you can boil the shells and add some grated orange skin as well, but just a little bit.
Love to try this. Never had Orzo before. I’ll skip the veggies & just eat the shrimp & orzo. I love feta

Delicious and Easy Recipe! This is a go-to recipe. I’ve made this for a couple of years and always have rave reviews. You can even change it up a bit and it’s still good. Sometimes, I’ve excluded the shrimp and had it as a side dish with grilled chicken or salmon. You can also adjust with gluten-free pasta if there is a dietary restriction. Also added a sprinkle of cayenne to the shrimp before roasting or added Tony Chachere’s. Wonderful!
