Ingredients 2 ears of corn 1/2 cup farro, dry 2 large tomatoes 1 zucchini 1/2 cup parsley, chopped 1 tablespoon olive oil 6-8 fresh basil leaves, thinly sliced ½ teaspoon salt ¼ teaspoon black pepper 4 ounces halloumi (1/4 lb).Step 1 Bring chicken stock and farro to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until tender but still chewy, 25 to 30 minutes. Transfer farro.
Place the sliced cheese directly on the grill, cook for about 3-4 minutes each until golden and slightly charred on each side. Remove from the grill, dice, and add to the bowl with corn.
